Time 2h15m

Yield 16 pieces

Number Of Ingredients 26

1 teaspoon coriander seeds
1 teaspoon fennel seeds
1/2 teaspoon caraway seeds
2 teaspoons minced garlic
1 teaspoon dried sage
Kosher salt and freshly cracked black pepper
1/2 teaspoon red pepper flakes
1 1/2 pounds ground pork
2 tablespoons maple syrup
2 cups all-purpose flour, plus more for dusting
1 tablespoon packed dark brown sugar
2 teaspoons baking powder
2 teaspoons Italian seasoning
1 1/2 teaspoons mustard powder
1 teaspoon baking soda
1 teaspoon cayenne pepper
1 teaspoon sea salt
4 tablespoons cold unsalted butter, cut into 1/4-inch cubes
1 cup shredded mozzarella cheese
3/4 cup buttermilk
1 large egg, well beaten
3 tablespoons agave syrup
3 tablespoons dijon mustard
3 tablespoons yellow mustard
1 1/2 tablespoons adobo sauce (from a can of chipotle chiles in adobo)
Freshly ground black pepper

Steps:

  • Make the sausage: Toast the coriander, fennel and caraway seeds in a small skillet over high heat, stirring, until fragrant, 3 to 4 minutes. Cool completely, then grind with a mortar and pestle or a spice grinder. Add the garlic, sage, 1 teaspoon salt, 1 teaspoon black pepper and the red pepper flakes; grind to mix. Combine the spices with the ground pork in a bowl. Add the maple syrup and mix. Cover and refrigerate 30 minutes.
  • Meanwhile, make the dough: Combine the flour, brown sugar, baking powder, Italian seasoning, mustard powder, baking soda, cayenne and sea salt in a food processor; pulse to combine. Add the butter and pulse 5 to 6 times (for 4 to 5 seconds each time), until the mixture resembles cornmeal. Add the mozzarella and pulse 3 to 4 times, until well combined. Add the buttermilk and process until a ball forms. Wrap in plastic wrap and refrigerate at least 30 minutes.
  • Form the sausage mixture into 16 mini sausages, about 4 inches long (use about 2 tablespoons sausage for each). Heat a large nonstick skillet over medium-high heat. Cook the sausages in 2 batches until cooked through, 4 to 5 minutes per side. Cool on paper towels.
  • Turn the dough out onto a floured surface. Sprinkle with flour, then gently pat out and roll into a 12-by-16-inch rectangle. Trim the edges to make them even. Cut the rectangle in half crosswise, then cut each half into four 3-by-8-inch strips. Cut each strip in half diagonally to form 16 long triangles. Transfer to a baking sheet, cover loosely with plastic wrap and refrigerate 15 minutes. Meanwhile, preheat the oven to 375 degrees F.
  • Place 1 sausage on the wide end of a dough triangle and roll up. Repeat with the remaining dough and sausages. Arrange the pigs in blankets 2 inches apart on 2 parchment-lined baking sheets. Brush the tops with the beaten egg and bake until golden, about 15 minutes.
  • Meanwhile, make the chipotle-agave mustard: Combine the agave, both mustards, the adobo sauce and a pinch of black pepper in a bowl. Serve the pigs in blankets with the mustard.

GRILLED SPIRAL PIGS IN BLANKETS

Grilled Spiral Pigs in Blankets image

With just two main ingredients-hot dogs and prepared crescent dough-you'll have a hit for your next tailgate or picnic. All-beef hot dogs are a standby, but you can make these pigs in blankets with turkey, chicken or even veggie dogs.

Provided by Food Network Kitchen

Time 35m

Yield 6 servings

Number Of Ingredients 4

6 hot dogs
One 8-ounce tube crescent dough
Nonstick cooking spray
Ketchup and yellow mustard, for serving

Steps:

  • Soak 6 wooden skewers in water for 15 minutes.
  • Prepare a grill for indirect heat. (For a gas grill, turn one burner on each far side to medium heat and the middle burners to low; for a charcoal grill, bank the coals on one side of the grill.) A grill thermometer should read 325 to 350 degrees F.
  • Tear off a long piece of foil and fold into thirds so it's about the size of a baking sheet. Spray the foil with cooking spray.
  • Push the hot dogs onto the skewers so the hot dogs are flush with the top. Use a sharp paring knife to cut a spiral (4 or 5 rings total) along the hot dog, cutting all the way down to the skewer. Gently pull the hot dog down to open up the spiral.
  • Unwrap the crescent dough. Cut it crosswise into 6 pieces. Roll each piece into a snake 8 to 9 inches long. Press one snake into the cut spaces in each spiral, wrapping it as you go and tucking in the ends.
  • Set the foil on the indirect (low) heat part of the grill and add the hot dogs, leaving some space between each. Grill, covered, until the bottoms of the dogs are golden and top of the dough is set, 5 to 6 minutes. Flip the skewers and cook until the bottom is browned again, 5 to 6 minutes more. Flip once more to an unbrowned side and grill until the dough is cooked through, 5 to 6 minutes more.
  • Transfer the pigs in blankets to a platter and serve with ketchup and mustard.

PIGS IN A BLANKET (FROM SCRATCH)

Pigs in a Blanket (From Scratch) image

Make and share this Pigs in a Blanket (From Scratch) recipe from Food.com.

Provided by MommyMakes

Categories     Lunch/Snacks

Time 33m

Yield 18 pigs in a blanket

Number Of Ingredients 9

2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons unsalted butter, cold, cut into small pieces
1/2 cup grated cheddar cheese
3/4 cup buttermilk
18 miniature hot dogs

Steps:

  • Heat the oven to 400ºF. Grease a large baking sheet. Sift the dry ingredients (flour through salt) into a mixing bowl (or dump them in one at a time, whatever).
  • Rub the butter pieces into the dry ingredients until mixture is crumbly. Stir in cheese until evenly distributed.
  • Make a well in the dry ingredients and add the buttermilk. Stir well with a wooden spoon. Let the dough sit for 3 minutes.
  • Sprinkle the dough with flour and stir once or twice then turn out onto a well floured counter.
  • With floured hands, pat the dough into a 15 by 7 inch rectangle, trimming the sides if necessary to get a true rectangle. (Handle the dough as little as possible for tenderness, yeah right).
  • Using a pizza cutter, slice the rectangle into thirds horizontally then slice each third into thirds vertically, this will give you 9 small rectangles. Slice each rectangle diagonally into two thin triangles.
  • One at a time, roll up the sausages in the triangles. Place pointy side down on greased cookie sheet.
  • Bake for 12 to 13 minutes, until golden brown. Cool on the sheet for 3 minutes then tranfer to a wire rack.
