SIMPLE BBQ RIBS
Country-style ribs are cut from the loin, one of the leanest areas of pork. These ribs are seasoned, boiled until tender, then baked with your favorite barbeque sauce. That's it! Back to simplicity, back to the country life. Sigh.

Steps:
- For the ribs: In a medium saucepan, combine the soy sauce, brown sugar, molasses, salt and 1 cup water. Bring to a boil and set aside to cool to room temperature.
- Put the ribs in a large, turkey-sized baking bag or sealable plastic bag. Support the bag in a 12-by-14-inch baking pan. Pour the marinade over the ribs and seal the bag. Marinate the ribs in the refrigerator for a few hours, turning the bag occasionally to thoroughly coat the meat.
- Preheat the oven to 375 degrees F.
- Drain and discard the marinade. Cut four slits in the top of the baking bag, if you are using one. Otherwise, remove the ribs, transfer them to the baking pan, and cover the pan with foil or a lid. Bake for 2 hours.
- For the barbecue sauce: While the ribs are baking, blend the ketchup, chili sauce, brown sugar, dry mustard and 1/3 cup water in a large saucepan. Bring the mixture to a boil, stirring to dissolve the sugar, then remove from the heat.
- When the ribs are cooked and tender, remove them from the baking bag. Lower the oven temperature to 350 degrees F.
- Brush the ribs on both sides with the barbecue sauce and return them to the oven to bake, uncovered, for 30 minutes longer. Just before serving, throw the ribs under the broiler to give them a bit of a char.

Steps:
- Raw Preparation: Place slab of ribs bone side down on table. Slide knife under the membrane and against the end bone to separate the 2. With a dry paper towel, grasp the edge of the thin membrane and pull. The entire membrane should separate from the rib.
- Preheat oven to 250 degrees. Combine First Stage rub and mix well. Generously apply rub onto the front and back sides of ribs. Gently pat to ensure that rub will adhere. Place ribs meat-side up on a broiler pan and bake for 2 1/4 hours.
- Remove ribs from oven. Place each rib meat-side down on its own doubled aluminum foil square. Foil should be large enough to completely wrap rib. Mix the Second Stage juices. Pour 1 cup of liquid over each rib. At the same time wrap and seal each rib tight. Return to the oven for 1 hour.
- Remove wrapped ribs from oven. Remove from foil and apply a medium coat of the Third Stage rub to the meat-side of the ribs. Place uncovered in the oven meat-side up for 30 minutes.
- Remove ribs from oven and increase oven temperature to 350 degrees. Brush finishing glaze on both sides of ribs. Place ribs in oven for 10 minutes, or until sauce caramelizes.

BARBECUE RIBS
This recipe is easier than it sounds. I usually cook the ribs the day before and grill them for a quick dinner the next night. FYI: the sauce is much better after it is cooked. It is not a dipping sauce.

Steps:
- Prepare the grill for indirect heat using hickory and charcoal and heat to 250 degrees F.
- Place the ribs on a clean cutting board and pull off the membrane, the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat.
- For the rub: Whisk together 2 tablespoons salt, brown sugar, paprika, chile powder, cumin and pepper. Rub the beef ribs with the seasoning and place on a sheet tray, cover with plastic wrap, and if time, let marinate in the refrigerator for 8 hours or overnight.
- For the glaze: Add the maple syrup, apple juice, brown sugar, vinegar, mustard, chile powder, cayenne, salt and pepper to a medium saucepan and bring to a simmer. Cook until syrupy, about 8 minutes, stirring with a wooden spoon on occasion.
- Remove the ribs from the refrigerator. Place the ribs meatier-side-down on the grill away from the coals. Cook the beef 3 hours, adding more coals as needed. Turn and cook until the ribs "bend" and the meat easily separates from the bone using a fork, about 45 minutes more. Brush on the glaze to the ribs and cook for another 5 minutes. Remove and slice into individual ribs.
OVEN BAKED BAR-B-QUED RIBS
Very easy recipe since you can use your favorite bottled sauce. This is a Pampered Chef recipe that I "tweaked" to our liking. I use the PC deep dish baker with the baking bowl as the cover. But I'm sure that a covered roasting pan or tightly covered metal baking pan would work fine.

- Coleslaw. Coleslaw is one of the best ways to complement your ribs, particularly if they’re large and juicy or smothered in rich bbq sauce. Coleslaw can help add something a little lighter, with varied and intense flavors which can cut through the ribs and add a new dimension to the overall dish.
- Cornbread. There’s often a lot of sauce and juice to mop up when eating a plate of ribs, but missing out on the flavors isn’t possible if you pair your ribs with some cornbread.
- Corn on the Cob. Corn on the cob is another classic side that works really well with finger foods such as ribs or wings because it’s also a rather messy finger food.
- Corn Fritters. Staying with the corn theme, corn fritters are another great option for those who don’t want something so juicy and prefer something with a crisp, fluffy texture to complement the dense and moist texture of ribs.
- Sweet Potato Fries. Sweet potato fries have surged in popularity over the last few years and it’s no wonder, the beautiful sweet flavor and crispy skin make them a delicious alternative to standard french fries and are often much more flavorful and substantial.
- Baked Beans. This may seem like an odd choice, as ribs typically already have a lot of sauce and moisture, and adding more could be overwhelming. However, tomato flavors work amazingly well with the sweetness of ribs and BBQ sauce, cutting through as the beans add a totally different texture to the dish.
- Potato Salad. Potato salad is a really versatile side dish that can easily be made to taste by adding herbs or other ingredients to add flavor and texture, however, any version of potato salad works well with ribs.
- Mac and Cheese. Mac and cheese can be easily eaten as a main dish, but the beauty of it is that it also works as a side. In fact it’s actually better as a side most of the time, because a smaller amount lets you enjoy the richness of the cheese and pasta without getting overwhelmed by its stodginess.
- Green Bean Salad. If you want something a little healthier and lighter to complement your ribs, a green bean salad is a great choice that can be packed with flavor especially if you use sauces or vinaigrette to add a little extra punch to the salad.
- Fried Pickles. Fried pickles work amazingly well as an individual snack food, however, they can easily be used as an accompaniment to other finger foods like ribs, and their salty flavor can really bring out the umami flavors in the ribs tender meat, and compliment the sweetness of the bbq sauce beautifully.
