CHEESY BEEF & POTATOES CASSEROLE
Flavorful ground beef with sliced potatoes in a creamy and cheesy sauce! The family is sure to love this layered casserole!

Steps:
- Lightly grease an 11 x 7-inch baking pan. Preheat oven to 350 degrees F
- Brown ground beef and onion; drain
- Mix the soup, garlic powder, pepper, stock and cream in a bowl
- Layer half of the potatoes in the bottom of the prepared baking dish.
- Pour half the soup mixture over the potatoes.
- Top with half the ground beef mixture
- Sprinkle half of the cheese on top
- Repeat with second layer.
- Cover with aluminum foil and place in pre-heated oven.
- Check for potato doneness in center of casserole after 1 hour. May be cooked an additional 30 minutes if potatoes are not soft after 1 hour.
- Remove from the oven and let casserole stand for about 10 minutes.
- Slice it lasagna style and serve.
- SLOW COOKER DIRECTIONS
- Brown ground beef & onions as in main recipe; drain.
- Layer as in main recipe, but in a large slow cooker.
- Omit covering with foil as it will be covered with the cooker's cover
- Cook approximately3-5 hours on high, 6-8 hours on low (times are approximate as all cookers cook differently. Always check at the minimum time listed.

Steps:
- Heat oven to 350°. Spray rectangular baking dish, 11x7x1 1/2 inches, with cooking spray.
- Make potatoes as directed on package for 8 servings, using 2 pouches Potatoes and Seasoning, 2 cups water, the milk and butter. Spread half of the potatoes over bottom of baking dish. Layer with beef, 1 cup of the cheese and remaining potatoes.
- Cover with aluminum foil and bake about 30 minutes or until hot. Sprinkle with remaining 1/2 cup cheese. Sprinkle onions around edges of baking dish. Bake uncovered 3 to 4 minutes or until cheese is melted and onions are brown.

BARBECUED BEEF AND POTATO CASSEROLE
This is down home cooking! I love barbecue sauce, so this is a favorite of mine. I also think I use way more cheese than listed (cheese is my downfall!)

Steps:
- Heat oil in non-stick skillet.
- Add onion, garlic, peppers and green onions, and cook until onion is starting to brown.
- Add ground beef and cook, stirring occasionally until cooked through.
- Add tomatoes and season with salt and pepper.
- Add barbecue sauce and cook until all is well-coated. Remove from heat.
- Preheat oven to 350ºF.
- Spray a large baking pan with cooking spray.
- Arrange alternate layers of potatoes, beef mixture, and cheese, ending with potatoes. (reserve 1/4 cup cheese).
- Cover with foil and bake 40 minutes.
- Uncover and top with remaining cheese.
- Bake, uncovered, until potatoes are cooked through, about 15 minutes more.
- Serve immediately.
NEELY'S BBQ BAKED POTATO
Steps:
- Preheat oven to 400 degrees F.
- Split and scoop out potato flesh. Add your choice of meat, Neely's BBQ sauce and cheese, to the potato flesh. Stuff potato shell with mixture and bake for 10 minutes or until heated through. Top with sour cream and garnish with cheese, to taste.
- Combine all of the sauce ingredients in a stockpot or large Dutch oven. Bring to a boil over high heat, stirring frequently to prevent sticking. Reduce temperature to low and simmer, uncovered, for at least 2 hours.
- Mix all the ingredients and set aside.
CHEESY BBQ BEEF CASSEROLE RECIPE

- Heat oven to 350F. Cook pasta according to package directions. Drain and return to pot.
- In a skillet, cook beef and onion over medium-high heat for 10 minutes, stirring occasionally.
- Add beef mixture, barbecue sauce, mozzarella cheese and 1 cup of cheddar cheese to the pasta and stir to combine. Spoon into a 9x13 casserole dish. Sprinkle with remaining 1 cup of cheddar cheese.
- Bake uncovered for 30 minutes or until hot in the centre. Sprinkle with chopped parsley, if desired.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
- Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
- Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
- Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
- Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.
