- Preheat oven to 425°. In a small bowl, combine the first six ingredients. Place tenderloins on a rack in a shallow roasting pan; spoon some of the sauce over pork. , Bake, uncovered, until a thermometer reads 160°, basting occasionally with remaining sauce, 35-40 minutes. Let stand for 5 minutes before slicing.

- Combine all the ingredients (except pork), whisk well.
- Pour over the loin in a zip lock plastic bag or glass bowl.
- Marinade in the fridge for at least 2 hours.
- Remove loin from marinade, save marinade.
- Cook 6 inches from high heat source for about 15 minutes turning frequently and basting with the marinade The outside should be nicely browned and the inside just a slight pink color Rest for 5 minutes and slice into 1/2-inch slices.
- Heat any remaining marinade and serve over the pork.

- Prepare grill for indirect heat.
- Season meat with garlic powder, salt, and pepper.
- Lightly oil grate. Place tenderloin on grate, and position drip pan under meat. Cook over indirect heat for 30 minutes.

- Combine flour, salt, pepper, paprika and allspice.
- Coat rounds of tenderloin.

OVEN BAKED BBQ PORK TENDERLOIN

- Combine all the rub ingredients in a bowl.
- In another bowl, combine 1 tablespoon of rub and apricot jam. Set aside.
- Place 2 long pieces of plastic wrap - longer than the tenderloins - on the counter. Place the tenderloins on the center of each piece of wrap. If your counter or island isn't big enough to accommodate both, do one at a time.
- Sprinkle some of the rub on top of each tenderloin. Use the wrap to turn the tenderloin over and sprinkle more rub on that side. The wrap catches any rub and can be used to press the rub onto the tenderloin. If not roasting right away, wrap the pork tightly. Repeat with the second tenderloin. This can be done ahead and refrigerated until you are ready to roast. Otherwise, continue without wrapping tenderloins. You should have some rub leftover and can keep it in an airtight container and use to season poultry, beef, or pork.
- When ready to roast, set one oven rack on top position of oven and one rack on the bottom (lowest) position of oven.
- Preheat oven 425 degrees.
- Oil the bottom of large cast iron skillet or other ovenproof skillet. Unwrap tenderloins and place in skillet.
- Roast on bottom rack for 10 minutes. Remove skillet from oven and flip over tenderloins. Spread half of the apricot sauce on both tenderloins.
- Place skillet back onto bottom rack for another 10 minutes. Remove skillet from oven and check the temperature by placing a meat thermometer into thickest part of loin. It should read 137* - 140 degrees. If not, place back in the oven for a few minutes.
- Spread remaining apricot sauce over tenderloins and turn the oven to broil. Place skillet on top rack and broil for 1 - 2 minutes until caramelized.
- Transfer pork to a cutting board and let rest 5 minutes before slicing. Spoon sauce from pan over pork. Serve.
BARBECUED GRILLED PORK TENDERLOIN

- Combine the hoisin sauce, soy sauce, red wine, garlic, sugar, cinnamon, coriander and the pinch of cloves in a resealable bag or a glass baking dish. Add the pork tenderloins and marinate overnight or for at least 8 hours, turning during the marinating process to coat both sides of the pork.
- Preheat the oven to 400 degrees.
- Remove the pork from the marinade (reserving the marinade) and dry off with paper towels, then add to a baking dish that's been sprayed with cooking spray. Place into the oven for 30 minutes.
- While the pork is in the oven, pour a cup of the marinade into a small pot. Bring the marinade to a boil for 5 minutes, then turn the heat down to a simmer for an additional 3-5 minutes. Add the 1/2 cup of BBQ sauce and stir to combine, then remove from the heat.
- After 30 minutes, take the pork out of the oven and baste with the sauce. Return the pork tenderloins to the oven for another 15 minutes, then remove and baste again. Bake for another 15 minutes or until the temperature reaches 140 degrees.
- Tent the pork loosely with foil to rest for 10 minutes. Slice and serve with additional sauce on the side.

- For sauce:
- Sauté chopped bacon and chile de àrbol in heavy large saucepan over medium heat until bacon is crisp. Add chopped onion and garlic cloves; sauté until onion is translucent, about 5 minutes. Add Worcestershire sauce and crushed peppercorns; stir 1 minute. Add peaches and sauté until translucent, about 5 minutes. Add orange juice, ketchup, 1 1/2 tablespoons lemon juice, and hot pepper sauce. Simmer until sauce thickens enough to coat spoon thickly, stirring sauce often, about 30 minutes.
- Strain sauce into medium bowl, pressing enough liquid and solids through strainer to yield 2 cups sauce; discard solids in strainer. Season sauce to taste with salt and more lemon juice, if desired. (Can be made 1 week ahead. Cover and refrigerate.)
- For pork:
- Brush pork tenderloins with olive oil to coat. Arrange pork on rimmed baking sheet. Mix coarsely ground black pepper, kosher salt, and garlic powder in small bowl to blend. Sprinkle seasoning mixture all over pork. (Tenderloins can be prepared 1 day ahead. Cover and refrigerate.)
- Prepare barbecue (medium-high heat). Transfer 1/2 cup sauce to small bowl to use for basting. Pour remaining sauce into small saucepan. Grill pork tenderloins until brown and meat thermometer inserted into center registers 140°F, turning occasionally with tongs, about 18 minutes. Brush pork all over with some of basting sauce. - In a large bag whisk together BBQ sauce, grape jelly, Sriracha Sauce, Worcestershire Sauce, garlic, and pepper.
- Place pork tenderloin in a large ziploc bag. Pour half of sauce mixture over the pork.
- Remove air from bag. Marinate for at least 1 hour in the fridge up to overnight.
