Here's a great all-purpose sauce that's loaded with flavor but not too sweet. It goes well with all manner of poultry, pork, or beef. The minced vegetables give you a coarse-textured sauce, which I happen to like. If you prefer a smooth sauce, puree it in a blender.

- 1. Heat the oil in a large nonreactive saucepan over medium heat. Add the onion, garlic, and bell pepper and cook until softened but not brown, about 4 minutes.
- 2. Stir in the ketchup, tomato sauce, cider vinegar, Worcestershire sauce, lemon juice, pineapple juice (if using), hot sauce, liquid smoke, molasses, brown sugar, prepared and dry mustards, black pepper, and 1 cup of water and bring to a boil. Reduce the heat to low and let the sauce simmer, uncovered, until thickened, about 15 minutes, stirring often to prevent scorching. If the sauce becomes too thick, add a little more water.
- 3. Remove the barbecue sauce from the heat and taste for seasoning, adding salt to taste and more cider vinegar, hot sauce, and/or brown sugar as necessary; the sauce should be highly seasoned.
- 4. Transfer the barbecue sauce to a serving bowl and serve warm or at room temperature. The sauce will keep, tightly covered in the refrigerator, for several weeks.
EASY BARBECUE SAUCE
I came up with this recipe via trial and error after running out of barbecue sauce one too many times. Now my family will not have any other kind. I make it in double batches and store it in a mason jar in the refrigerator. It can be canned for longer storage. You can add chopped garlic and less hot sauce, if desired.

SWEET AND EASY BBQ SAUCE
I have spent two years enjoying Steven Raichlen's BBQ books. The other day I blended two sauce recipes from his BBQ USA and it turned out so well, I made a quadruple batch and jarred it. It is very sweet, so you ncan certainly cut the lemon juice/lime juice down by far. I ran out of lemon juice, hence the lime juice, but think the lime helped adda nice flavor. - Add Onions.

- Orange-Tangerine BBQ Sauce. I sort of created this BBQ sauce recipe by accident. By that, I mean I didn’t plan it in advance. My son-in-law was going to grill some chicken one Sunday afternoon, and we were out of store-bought sauce.
- Teriyaki-Peach BBQ Sauce. We love making this sauce when we have juicy fresh peaches on hand. It's great as a grilling sauce, and it also makes a wonderful dipping sauce.
- Cherry-Chipotle BBQ Sauce. This is often my go-to recipe for bone-in pork loin, and for visual effect, I leave a few of the cherries whole. It's also good on chicken, lean ribs, pork chops, and ham.
- White BBQ Sauce. The first time I was served white barbecue sauce, I wasn't sure what to expect. After all, I was used to red or brown sauce, so I wasn't at all convinced I'd like the white version.
- Mesquite BBQ Sauce for Beef. My gang and I usually prefer a sweet-hot BBQ sauce for chicken and pork, but for beef, we prefer a more savory sauce. One with the smoky flavor of mesquite is even better.
