4 cups fresh broccoli florets
6 tablespoons all-purpose flour
1 1/2 cups Progresso™ reduced- sodium chicken broth (from 32-oz carton)
2 tablespoons unsalted butter
1/2 cup freshly grated Parmesan cheese
1/3 cup half-and-half
2 tablespoons dry sherry
1/2 teaspoon kosher (coarse) salt
1/2 teaspoon freshly ground pepper
1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
4 cups cooked long-grain brown rice
2 cups chopped cooked chicken breast
1/2 cup slivered almonds, toasted

Steps:

  • Heat oven to 375°F. Spray 8-inch square glass baking dish with cooking spray.
  • In 2-quart saucepan, heat 1 inch water to boiling. Add broccoli. Boil uncovered 5 minutes; drain.
  • Meanwhile, sprinkle flour in 3-quart saucepan or Dutch oven. Gradually add broth, stirring with whisk until blended. Heat to boiling, stirring constantly; reduce heat to medium. Cook 5 minutes or until thickened. Add butter; stir with whisk until melted. Add Parmesan cheese, half-and-half, sherry, salt, pepper and 1/2 cup of the Cheddar cheese; stir until cheese is melted. Stir in broccoli, rice and chicken.
  • Spoon mixture into baking dish. Top with remaining 1/2 cup Cheddar cheese and the almonds.
  • Cover; bake 20 minutes. Uncover; bake 15 minutes longer or until bubbly and top is browned.

1 bunch broccoli (1 1/2 pounds), cut into florets (about 5 cups)
Kosher salt and freshly ground pepper
4 tablespoons unsalted butter, plus 2 tablespoons melted
1 1/2 pounds boneless, skinless chicken breast, cut crosswise into 1/2-inch-thick strips
1 small onion, finely chopped (1 cup)
8 ounces cremini mushrooms, sliced (about 2 1/2 cups)
3 tablespoons unbleached all-purpose flour
3 cups whole milk, room temperature
9 ounces shredded medium-sharp cheddar (3 cups)
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper
1/2 cup sour cream
1 cup panko breadcrumbs
Cooked egg noodles or steamed white rice, for serving

Steps:

  • Preheat oven to 400 degrees. In a large straight-sided skillet, simmer 1/2 cup water over medium-high heat, then add broccoli and a pinch of salt. Cover, reduce heat to medium-low, and cook until crisp-tender, about 6 minutes. Drain well, then transfer to a large bowl; set aside. Wipe out skillet.
  • Pat chicken dry; season with salt and pepper. Melt 2 tablespoons butter over medium-high heat. Add half the chicken and cook, turning once, until browned and cooked through, about 4 minutes. Transfer to a plate. Repeat with remaining chicken; set aside.
  • 3. In same skillet, melt 2 tablespoons butter, then add onion and mushrooms. Cook, stirring occasionally, until tender and starting to brown, 6 to 7 minutes. Add flour and cook, stirring, 30 seconds. Slowly add milk, reduce heat to medium, and cook, stirring constantly, until mixture is thick enough to coat the back of a spoon, about 9 minutes. Add 2 cups cheese, Dijon, Worcestershire, cayenne, and sour cream; stir until combined. Season with salt and pepper. Add cheese sauce to bowl with broccoli, followed by chicken and accumulated juices; toss to combine. Transfer to a 2 1/2-quart baking dish.
  • In a small bowl, combine 2 tablespoons melted butter, panko, and remaining 1 cup cheese. Sprinkle over broccoli-and-chicken mixture. Bake until bubbly and golden, 20 to 25 minutes. Let cool 15 minutes, then serve over noodles or rice.

1 small bag frozen broccoli
1 10.5 oz can cream of chicken soup
2-3 boneless (skinless chicken breasts- cut into cutlet-sized pieces)
1 cup of mayo
1 cup of sour cream
1-2 cups of grated cheddar cheese
2 Tbsp. butter or margarine (melted mixed with 1/2 c. crushed corn flakes)
1 Tbsp. of lemon juice & 1/4 tsp. curry

Steps:

  • Preheat oven to 350.
  • Lay chicken on the bottom of a 13x9 casserole dish, then place broccoli all around the chicken.
  • Next, in a separate bowl, mix together the soup, mayo and the sour cream. (Add optional spices above if you'd like)
  • Pour the sauce on top of chicken and broccoli, and then sprinkle with cheese.
  • Lastly, add the optional corn flake topping, if desired.
  • Bake for 30-45 minutes or until the chicken is cooked.

5 tablespoons unsalted butter, plus more for the dish
Kosher salt
1 large head broccoli, cut into 1- to 2-inch florets, tender stems peeled and cut into 1/2-inch slices (about 5 cups)
1 tablespoon chopped fresh sage
5 tablespoons all-purpose flour
3 tablespoons dry sherry (or chicken broth)
1 cup low-sodium chicken broth
1 cup milk
1 cup heavy cream
Pinch of freshly grated nutmeg
Freshly ground pepper
1 bunch scallions, chopped (about 1 cup)
1 1/2 cups shredded gruyere cheese (about 6 ounces)
1 cooked 3 1/2-pound chicken, meat removed and cut into chunks, skin and bones discarded (3 to 3 1/2 cups meat)
1/2 cup sliced or slivered almonds, toasted
1/2 cup grated parmesan cheese
1/4 cup breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F and butter a shallow 3-quart casserole dish. Bring a large saucepan of salted water to a boil. Add the broccoli and cook until bright green and almost tender (you still want it to have a little bite; it will cook more in the oven). Drain; cool under cold running water and pat very dry. Set aside.
  • Melt 4 tablespoons butter in a large saucepan over medium heat. When the butter is melted, add the sage and let sizzle a minute, then add the flour. Cook the roux (or else it will taste like raw flour), whisking, for 2 to 3 minutes, without letting it brown. Pour in the sherry (or broth) and cook to reduce it away, about 1 minute.
  • Whisk in 1 cup broth, the milk, heavy cream and nutmeg and season with salt and pepper. Bring to a simmer and cook, whisking occasionally to get out any lumps, until thickened, 6 to 7 minutes. Stir in the scallions and gruyere until the cheese is melted, then remove the sauce from the heat.
  • In a large bowl, mix together the sauce, broccoli, chicken and almonds until thoroughly coated. Pour into the prepared casserole dish. In a small bowl, melt the remaining 1 tablespoon butter in the microwave, then toss with the parmesan and breadcrumbs. Sprinkle the mixture over the top of the casserole. Bake until browned and bubbling, about 35 minutes.

1 small chicken (cut up (5 lbs))
garlic pepper seasoning
1/2 cup ketchup
2 Tablespoons lemon juice
1/2 cup water (I don't always add water but in the video, I did, forgot to mention)
6 Tablespoons brown sugar
1/4 cup apple cider vinegar
4 tablespoons butter (melted)
2 teaspoons chili powder
2 teaspoons paprika
1 teaspoon red pepper flakes
2-3 teaspoons salt
2 teaspoons prepared mustard
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 450.
  • Place chicken on a foil-lined baking sheet and season both sides generously with garlic pepper seasoning.
  • Mix all of the remaining ingredients in a bowl to create the bbq sauce.
  • Place the sauce in the microwave to melt the butter if needed.
  • Cover both sides of the chicken with bbq sauce.
  • Bake skin side up for 40-45 minutes, basting with the bbq sauce every 15 minutes.
  • Turn the oven to broil for the last two minutes of baking and broil for 1-2 minutes to crisp up the skin. Watch it carefully.
  • Remove from oven and let chicken rest for about 5-7 minutes before serving.

2 pkgs. frozen Baby Broccoli Florets (17 oz. pkgs.)
2 cans cream of chicken soup
1 cup mayonnaise
1 Tbsp. lemon juice
1 Tbsp. curry powder
1½ cups shredded American cheese
1 cup bread crumbs
2 Tbsp. butter, softened
Salt and pepper to taste

Steps:

  • Cook the chicken breasts and cut them into cubes.
  • In a greased 9x13 casserole dish, place the broccoli on the bottom and then put the cubed chicken on top.
  • Add a few shakes of salt and pepper.
  • In a bowl, combine the soup, mayonnaise, lemon juice, and curry powder together.
  • Pour the mixture over the chicken and broccoli. Sprinkle the cheese on top. In a small bowl mix the bread crumbs and softened butter together.
  • Spread bread crumbs over the top of the cheese.
  • Cover with foil and cook in a 350 degree oven for 40 minutes or till heated through.

LOW-CAL full dinner!!! A favorite amongst my 2 y/o as well!! I promise this is the BEST chicken divan and I didnt cut the fat in this recipe, but you can subsitute for low cal parmesan and fat fee mayo- but its still low-cal with all the good stuff!!

2-3 chicken breast (boil)
1 can cream of chicken soup (condensed)
1 can cream of mushroom soup (condensed)
1 cup milk (nutritional facts w/whole milk)
1 cup (or less if you prefer) of cheddar cheese
1TB parmesan cheese (grated)
1TB Mayo ( full fat used)
1 cup uncooked brown rice
1 bag frozen broccoli florets (add more if prefer!)
1 serving of crackers crushed (about 7-8 Ritz)
**bread crumbs can sub.
Curry Powder to taste
Pepper to taste

Steps:

  • Preheat oven to 350 degrees
  • ) Cook rice (usually fully cooked is 1hr.) 3/4 the way (aprox. 45 min.) in water without added fat!!
  • ) Boil chicken breast until fully cooked & dice into cubes or shred, steam broccoli until unfrozen but not cooked
  • ) Combine milk & mayo with cream of mushroom & cream of chicken soups and add spices to taste in small bowl then set aside.
  • ) Combine chicken, broccoli & rice into pan size of your preference but may have to adjust topping (cheese & cracker crumbs) to stretch if larger than 9x13 as this size is best in my opinion.
  • ) Mix soup & spice mixture in pan with chicken, broccoli & rice evenly
  • ) Crush crackers and top casserole , finishing with cheddar cheese & parmesan- spread evenly on top of cracker crumbs.
  • ) Cover with aluminum foil and cook covered for 45 minutes at 350 degreese
  • ) Uncover remaining 10-15 minutes. Ready when cheese is melted and lightly browned. Enjoy =)

2 skinless, boneless chicken breast halves
4 cups broccoli florets, or to taste
3 tablespoons butter
1 small onion, chopped
1 ½ teaspoons minced garlic
½ teaspoon garlic salt
⅛ teaspoon dried parsley
salt and ground black pepper to taste
3 cups cauliflower florets
1 cup chicken broth
1 cup heavy whipping cream
1 teaspoon lemon juice
½ cup mayonnaise
2 cups shredded Cheddar cheese

Steps:

  • Place chicken breasts into a large pot and cover with water; bring to a boil. Cook until chicken is no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center of a breast should read at least 165 degrees F (74 degrees C). Remove chicken from the water.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, 3 to 6 minutes. Chop broccoli.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a deep saucepan over low heat. Add onion and garlic; cook and stir until onion is clear and tender, 8 to 12 minutes. Add garlic salt, parsley, salt, and pepper.
  • Pulse cauliflower in a blender or food processor until it resembles rice. Add cauliflower and chicken broth to the onion mixture; cook and stir until broth is nicely absorbed, about 10 minutes. Add heavy cream and lemon juice. Let simmer, uncovered, stirring occasionally, until well combined, about 10 minutes. Stir in mayonnaise and remove from heat. Let sauce cool until thickened.
  • Pull chicken apart with 2 forks into bite-size pieces. Add 1/2 the pulled chicken to the sauce.
  • Line the bottom of a casserole dish with the rest of the pulled chicken. Lay steamed broccoli on top; pour the cauliflower sauce over the broccoli. Top with Cheddar cheese. Cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and bake until cheese at the edges is slightly browned, about 10 minutes more. Let casserole cool for 5 to 10 minutes; slice into 6 even portions.

1 rotisserie chicken (all meat removed and chopped or shredded) (OR use about 1 pound of cooked chicken breasts, shredded or chopped)
10 ounces frozen broccoli florets, steamed-in-bag, excess liquid discarded
2 cans cream of mushroom soup
8 ounces sour cream
1 teaspoon lemon juice
1/2 teaspoon curry powder
1/4 teaspoon black pepper
1/4 teaspoon salt (omit if using salted pork rinds)
1 cup shredded cheddar cheese
1/2 cup crushed pork rinds
2 tablespoons melted butter

Steps:

  • Preheat oven to 350F. Gather all your ingredients. Pull meat from chicken and rough-chop or shred. Steam the broccoli in the microwave per the package directions, till tender-crisp (drain excess liquid). With a whisk, mix the soup, sour cream, and lemon juice in a bowl.
  • Spray a casserole dish with non-stick spray. Lay the broccoli and chicken at bottom of dish.
  • Pour the soup and sour cream mixture on top.
  • Sprinkle the seasonings on top. Blend well.

4 tablespoons olive oil, plus more for greasing
2/3 cup breadcrumbs
Kosher salt and freshly ground black pepper
4 boneless, skinless chicken breasts (about 2 pounds)
4 heads broccoli, cut into florets (about 6 cups)
2 cups grated Parmesan
1/4 cup unsalted butter
1/2 cup all-purpose flour
1/4 teaspoon freshly grated nutmeg
Pinch cayenne pepper
3 cups milk
2 cups shredded sharp Cheddar
1 cup chicken stock
1/2 cup dry white wine
1/2 teaspoon paprika

Steps:

  • Preheat the oven to 350 degrees F and place a rack in the top third of the oven. Grease a 9-by-13-inch baking dish with some olive oil and set aside.
  • In a medium bowl add the breadcrumbs and the olive oil. Season with salt and pepper and set aside.
  • Place the chicken in a large pot and cover with water. Add 4 teaspoons salt and bring to a boil, then immediately reduce to a low simmer. Cook the chicken until the internal temperature on an instant read thermometer reads 160 degrees F, 15 to 20 minutes.
  • Remove and cool slightly, then slice the chicken into thin strips or shred, and place in the bottom of the prepared dish. Add the broccoli and sprinkle the Parmesan over the top.
  • Melt the butter in a medium saucepan set over medium heat. Add the flour and use a wooden spoon or whisk to stir until smooth and cooked, 4 to 5 minutes. Add the nutmeg, and cayenne. Slowly whisk in the milk, Cheddar, stock and wine. Bring to a boil, whisking often. Reduce to a simmer and cook until thickened and smooth, 5 to 8 minutes.
  • Pour the sauce over the broccoli and chicken and then top with the breadcrumb mixture and sprinkle the paprika over the top. Cover the dish with foil and bake 15 minutes. Remove the foil and bake until the top is golden and the casserole is bubbling, 15 minutes.
  • Cool for about 5 minutes and then serve.

2 (4.5 ounce) cans mushrooms, drained
1 (8 ounce) can water chestnuts, drained
2 (10.75 ounce) cans condensed cream of chicken soup
1 cup mayonnaise
1 teaspoon lemon juice
¼ teaspoon curry powder
1 tablespoon melted butter
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 3-quart casserole dish.
  • Arrange cooked broccoli in prepared baking dish. Arrange chicken over broccoli. Add mushrooms and water chestnuts (see Cook's Note).

1 bunch Fresh Broccoli
1 lb. skinless, boneless chicken breasts
1/4 tsp. ground black pepper
8 oz. farfalle or bow-tie pasta
3 tbsp. butter
1 can reduced-sodium chicken broth
1/4 c. unsifted all-purpose flour
1/2 c. half-and-half
1/2 c. grated Parmesan cheese
tsp. ground nutmeg

Steps:

  • With paring knife, cut a thin slice off the bottom of each broccoli stalk to remove the dried end. Remove any leaves and, from cut end, pull thick, fibrous skin upward toward flowerets to remove. Cut broccoli crosswise into 3-inch lengths. Split broccoli flowerets and stalks lengthwise into thinner pieces if stalks are thicker than 1/2 inch. Place stalks and flowerets in separate piles.
  • In 8-quart saucepot, heat 3 quarts water to boiling over high heat. Meanwhile, cut chicken breasts horizontally to split them into cutlets. Between 2 sheets of waxed paper, with meat mallet or back of a chef's knife, pound cutlets to a uniform 1/4-inch thickness. Remove top sheet of paper. Sprinkle cutlets with pepper.
  • Add pasta to boiling water and cook until firm but tender -- about 10 minutes. Meanwhile, grease a 13- by 9-inch oval baking dish. With slotted spoon, transfer cooked pasta to greased baking dish. Toss pasta with 1 tablespoon butter and set aside. Add broccoli stalks to boiling water used for cooking pasta; cook 3 minutes. Add broccoli flowerets and cook 1 minute longer. Drain broccoli in colander and rinse with cold water. Arrange broccoli flowerets around edge of dish and place stalks on pasta in center.
  • In large skillet, melt remaining 2 tablespoons butter over medium-high heat. Add half of chicken cutlets and brown well on both sides -- about 2 minutes per side. As chicken browns, place on broccoli in center of dish.
  • Heat broiler. Pour broth into skillet and heat to boiling, stirring to loosen browned-on bits. In cup, combine flour and half-and-half until smooth. Stir flour mixture into chicken broth and heat to boiling, stirring constantly, until thickened. Stir 1/4 cup cheese and the nutmeg into thickened broth, or sauce. Spoon sauce over chicken and broccoli. Sprinkle with remaining cheese. Cover rim of baking dish with strips of aluminum foil to protect it from the heat.
  • Broil chicken and broccoli 4 inches from heat source until top is lightly browned -- about 3 minutes. Remove foil before serving.

This chicken divan is a paleo version of a comfort food classic! It's dairy-free, gluten-free, and AIP compliant.

5 cups broccoli florets
1 lb chicken breast, cubed
1/2 tsp sea salt
1/4 tsp black pepper (omit for AIP)
1 tbsp arrowroot starch
2 tbsp avocado oil
2 tbsp avocado oil
3 cloves garlic, minced
1 1/4 cup chicken broth
1 tbsp apple cider vinegar
1/3 cup coconut cream
1/3 tsp sea salt
1 tbsp + 2 tsp arrowroot starch
1 1/2 cup plantain chips (finely crushed, manually or with a food processor)
2 tbsp nutritional yeast
1 tbsp parsley, chopped

Steps:

  • Using a large deep pot, place the broccoli in a large pot with enough water to cover. Bring to a low boil and simmer for 5 minutes or until lightly fork tender. Strain and set aside in a large 9×13″ casserole dish.
  • Season the chicken with salt and pepper and coat with arrowroot starch. Using a large pan, heat the avocado oil over medium heat. Cook the chicken in the pan for 4-5 minutes or until the internal temperature reads 165 F. Set the chicken aside.
  • Clean out the same pot used for the broccoli and heat the avocado oil over medium heat. Saute the garlic until fragrant.
  • Pour in the chicken broth (reserve 1/4 cup on the side), apple cider vinegar, coconut cream, and salt. Stir and bring to a low simmer.
  • Using a small bowl, whisk together the 1/4 cup of broth and the arrowroot starch. Pour into the broth mixture and stir well. Allow to simmer and thicken for 2-3 minutes. Set aside and allow to cool slightly.
  • Preheat the oven to 400 F. Add the chicken to the casserole dish with the broccoli and stir to evenly disperse.
  • Pour the sauce over the chicken and broccoli and top with the finely crushed plantain chips and nutritional yeast.
  • Bake in the preheated oven for 15-18 minutes or until the top is crispy.
  • Top with fresh parsley and serve with cauliflower rice if desired

  • Preheat oven to 350 °F.
  • Remove the outer wrappers from the boxes of broccoli. Open one end of each box. Microwave on full power for 2 minutes, until thawed. Drain the broccoli and put into a 11X7 casserole dish that has been prepared with a non stick cooking spray. Top with shredded chicken.
  • In a medium bowl, combine the soup, mayonnaise, sour cream, cheddar cheese, lemon juice, curry powder, salt and pepper to taste, and wine. Whisk together to make a sauce. Pour the sauce over the broccoli and chicken. Mix well with a spatula.
  • Pat down evenly and smooth with a spatula. In a small mixing bowl, stir together the Parmesan cheese, bread crumbs and butter and sprinkle over the top.
  • Bake for about 30-45 minutes.
