Steps:
- Combine sour cream, sugar, butter and salt in a saucepan.
- Cook over medium heat until butter melts, stirring occasionally.
- Let cool to 105*F to 115*F.
- Dissolve yeast in warm water in a large bowl.
- Let stand 5 minutes.
- Stir in the sour cream mixture and eggs.
- Gradually stir in enough flour to make a soft dough.
- Dough will be sticky.
- Cover tightly and chill 8 hours.
- Divide dough into 4 equal portions.
- Working with 1 portion at a time, turn dough onto a floured surface, knead 4 or 5 times.
- Roll 1 portion of dough into a 12 by 8 inch rectangle.
- Spread one fourth of the filling over rectangle, leaving a 1/2 inch margin around edges.
- Carefully roll up dough, jellyroll fashion, starting at long side.
- Firmly pinch seam to seal.
- Cut roll into 1 inch slices, place slices 2 inches apart on a greased baking sheet.
- Repeat procedure with remaining dough and filling.
- Cover and let rise in a warm place, free from drafts, 45 minutes to 1 hour, until doubled in bulk.
- Bake 375*F for 15 to 20 minutes, or until lightly browned.
- Remove to wire racks, and drizzle with glaze while still warm.
- For filling: combine all ingredients in a large bowl and beat at high speed until well blended.
- For Glaze: combine all ingredients in a bowl, stirring until smooth.
ROAST BEEF AND CHEESE ROLL UPS
Deli sliced roast beef with ricotta and mozzarella cheese filling. Yum yum! Make sure the roast beef is not sliced too thin so that the slices won't fall apart.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine the ricotta cheese, egg, garlic powder, onion powder, Italian-style seasoning and half the mozzarella cheese and mix well. Place a spoonful of mixture onto a slice of roast beef and roll. Repeat with remaining beef.
- Spread 1/2 cup of the spaghetti sauce on the bottom of a 9x13 inch casserole dish. Place the beef rolls in the baking dish seam side down. Pour the remaining sauce over the beef rolls.
- Bake covered at 375 degrees F (190 degrees C) for 40 minutes, add the remaining mozzarella cheese over the top and bake for an additional 3 minutes, uncovered, until cheese is melted.

- Preheat oven to 450°. Place a large cast-iron or other heavy skillet over medium-high heat. Add mushrooms, onion and green pepper; cook and stir until tender, 8-10 minutes. Remove from skillet; cool slightly., Cut steak into 4 pieces; pound with a meat mallet to 1/4-in. thickness. Spread with cheese. Sprinkle with pepper; top with mushroom mixture. Roll up from a short side; secure with toothpicks. Place back in skillet., Bake until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°, medium-well, 145°), 12-17 minutes. Let stand 5 minutes before serving. Serve with mashed potatoes.
