Bananas Bombay image

a slight twist on bananas flambe. The name comes from a friend of mine who couldnt seem to remember 'flambe'. Perfect when served with a scoop of vanilla ice cream

2 -3 bananas
1 -2 cup orange juice
1/2 lemon (take out seeds)
1/2 orange, reduce amount of orange juice if used (optional)
2 teaspoons vanilla extract
1 dash cinnamon
1/2 cup rum (I use captain morgans,make sure it lights well)
1 -2 cup brown sugar
butter, to grease pan

Steps:

  • in a sauce pan(slightly greased with butter) on medium heat- add in orange juice and brown sugar. Amounts in the recipe are not exact, use to taste. Stir the mixture into a sauce (shouldnt be very thick but not runny).
  • cut bananas into bite size pieces and add to sauce mixture. Coat well.
  • squeeze the juice of the lemon (and orange) into the pan, mix well. Add more sugar if the mixture becomes too runny.
  • add in vanilla, cinnamon and any other spice you would like to add in (I've used nutmeg with peaches before)stir well.
  • add in rum, turn off the kitchen lights and light the bananas (when in doubt, use less rum than needed and repeat process until the desired flavor is obtained).
  • let it burn out (use a metal spoon to slightly stir) and take off heat.
  • serve over vanilla ice cream.

These a very tasty lamb chops with a raita which is different. Prep time does not take in the marinading time.

3 teaspoons ground cumin
1 1/2 teaspoons ground aniseed
1 teaspoon ground red chili pepper
1 teaspoon ground turmeric
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 cup vegetable oil
8 lamb loin chops (1kg)
1 cup red lentil, rinsed
2 cups chicken stock
2 garlic cloves, crushed
30 g butter
3 teaspoons brown sugar
2 medium bananas, sliced thickly
1 1/2 cups yogurt

Steps:

  • Combine the spices and oil in a large bowl and add the lamb, mix well.
  • Cover and refrigerate for about 3 hours or overnight.
  • Combine the lentils, stock and garlic in a medium pan, bring to the boil and simmer uncovered for about 10 minutes until the lentils are tender.
  • Cook the lamb in batches in a large heated oiled pan until browned both sides and cooked to your liking.
  • Banana Raita: Melt butter and sugar in a medium pan and cook the banana slices until browned lightly and soft.
  • Combine the bananas with the yogurt in a medium bowl.
  • Serve lamb and lentils with the banana raita.

For herb sauce
3 large garlic cloves
1 to 2 small fresh serrano chiles 1/2 cupgrated fresh coconut or unsweetened desiccated coconut
1 cup fresh cilantro sprigs
1/2 cup fresh mint leaves
1/4 cup fresh lime or lemon juice
1/4 cup water
1 teaspoon ground cumin
1/2 teaspoon coarse salt, or to taste
6 untreated fresh or thawed frozen banana leaves or large Swiss chard leaves
six 5-ounce pieces salmon or haddock fillet with skin

Steps:

  • Make sauce:
  • Mince garlic and, wearing protective gloves, mince serranos. In a blender purée all sauce ingredients until smooth.
  • If using banana leaves, cut away ribs and in a large bowl of hot water soften leaves 1 minute to help keep them from splitting. Cut six 8-inch squares from leaves. On a work surface arrange 1 leaf square and pat dry. Spread 1 teaspoon herb sauce down middle of square to equal length of a piece of fish and arrange piece, skin side down, on sauce. Spread 1 tablespoon sauce over piece. Fold top and bottom edges of leaf over piece and fold sides of leaf over piece, enclosing it. Arrange packet, seam sides down, in a bamboo steamer or on a large steamer rack. Make 5 more packets in same manner and arrange in steamer or on rack.
  • Steam packets over boiling water, covered, until fish is just cooked through, about 8 minutes. Serve fish immediately.
