Steps:
- Wrap the bacon around a scallop nicely and secure tightly with a metal skewer. You may thread two of them onto a skewer. Season both the surfaces of the scallop with some salt and cayenne pepper.
- Heat up the grill and place the bacon-wrapped scallops on the grill. Keep turning the scallops until the bacon becomes charred, brown and slightly crispy. Turn the skewers around so the bacon is grilled with direct heat. Grill until the bacon becomes nicely charred all around. Serve immediately.

SCALLOPS WRAPPED IN BACON
Steps:
- Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
- Place the bacon strips on the parchment paper and bake until just beginning to get golden around the edges but still very pliable, 12 to 15 minutes. Remove from the oven and set aside until cool enough to handle.
- Preheat a grill to medium-high heat.
- Season the scallops on all sides with the Essence and salt. Wrap each scallop in 1 piece of the bacon, securing it through the center with a bamboo skewer. Repeat with the remaining scallops.
- When the grill is hot, brush the grates lightly with oil, then place the scallops on the grill and cook, turning frequently, until just cooked through about 7 minutes total. Transfer to a platter and sprinkle with freshly ground black pepper to taste. Garnish each scallop with a dab of the butter and serve immediately.

- Preheat oven to 425 degrees. Preheat grill to medium-high heat.
- Rinse scallops under cold water and pat dry.
- Place 6 skewers or 12 toothpicks in a shallow baking dish. Cover with water and a splash of white vinegar. The water keeps the skewers from burning and the vinegar adds a little acid. Set aside.
- Lay bacon on a baking sheet in a single layer. Bake until brown but still pliable, about 10-15 minutes. Remove from oven and let cool slightly. Rub the scallops with the mustard. Wrap each scallop with one piece of bacon, the browned side facing in. Thread two bacon-wrapped scallops on each skewer through the bacon to hold it in place. If using toothpicks secure the bacon to each scallop.
- Oil the grill with some olive oil, and place the scallops on the hot grill, or in the oven and cook on all sides until the bacon is crispy and scallops are barely cooked through. That should take about 5-10 minutes.
- Cool for a few minutes and either remove the toothpicks or serve with a fork.

- Soak wooden kabob sticks in water for one hour. Remove, let dry.
- Place shrimp and scallops in a reusable plastic bag, then insert them into another plastic bag to prevent leakage.
- In a large bowl, combine all ingredients and microwave for 1-2 minutes or until the butter is melted.
- Stir and set aside about 1/3 of the juice for basting.
- Pour the remaining marinade over the shrimp and scallops.
- Seal bag and refrigerate for one hour or overnight, turning bag over occasionally.
- Drain and discard the marinade - you will notice that some of the juice has hardened because of the butter...This is how it is supposed to look.
- Thread kabobs alternately using scallops and shrimp.
- Heat the grill, and place them on the BBQ uncovered, over medium heat, and grill for about 3 to 5 minutes per side, turning once.
- Brush each side with the remaining marinade.

- Wash and dry the scallops and place in a bowl with the lemon juice, dill seeds, salt and pepper; leave to marinate for 30 minutes, stirring from time to time.
- Preheat the grill.
