TRADITIONAL BASIC BLACK EYED PEAS



Traditional Basic Black Eyed Peas image

Here's a recipe for basic black-eyed peas with bacon or hog jowl and spicy seasonings and herbs, along with garlic and vegetables. These peas are delicious with cornbread or corn muffins and seasoned greens.

16 ounces black-eyed peas
1/2 lb lean salt pork or 1/2 lb thick lean bacon, diced
1 cup chopped onion
1 carrot, peeled and diced
4 garlic cloves, smashed and minced
1/2 teaspoon dried red pepper flakes
1/2 teaspoon fresh ground black pepper
1 teaspoon dried leaf thyme
1/4 teaspoon dried oregano leaves
2 teaspoons salt (to taste)
1 dash Tabasco sauce (optional)

Steps:

  • Rinse peas and pick over for bad or discolored peas and small stones; transfer to a medium saucepan.
  • Cover with water and bring to a boil.
  • Reduce heat to a simmer and continue cooking for 5 minutes; set aside.
  • Put the meat in a large stock pot and cook over medium heat for about 5 minutes, until fat is rendered.
  • Add the onion, diced carrot, and garlic. Cook, stirring, until tender, about 6 to 8 minutes.
  • Add peas and enough water to cover by 2 inches.
  • Add pepper flakes, black pepper, thyme, and oregano.
  • Bring to a boil; reduce heat to medium and simmer, covered, for about 1 hour.
  • Uncover and cook for 30 to 45 minutes longer, or until peas are tender.
  • Add more water as needed to keep them moist. When the peas are tender stir in the salt and Tabasco, if using.
  • Serve with hot baked cornbread and a tossed salad.

1 tablespoon olive oil
1/3 cup diced onions
1 /3 cup diced celery
1/3 cup diced cooked ham
1/4 teaspoon brown sugar
1/8 teaspoon cayenne pepper
2 15.5 oz cans Jalapeño Black-Eye Peas (drained)
1/2 cup chicken broth
salt and cracked pepper to taste
2 cups white rice (cooked)

Steps:

  • Sauté onions, celery, diced ham, brown sugar and cayenne pepper in pan for about 1-2 min.
  • Add black-eyed peas and chicken broth.
  • Bring to boil and simmer for 10-15 minutes.
  • Add salt and cracked pepper to taste.
  • Serve over rice.

3 tablespoons lemon juice (juice of 1 lemon)
2 tablespoons extra virgin olive oil
1/2 teaspoon fresh ground black pepper
1/4 teaspoon kosher salt (I used Seasoning Salt)
1/4 teaspoon sugar (I added a little extra)
1 cup quartered cherry tomatoes (I used roma tomatoes)
1 cup diagonally cut green onion (about 4 green onions)
1/2 cup finely chopped fresh parsley
1/2 teaspoon chopped of fresh mint (I omit the mint, but that's up to you)
1 (15 7/8 ounce) can black-eyed peas (rinsed and drained)
2 garlic cloves, minced

Steps:

  • Prepare dressing by mixing together first 5 ingredients in a small bowl, stirring with a whisk until well blended.
  • Place all of salad ingredients in a large bowl, drizzle dressing over the top and toss well.
  • Cover and chill.

1 medium onion, chopped
2 garlic cloves, chopped
1 stalk celery, chopped
1 large carrot, chopped
1/2 bell pepper, chopped
1 -2 cup ham, from ham hock, chopped
3 cups chicken broth
1 teaspoon hot sauce
1/2 teaspoon ground thyme
1 teaspoon salt
1/4 teaspoon pepper
2 (16 ounce) cans black-eyed peas, drained

Steps:

  • I use a Dutch Oven for this dish.
  • Heat oil over medium heat and saute onions, garlic, celery, carrots, bell pepper and meat for a few minutes.
  • Add chicken broth, hot sauce, thyme, salt and pepper. Simmer for 30 minute.
  • Add drained black eyed peas and simmer just a few minutes more.
  • Taste and adjust seasoning to your liking.
  • Serve over cornbread or rice.
  • Enjoy!

That way, if we have guests over for a party that night, I can use part of this basic recipe to make "Texas Caviar" which is a fantastic salsa/dip to eat with tortilla chips. (that recipe follows)

1 (16 ounce) package dried black-eyed peas
6 cups water
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon sugar
1 ham hocks or 2 cups cooked ham, cut into small cubes
1 -2 jalapeno pepper, seeds removed and chopped

Steps:

  • Sort and wash peas; place in a large Dutch oven.
  • Add remaining ingredients and bring to a boil.
  • Cover, reduce heat and simmer for 1- 1 1/2 hours, or until peas are tender.
