1 x 200 gram package Maple Leaf Natural Selections Slow Roasted Shredded Pork
1 cup shredded mozzarella or Monterey Jack cheese
1 cup BBQ sauce
1 large red bell pepper (roughly chopped)
2 large flour tortilla shells
Optional: salsa (guacamole, and extra BBQ sauce for dipping)

Steps:

  • Toss Maple Leaf Natural Selections Slow Roasted Shredded Pork and bell pepper pieces with BBQ sauce.
  • Preheat a large non-stick skillet to medium and add one tortilla. Sprinkle half the tortilla lightly with 1/4 cup of cheese, top with half of the pork mixture and sprinkle with another 1/4 cup of cheese. Fold empty half of the tortilla over and cook for 3-4 minutes per side, flipping once, until exterior is browned and cheese is melted.
  • Repeat with second tortilla.
  • Serve warm with optional dips and sauces.

A crispy flour tortilla filled with tender pulled pork, BBQ sauce and melty cheese. This easy pulled pork quesadilla is made with 5 simple ingredients in just 10 quick minutes.

1 cup pulled pork ((pre-cooked) )
1/4 cup barbecue sauce ((more if desired) )
4 8-inch flour tortillas ((I prefer using Tortilla Land) )
1-2 Tablespoons butter
2/3 cup shredded cheese ((more if desired) )

Steps:

  • In a small bowl, combine the shredded pork and barbecue sauce and stir to combine. Set aside.
  • Heat a skillet on the stove-top over medium-low heat. Butter the pan and then warm the tortilla. Flip the tortilla and then add 1/4 cup cheese and 1/4 cup pork to one side. Add in any additional add in's if desired. Then fold in the opposite side of the tortilla. The goal is to have melted cheese without burning the tortillas, so keep a close eye and lower the heat if the tortillas are cooking too fast.
  • Remove the warm quesadilla from the pan and transfer to a cutting board. Using a knife or pizza roller, cut the quesadilla into 6 or 8 wedges. Serve right away with additional barbecue sauce for dipping.

1/4 cup chopped fresh cilantro
5 green onions, minced
8 (6 inch) flour tortillas
1 cup shredded four-cheese Mexican blend cheese
2 tablespoons butter or 2 tablespoons margarine, softened
sour cream
sliced green onion
barbecue sauce
fresh cilantro, sprig

Steps:

  • Stir together first 4 ingredients.
  • Spoon pork mixture evenly on 1 side of each tortilla; sprinkle with cheese. Fold tortillas in half, pressing gently to seal. Spread butter on both sides of quesadillas.
  • Heat a large nonstick or cast-iron skillet over medium heat, and cook quesadillas 2 to 3 minutes on each side or until browned. Cut each quesadilla in half for main-dish servings or in quarters for appetizer servings. Serve with desired toppings. Garnish, if desired.
  • Note: You can buy pork already barbecued if you want to make this easier.

1 cup low-fat Greek yogurt
1 lime, zested and juiced
3 tablespoons chopped fresh cilantro
2 teaspoons chipotle en adobo sauce
Salt and freshly ground black pepper
1/2 red onion, chopped
1/2 cup chopped pickled jalapenos, juices reserved
2 cups shredded Simple Roasted Pork Shoulder, recipe follows
2 cups shredded Monterey Jack or Mexican blend cheese
Nonstick olive oil spray
4 large whole wheat tortillas (or white, corn or sun-dried tomato)
3 tablespoons olive oil
3 tablespoons chopped garlic
Salt and freshly ground black pepper
1 (4 pound) pork shoulder

Steps:

  • For the crema: Combine the yogurt, lime zest and juice, cilantro and adobo sauce in a small bowl, stirring well to combine. Season with salt and pepper and set aside.
  • For the quesadillas: Preheat a grill pan and spray with nonstick spray.
  • Soak the onions in the jalapeno juice about 10 minutes. Drain.
  • In a large bowl, mix together the jalapenos, onions, pork and cheese. Divide the mix on top of 2 tortilla rounds. Top each with another tortilla round. Spray the round with olive oil and place face down onto the grill. Grill until the cheese is melted and the tortillas begin to brown, about 3 minutes. Flip and cook an additional 3 minutes. Remove the quesadillas from the grill pan, cut each into quarters and serve with the crema.
  • Preheat the oven to 425 degrees F.
  • In a small bowl, mix the olive oil, garlic, salt, and pepper. Using a pastry brush, spread the mixture all over the pork shoulder.
  • Set the meat on a rack set into a roasting pan. Roast for 20 minutes, and then reduce the heat to 325 degrees F. Continue to cook until an instant-read thermometer inserted into the shoulder reads 185 degrees F, about 4 hours. Remove the pork from the oven and let stand until cool enough to handle, about 30 minutes.
