75oz Showboat Pork & Beans (5-15oz cans)
1 Vidalia Onion diced
1 cup Light Brown Sugar
1 cup BBQ Sauce (use your favorite brand or what's on sale)
1/2 cup Ketchup
2 Tablespoons Mustard
2 Tablespoons Worcestershire
1/2 cup BBQ Rub (any bbq rub will work for beans)

Steps:

  • Prepare charcoal smoker or other grill for indirect cooking at 250-275 degrees. Use your favorite wood for smoke flavor.
  • Drain the pork & beans and pour into an aluminum pan.
  • Add the diced onion, brown sugar, ketchup, mustard, BBQ Sauce, Worcestershire Sauce, and BBQ Rub.
  • Gently fold to incorporate the ingredients and cook smoke uncovered for 2.5-3 hours or until onions are soft and liquid has thickened slightly.

2 tablespoons kosher salt
1 pound small dried beans, such as great northern, navy, or pinto beans, picked over and rinsed
8 ounces sliced bacon, cut into 1/2-inch strips
1 1/2 cups finely minced yellow onion (about 1 large onion)
2 tablespoons finely diced seeded jalapeño (about 1 medium pepper)
1/4 cup finely diced green bell pepper
1 tablespoon minced garlic (about 3 medium cloves)
2 cups chicken stock or low-sodium broth
1 1/2 cups ketchup
1/2 cup dark brown sugar
1/4 cup honey
1/4 cup molasses
2 tablespoons yellow mustard
2 tablespoons apple cider vinegar
1 tablespoon barbecue rub
1 tablespoon hot sauce

Steps:

  • In a large container, whisk together 2 quarts water and salt until salt has dissolved. Add beans, cover, and let stand overnight at room temperature. Drain and rinse beans.
  • Place a large dutch oven over medium-high heat. Add bacon and cook until fat has rendered and bacon has crisped, 7-10 minutes. Transfer bacon to a paper towel-lined plate, leaving as much fat in dutch oven as possible.
  • Add onion to dutch oven and cook, stirring occasionally, until onion softens and begins to brown around the edges, about 7 minutes. Stir in green pepper, jalapeño, and garlic and cook until fragrant, about 1 minute. Stir in 3 cups of water, chicken stock, reserved bacon, and beans. Bring to a boil, then reduce heat to low and simmer for 1 hour. Preheat oven to 300°F while beans are simmering.
  • Stir in ketchup, brown sugar, honey, molasses, mustard, vinegar, barbecue rub, and hot sauce. Cover and transfer to oven. Cook beans for 4 hours, stirring occasionally. Remove cover and cook until beans are tender throughout and sauce has thickened, about 1 hour longer. Remove from oven and let cool for 15 minutes. Season with salt. Serve immediately; alternatively, store in an airtight container in the refrigerator for up to 1 week, or freeze. Reheat before serving.

8 slices bacon (about 8 ounces), cut into 1/2-inch pieces
1 medium yellow onion, diced
1 green bell pepper, seeded and diced
Two 28-ounce cans baked beans
1 cup barbecue sauce
1/4 cup molasses
1/4 cup apple cider vinegar
1 tablespoon Worcestershire sauce
1/3 cup packed dark brown sugar
2 teaspoons yellow mustard powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat an oven-proof heavy-bottom pot or Dutch oven over medium heat. Add the bacon and cook, stirring often, until the fat has started to render and the bacon is beginning to crisp, about 5 minutes. Add the onions and bell pepper and continue to cook, stirring often, until the vegetables are slightly softened, about 3 minutes.
  • Stir in the canned beans, barbecue sauce, molasses, vinegar, Worcestershire, brown sugar, mustard powder, cayenne, 1 teaspoon salt and several grinds of black pepper. Bring to a simmer and let cook over low heat, stirring occasionally, until the sauce has thickened slightly, about 5 minutes.
  • Transfer the pot to the oven and bake (uncovered) until the sauce thickens and the beans on top begin to brown, about 40 minutes. Remove from the oven and let cool for at least 15 minutes before serving warm or at room temperature.

2 large onions, medium dice
1 (117 ounce) can baked beans
1 (108 ounce) can dark red kidney beans, drained and rinsed

  • remove bacon and crumble it.
  • on the sheet pan add the onions to the bacon drippings in a single layer and place back in the oven for a few minutes until they are translucent.
  • place all of the ingredients in a large aluminum roasting pan and gently fold until all of the ingredients are combined.
  • Bake at 350 degrees for 1 to 1/2 hours.

7 cups water
1 bay leaf
1 onion, diced
3/4 pound ground chuck
1 clove garlic, minced
1 teaspoon sweet paprika

3/4 cup ketchup
1/4 cup dark brown sugar
1/3 cup yellow mustard
2 tablespoons Worcestershire sauce
Salt and freshly ground black pepper

Steps:

  • Quick soak method for beans: Cover beans with water, bring to a boil. Turn off heat, let stand 1 hour. Drain.
  • Place pinto beans in a large pot with water and bay leaf, and bring to a boil. Reduce heat to a steady boil and cook until tender, about 1 hour.
  • In the meantime, heat a 12-inch non-stick pan over medium heat. When hot but not smoking, add onions and cook, stirring often until they begin to soften. Add 2 tablespoons of the bean cooking water and cook until the onions are softened, about 5 to 6 minutes.
  • Add the ground chuck and garlic and cook, stirring often, until the meat is brown and cooked through, about 5 to 7 minutes.
  • Stir in paprika, thyme, chili powder, ketchup, brown sugar, mustard and Worcestershire sauce. Mix until all ingredients are combined. Pour into pot with beans and stir. Season, to taste, with salt and pepper. Continue cooking until flavors have come together and beans are tender and cooked through and the sauce has thickened.

1 pound dried red beans
3 quarts water
1 bay leaf
1 ½ pounds boneless pork shoulder, cut into 2-inch cubes
1 yellow onion, chopped
1 cup barbecue sauce
½ cup ketchup
⅓ cup apple cider vinegar
¼ cup packed light brown sugar
3 tablespoons molasses
2 tablespoons yellow mustard
1 teaspoon Worcestershire sauce
1 tablespoon smoked paprika
⅛ teaspoon cayenne pepper
1 teaspoon freshly ground black pepper
1 tablespoon kosher salt
1 teaspoon garlic powder
2 ½ cups reserved bean cooking liquid
6 slices thick-cut bacon

Steps:

  • Add dry beans to a bowl, cover with water, and let soak for 8 hours, or overnight.
  • Drain beans and transfer to a large pot filled with 3 quarts of cold, fresh water. Add bay leaf, pork shoulder, and onion. Bring to a simmer over high heat. Reduce heat to medium-low and stir. Skim off foam if desired. Let simmer until beans are just tender, about 1 hour.

400ml tub passata
1 tsp Worcestershire sauce or vegetarian alternative (optional)
small bunch coriander , chopped

Steps:

  • Heat the oil in a small pan. Fry onion until starting to brown, then add garlic and cook for 1 min. Add vinegar and sugar and cook until onions are caramelised. Stir in beans, passata, Worcestershire sauce (if using) and seasoning and simmer for 10-15 mins until thickened. Stir through coriander and serve.

The original recipe came from a Marlboro booklet called The Original Cook Like a Man Cookbook. It also called for 2 cups smoked ham, chopped, and was a one-pot meal for camping. We prefer it as a side dish without the ham, and make it on the stove or in the oven, too. My son is the one who introduced me to it. This recipe represents typical cowboy cuisine of the Southwestern U.S.

1 (15 ounce) can pink beans, rinsed, drained (I substitute pinto beans when I can't find pink beans)

I found this recipe online after searching for quite a while. These beans are the recipe from Love's restaurant that is no longer in West Covina that I loved so much as a kid. This recipe was taken from a previous employee at Love's. It's spot on!

1 c packed brown sugar
2 Tbsp worcestershire sauce
2 tsp chili powder
1/4 c dark molasses
1/2 c bottled chile sauce
2 Tbsp vinegar

Steps:

  • 1. Combine all ingredients in bean pot or crockpot with lid, mix well. I used a pyrex 13 x 9 or bigger which worked fine too.
  • 2. Cover with foil or lid and bake at 400 degrees F for 1 hour for thin bean mixture, or 1 1/2 to 2 hours for thicker bean mixture.
  • 3. Sprinkle with crumbled bacon bits to serve if desired.
  • 4. *Special tip that a reviewer wrote: I tested the recipe,added some fried bacon and the left over bacon drippings, and smoked the beans for four hours on my Traeger Pellet Smoker. The recipe was spot on, even the chile sauce (Hienz Chili) was right. It was like being at Love's all over again.

SLOW COOKER BARBECUE PORK AND BEANS

Pork and beans are cooked together in a slow cooker for mutually beneficial results (If you don't have a slow cooker, you can do it in a pot in the oven.) As the pork shoulder and barbecue sauce braise in the oven, the sauce soaks up the pork juices while the pork tenderizes. Then, beans are added to soak up the deeply concentrated sauce. The recipe uses store-bought barbecue sauce enhanced with the smoky heat of canned chipotles in adobo and brown sugar, which helps glaze the pork. Because every barbecue sauce is different, taste and adjust yours as needed. (For a more acidic sauce, add apple cider vinegar with the beans, or you can increase the sweetness with added sugar.)
