This dessert is simple but very delicious for the banana lover. Bananas are simply cooked in a mixture of coconut milk and coconut cream to create a luscious treat.

4 large bananas, cut in half crosswise then lengthwise
1 cup coconut milk
1 cup white sugar
1 teaspoon salt
½ cup unsweetened coconut cream

Steps:

  • Bring the coconut milk to a boil in a pot. Add the bananas to the coconut milk and cook until tender, about 15 minutes. Dissolve the sugar and salt into the mixture. Stir the coconut cream through the mixture. Remove from heat; serve hot.

4 bananas (cut each into 4 or 6 pieces)
400 ml mai siam coconut milk
56 g mai siam palm sugar
1/2 teaspoon salt (to taste)

Steps:

  • Peel the bananas and cut each into half down the middle of the fruit using a knife (with help from an adult) and then cut the banana across to make 4 or 6 pieces.
  • Heat the coconut milk in a pan (This must be supervised at all times) and add the palm sugar and salt.
  • Simmer gently until the sugar has melted. Do not cover the pot with its lid.
  • Gently add the banana to the coconut milk and simmer until bananas are soft. This should take about 2 minutes. (Again supervision is needed at all times).
  • Take care to keep the bananas submerged or they will change colour.
  • Adjust sugar and salt to taste.
  • Serve immediately in shallow bowls, allowing one banana per person.

1 cup coconut milk
2 tablespoons sugar (or other sweetener of your choice)
1/4 teaspoon ground cinnamon

Steps:

  • Peel the bananas and cut into bite-sized pieces.
  • In a medium saucepan, bring the coconut milk to a boil. Add the sugar and cinnamon, stirring to dissolve.
  • Add the bananas.
  • Bring back to a boil, then turn down the heat and simmer for 2 - 4 minutes, until the bananas are tender but not mushy.
  • Serve hot, sprinkling extra cinnamon on top if desired.

  • Peel the bananas just before you are ready to cook them.

Steps:

  • Put the coconut milk, sugar, and salt in a medium saucepan over low heat. Cook, stirring occasionally, until the sugar and salt are dissolved, just a few minutes. Meanwhile, peel the bananas and cut into 1-inch chunks. Add the bananas to the saucepan and cook until heated through, about 3 minutes. Do not let the bananas get mushy.
