SLOW COOKER BEEF BARLEY STEW

Slow Cooker Beef Barley Stew image

Simple ingredients are left to mingle in the slow cooker, resulting in a rich and flavorful stew of tender beef and vegetables with barley. Total comfort!

Provided by Brenda | A Farmgirl's Dabbles

Categories     Soup

Time 6h25m

Number Of Ingredients 17

1 tablespoon olive oil
2 pounds boneless beef chuck roast, cut into 1" cubes
kosher salt
freshly ground black pepper
8 ounces mushrooms, cut into thin slices
8 large carrots, peeled and sliced diagonally into 1/2" pieces
6 large cloves garlic, minced
4 medium-large yellow potatoes, peeled and cut into 1" cubes
1 large yellow onion, chopped
6 cup low sodium beef broth
1 cup dry red wine
1/4 cup tomato paste
1 tablespoon Dijon mustard
1 teaspoon dried thyme
3/4 cup pearl barley
1 bay leaf
chopped fresh parsley

Steps:

  • Sprinkle beef fairly generously with kosher salt and pepper. If you own this awesome slow cooker, where you can brown meat right in the slow cooker - add the oil to the slow cooker and then brown the beef right in the slow cooker, searing beef on all sides. Otherwise use a large skillet over medium-high heat to heat the oil and then brown the beef. Drain off fat. If using a skillet, transfer beef to slow cooker. You will need a large slow cooker for this recipe, as it makes a big quantity (ours is a 7-qt. size).
  • Add mushrooms, carrots, garlic, potatoes, onion, beef broth, wine, tomato paste, mustard, and thyme, and stir well to incorporate. Then stir in barley and add the bay leaf. Cover and cook on high for 4 hours. Then turn heat to low and cook for 2 hours more, or until beef is tender. Serve hot, with fresh parsley sprinkled over the top. A good, crusty bread for dipping is always welcome.

Time 1h25m

Yield 10 servings

Number Of Ingredients 24

1 pound stew beef
1 (28-ounce) can crushed tomatoes
3 cups AB's Beefy Broth, recipe follows
1/2 cup pearl barley
3 large carrots, peeled, halved and cut into 1/2-inch slices
2 stalks celery, cut into 1/2-inch slices
1 large russet potato, peeled and diced
1 medium yellow onion, diced
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon dried marjoram
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Malt, balsamic or sherry vinegar, for serving
Vegetable oil
Salt and pepper
3 pounds combined beef shank and oxtail pieces
2 onions, quartered
2 ribs celery, halved
2 carrots, halved
3 cloves garlic
1 bunch fresh parsley
1 teaspoon whole black peppercorns
2 quarts water

Steps:

  • Brown the beef in the pressure cooker over high heat, 5 to 7 minutes. Drain off any fat. Add the tomatoes, broth and barley and return to high heat. Close the pressure cooker and bring to up to full pressure. Reduce the heat until the cooker barley hisses, and cook for 10 minutes.
  • Release the pressure using the cooker's release device (read the manual), or cool the cooker by running cold water over the lid for 30 seconds. Open carefully, remove the lid and add the vegetables, herbs, salt and pepper.
  • Put the lid back on the pressure cooker and heat to full pressure over high heat. Reduce the heat to maintain pressure and cook another 10 minutes. Release the pressure as above. Remove the lid and cool for 5 minutes, and then serve with vinegar.
  • Place the pressure cooker over high heat. Oil and salt the oxtail and shank pieces then sear in batches. Add the remaining ingredients and cover with water, being careful not to fill above the cookers "maximum fill" line. Bring to a boil and skim off any foam that gathers at the surface. Cover and lock the lid. Once the pressure builds up inside the cooker, reduce the heat so that you barely hear hissing from the pot. Cook for 50 minutes.
  • Release the pressure using your cooker's release device (read the manual), or cool the cooker by running cold water over the lid for 30 seconds. Carefully open the lid and strain , squeezing the solids before feeding to the compost pile or the dogs. Strain through a fine sieve or several layers of cheesecloth. Season and serve or use as a base for other soup recipes.

BEEF AND BARLEY STEW

Beef and Barley Stew image

Provided by Barbara Killingback

Categories     Comfort Food

Time 2h

Number Of Ingredients 13

2 tablespoons olive oil
1 large onion (peeled and finely sliced)
1 lb chuck steak (cut in chunks roughly 1 inch square)
generous half cup pearl barley (rinsed)
1 and a half cups Guinness
2 cups beef stock (you may need a bit more)
2 tablespoons Worcestershire sauce
1 tablespoon of tomato puree
1 cup of quartered mushrooms (optional)
2 to 3 cups root vegetables of your choice (carrots, parsnips, turnips etc, peeled and cut in chunks (I used all parsnips this time))
1 large bay leaf or two small
good twist of ground pepper
½ cup frozen peas (optional)

Steps:

  • Preheat the oven to about 325℉ (or about 170℃ - 160℃ for a fan oven).
  • You need an oven safe casserole with a lid that you can also use on the stove top. (I use a Le Creuset casserole.) Alternatively, you can use a large frying pan for the first part, and transfer everything to a casserole with a lid before you put it in the oven.
  • Heat the olive oil over medium heat in an oven safe casserole with a lid that you can also use on the stove top.
  • Sauté the onion until it begins to look translucent.
  • Add the beef and brown it in the oniony oil.
  • When the beef has begun to brown, stir in the barley and let it get coated in the oil too.
  • Now add the beer, the stock, the Worcester sauce and the tomato puree and stir though.
  • Stir in the mushrooms, if using.
  • Tip in the vegetables and stir gently.
  • Stir through the pepper and add the bay leaf before covering with the lid.
  • Put the casserole in the oven for an hour and a half, stirring every half hour. You may need to add more stock as the barley absorbs the liquid. The amount of liquid you need will be affected by what kind of vegetables you use and the amount of them that there are.
  • Keep the heat nice and low, you want to cook low and slow.
  • Remove the casserole from the oven, and take out the bay leaf.
  • Add the peas, if using, and a bit more stock again if necessary. Put the lid back on the pan and return it to the oven for about 20 minutes, just to cook the peas and bring everything together.
  • Serve in warmed bowls.

SLOW COOKER BEEF-AND-BARLEY STEW

Slow Cooker Beef-and-Barley Stew image

Some sort of magic happens over the long, controlled simmer in the slow cooker: The barley cooks to tender-chewy perfection, the inexpensive and tough beef becomes meltingly tender, and the liquid thickens to a beautiful gravy. Be patient and brown the meat thoroughly; this adds incredible depth to the stew. Go with hulled, whole-grain barley here, and skip quick-cooking pearled barley; the latter isn't whole-grain, and it will cook to mush over the long simmering time. If you can't find hulled barley, you can try wheat berries, whole-grain farro, rye berries, or Kamut instead. This is a great option for freezing, as it thaws and reheats beautifully.

Provided by Ann Taylor Pittman

Time 8h25m

Yield Serves 8 (serving size: about 1 1/4 cups)

Number Of Ingredients 14

4 cups unsalted beef stock
1 1/2 cups chopped onion
1 cup uncooked hulled (whole-grain) barley
1 cup water
1 cup sliced celery
1 1/2 teaspoons kosher salt
1 teaspoon black pepper
6 garlic cloves, minced
4 large thyme sprigs, plus leaves for garnish
3 bay leaves
1/4 cup unsalted tomato paste
2 tablespoons olive oil, divided
2 pounds beef stew meat, divided
2 1/2 cups (1-in.) pieces carrot

Steps:

  • Stir together first 8 ingredients in a 6-quart slow cooker. Add thyme sprigs and bay leaves; dollop tomato paste on top.
  • Heat 1 tablespoon oil in a large skillet over medium-high. Add half of beef; cook until well browned, about 6 minutes, turning once. Add beef to slow cooker. Repeat with remaining 1 tablespoon oil and beef. Scatter carrots over beef. Cover and cook on LOW until meat and grains are tender, about 8 hours. Discard thyme sprigs and bay leaves. Ladle stew into 8 bowls; sprinkle with thyme leaves.

This is what I consider the ultimate beef soup. Great on a frosty day. For beef stock, I use 2 1/2 quarts water and 6 teaspoons beef base. Also, use inexpensive red wine. No need for the good stuff here, and cheaper actually works better! Try with leftover pot roast.

Be careful to cook the beef in batches if there isn't enough space. (Overcrowding will cause steaming, not searing.) Sear the cubes on each, and side then remove to a plate with a slotted spoon. In the fat left from the searing, add the carrots, parsnip, celery, onions, thyme, paprika, a pinch of salt and a grind or 2 of pepper. Saute until tender, about 8 minutes. Raise the heat and pour in the wine. Using a wooden spoon, scrape up any bits on the bottom of the pan. Raise the heat to a simmer, and then add the beef cubes back to the pot along with the bay leaves and beef broth. Cover with the prepared parchment paper and cook in the oven for 2 hours.
  • At the 2 hour mark, remove the parchment, taste, and season with salt, if needed. Add the barley, and stir in 1 cup of water if the stew looks too dry. Cook, covered with the actual lid for this step, until the barley is cooked through and tender, 40 to 45 minutes. Remove from the oven and garnish with chopped parsley. Serve with Crusty Pepper Bread.
  • Preheat the oven to 350 degrees F.
  • Brush both sides of the bread slices with olive oil and season with a pinch of salt and pepper on both sides. Place on a baking sheet and bake until the edges of the bread just begin to turn golden, about 10 minutes.

BEEF, BEER, AND BARLEY STEW

Beef, Beer, and Barley Stew image

From Cooking Light. I really like this recipe because it simmers long enough for the flavors to blend but can still be made in just a couple hours when I don't get around to throwing stuff in the crcokpot. Plus it has so many different flavors and textures, and I love the fresh herbs.

  • Place the beef in a medium pot and fill it with enough water to cover the beef by about an inch. Season with salt. Bring to a boil, reduce to a simmer and cook on low heat, covered, until the beef is fork tender, 1 – 1 1/2 hours. While the beef is simmering, use a slotted spoon to skim off all the impurities that will rise to the top. Strain the beef when it’s cooked. Set the beef aside to be added to the soup later. Save the broth to use in addition to more broth that is in the ingredient list.
  • Meanwhile, in a large pot or dutch oven, heat the butter or oil and add the onion, carrots, celery and garlic. Season with salt and pepper. Cook for about 7 minutes, on medium low heat, until the vegetables are softened and just beginning to become golden.
  • Add the dry bay leaf, the potatoes and the tomatoes to the broth. The tomatoes are optional. You can omit them or you can use a Tablespoon of tomato paste instead of the fresh tomatoes. Pour in the the broth, bring it to a boil, add the barley and cook for about 20 minutes.
  • Add the sliced mushrooms. Cook for another 10 minutes and then discard the dry bay leaf. Taste the stew and add more salt and ground black pepper if necessary.
