GRILLED POTATOES
Crispy grilled potatoes are easy and a perfect side to any BBQ recipe. Golden outside, tender inside, with no boiling or clean up required!

Steps:
- Rinse and dry the potatoes (no need to peel). Cut crosswise into ½-inch slices (if your potatoes are smaller than a golf ball, you can halve or quarter them). Place in a large bowl.
- In a small bowl, stir together the rosemary, garlic powder, salt, pepper, and oregano.
- Drizzle the potatoes with the oil, then sprinkle the spices over the top. Toss to evenly coat.
- Preheat the grill to medium-high (about 375 to 400 degrees F).
- Place two large (about 22 to 24 inches long) sheets of heavy-duty foil down on a large baking sheet (you'll use the baking sheet for easy transport) so that the foil pieces are slightly overlapping down the center to create a wider sheet. Coat with non-stick spray. Spread the potatoes onto the foil in a single layer (if you prefer not to have the food touch the foil, you can add a layer of parchment in between). Place two more overlapping sheets of foil on top, then fold up the edges all the way around to seal and create a packet. Leave some space towards the top of the packet to allow the air to circulate.
- Using the baking sheet, carry the potatoes out to the grill, then with tongs slide the packet onto the grill. Cover then cook for 15 minutes.
- Carefully open the foil then use the tongs to flip the potatoes over. They should be deeply golden on the first side (if not, continue to cook them for 3 to 5 minutes more). Place the foil loosely back over the top, close the grill, and cook for 5 to 10 additional minutes, until the potatoes are tender when pieced with a fork.
- Slide the potato packet back onto the baking sheet, then transfer them to a serving bowl (or serve them right off of the foil). Serve warm, with a sprinkle of Parmesan and chopped fresh herbs as desired.

PERFECT BAKED POTATOES - OVEN OR GRILL
I despise bland baked potatoes! This is a cooperative recipe that I put together using techniques I have gathered from my father, brother in law, eldest brother and myself. I know that you will love the ease of putting together these very flavorful baked potatoes. NOTE: There is a pictorial tutorial in the photo gallery to the left.

Steps:
- FLAVORED OIL: In a small bowl, whisk together olive oil, liquid smoke and garlic. Set aside.
- SEASONING MIX: In a small dish mix kosher salt, garlic powder and black pepper. Set aside.
- Wash, scrub and dry potatoes well. With a sharp paring knife, cut out a nice wedge from the potato's middle. Remove the wedge and place 1 teaspoon of butter in the hollow. Sprinkle with seasoning mix. Replace the wedge pressing down gently.
- Place each potato on its own sheet of foil. Rub the potato with the olive oil mixture making sure to get some of the crushed garlic on the potato. Sprinkle with additional seasoning mix and roll up tightly in aluminum foil.
- OVEN: Place potatoes in a 350 degree oven for 60 minutes.
- GRILL: Place potatoes on the grill away from the coals, close the lid and grill for 40-60 minutes depending on the temperature of your grill.
BBQ POTATOES
Indoor Or Outdoor BBQ Potatoes. Either way they come out yummy. For better clean-up in oven you can also do the foil!

Steps:
- BBQ~ grill or oven.
- Preheat oven 400°F.
- In large bowl, combine, chili powder, honey, garlic powder, pepper and butter.
- Add potatoes; toss to coat.
- Spoon potatoes in greased 11x7-inch baking dish.
- Bake 40-50 minutes until potatoes are tender.
- BBQ--wrap and seal in foil; place on grill for about 30 minutes until tender!

GRILLED CHEESY LOADED POTATOES

- Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
- Heat a 10-inch cast-iron skillet on direct heat and add the bacon; cook, stirring often, until crispy, about 5 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate; set aside.
- Add the potatoes and sprinkle with salt and pepper. Stir to coat with the bacon fat, then move to indirect heat and cover the grill. Cook, uncovering the grill and stirring every 5 minutes, until the potatoes are tender, about 20 minutes.
- Sprinkle with the Cheddar and move back to direct heat. Cook, uncovered, until the potato bottoms are golden and the cheese is melted, about 10 minutes, depending on the heat of your grill. Let cool for 10 minutes, then dot with the sour cream and sprinkle with the scallions and reserved bacon.
GRILLED BBQ POTATO SKINS
Recipe from Food Network - The Neelys. Sounds like a winner for game day or anytime you are in the mood for BBQ and potatoes. The recipe for the pulled pork is probably out there on Food Network; however, it might be just as easy to stop by the local BBQ restaurant and pickup some chopped beef or pulled pork if they have it. Any bbq'd meat would do for this delicious dish.

- Preheat the oven to 350 degrees. Bake potatoes on middle rack until fork tender, about 1 hour. Remove from oven and let sit until cool enough to handle. Bake 4 strips of bacon on a small sheet pan in the oven for 15 minutes. Crumble bacon when it has cooled.
- Preheat grill to medium heat. Cut potatoes in half lengthwise, and spoon out the flesh, leaving a half-inch shell. Melt the butter in a saucepan and add minced garlic. Brush potato shells with the butter and garlic mixture. Flip over and butter the bottoms. Place potatoes on grill and cook until crisp about 4-4 1/2 minutes on each side and remove from grill. Divide the cheese, bbq sauce, and pulled pork among the potatoes. Top potatoes with sour cream, crumbled bacon and chives for garnish.
- Note: use potato flesh for potato pancakes the next day.

EASY FOIL BBQ POTATOES

Steps:
- Scrub potato and make 4 slits almost through to bottom.
- Slice onion into 4 slices to fit into slits in potato.
- Dot with butter or margarine.
- Sprinkle with salt and pepper to taste.
- Drizzle olive oil over all.
- Wrap tightly in foil, as if to freeze.
- Place package on rack in BBq and close the lid.
- (Can also be done in the oven- 400f degrees for 1 hour or until potatoes are soft).
- In a hot BBq they should be done within an hour, depends on what else you are BBqing.
- Open packages, adjust seasoning, serve in opened foil.
- Repeat process for as many potatoes as needed
