Bananas Foster is one of my favorite desserts. So I thought that a crunchy, snackable version would be a hit. It is heated in the microwave and takes just a few minutes to make. -David Dahlman, Chatsworth, California

Number Of Ingredients 9

3 cups Honey Nut Chex
3 cups Cinnamon Chex
2-1/4 cups pecan halves
1-1/2 cups dried banana chips
1/3 cup butter, cubed
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon banana extract
1/2 teaspoon rum extract

Steps:

  • Place the first 4 ingredients in a large microwave-safe bowl. Place butter, brown sugar and cinnamon in a small microwave-safe bowl; microwave on high for 2 minutes, stirring once. Stir in extracts. Pour over cereal mixture; toss to coat., Microwave cereal mixture on high for 3 minutes, stirring every minute. Spread onto baking sheets to cool. Store in an airtight container.

1/2 stick butter
6 tablespoons brown sugar
4 bananas
1 tablespoon light rum
2 tablespoons brandy
8 scoops vanilla ice cream, for serving

Steps:

  • Cook butter and sugar in a large skillet over medium heat until melted. Meanwhile, slice bananas in half lengthwise. Add to skillet and cook until bananas are tender, about 2 minutes. Carefully add rum and brandy and ignite. Spoon sauce gently over the bananas a few times and then serve immediately over vanilla ice cream.

Chex must have had a contest, and somehow it caught my attention, because I've queued up four new Nuts 'n Bolts recipes. This was one of the favorites -- it took less than a day for my work to eat it up. . .

3 c honey nut chex
3 c cinnamon chex
2 c pecan halves
1 1/2 c dried banana chips
1/3 c packed brown sugar
1/3 c butter
1/2 tsp ground cinnamon
1/2 tsp banana extract
1/2 tsp rum extract

Steps:

  • 1. In large microwavable bowl, mix cereals, pecans, and banana chips.
  • 2. In 2-cup microwavable measuring cup, microwave brown sugar, butter, and cinnamon, uncovered, on High, about 1-1/2 minutes, stirring after 1 minute, until melted and smooth. Stir in extracts. Pour over cereal mixture; stir until evenly coated.
  • 3. Microwave, uncovered, on High, 3 minutes, stirring after each minute. Spread on waxed paper or foil to cool; break into bite-sized pieces. Store in airtight container.

You only need a handful ingredients to transform ripe bananas into this elegant, warm dessert.

1 orange
2 tablespoons unsalted butter
3 tablespoons packed light brown sugar
1 teaspoon vanilla bean paste
1/4 cup orange liqueur or brandy
Kosher salt
3 ripe bananas, peeled, halved lengthwise and crosswise
1/2 cup dark rum
Whipped cream, for serving (optional)

Steps:

  • Remove 4 strips orange zest with a vegetable peeler. Squeeze the orange and strain the juice.
  • Melt the butter with the sugar, orange zest and vanilla bean paste in a large skillet over medium heat. Cook, stirring, until the sugar caramelizes, about 5 minutes. Remove from the heat and stir in the liqueur, orange juice and a pinch of salt.
  • Return the skillet to medium heat, add the bananas, cut-side down, and cook until glazed and golden, 1 to 2 minutes. Remove from the heat and divide among bowls.
  • Add the rum to the pan and return to medium heat. Bring the liquid to a boil without stirring, then reduce the heat to a simmer. Cook until the sauce thickens slightly, about 4 minutes. Spoon the sauce over the bananas. Garnish with whipped cream if using and the glazed orange zest.

2 tablespoons butter
2 bananas, sliced
1 cup light brown sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
1 pinch salt
2 scoops ice cream (vanilla or something more exotic like praline or wattleseed)

Steps:

  • Melt butter in a saucepan over medium heat.
  • Add sliced bananas and stir for 2 minutes.
  • Add brown sugar, vanilla, cinnamon, and salt.
  • Lower heat and continue cooking, stirring constantly for 2 more minutes.
  • Serve over a scoops of ice cream.
  • Note: 1 oz of booze may be added during the last 2 minutes of cooking (Rum works well), add with the pan off of the heat- Beware of flaming.

3 medium bananas

  • In a large skillet or flambé pan, melt butter over medium-low heat. Stir in brown sugar and cinnamon until combined. Cut each banana lengthwise and then widthwise into quarters; add to butter mixture. Cook, stirring gently, for 3-5 minutes or until glazed and slightly softened. Stir in creme de cacao; heat through., In a small saucepan, heat rum over low heat until vapors form on surface. Carefully ignite rum and slowly pour over bananas, coating evenly. , Leaving skillet or pan on the cooking surface, gently shake pan back and forth until flames are completely extinguished; serve over ice cream.

1/2 cup butter or 1/2 cup margarine, softened
1 1/2 cups granulated sugar
2 large eggs
2 cups mashed bananas
1/4 cup light rum
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 3/4 cups cornmeal
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup all-purpose flour
1/3 cup chopped pecans
1/4 cup firmly packed brown sugar
1/4 cup butter or 1/4 cup margarine

Steps:

  • Preheat oven to 350°.
  • Beat 1/2 cup butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well.
  • Add eggs, one at a time, beating after each addition.
  • Stir in mashed bananas, rum and vanilla extract.
  • Combine 1 1/2 cups flour and next 4 ingredients; add to the butter mixture, mixing until blended. Pour into prepared tube pan; set aside.
  • Combine 1/2 cup flour and remaining ingredients;; sprinkle over batter, Bake for 55 minutes, or until a wooden toothpick inserted into center of cake comes out clean. Cool in pan on a wire rack for 10 to 15 minutes; remove from pan and let cool completely on wire rack.
