1 cup mashed overripe bananas (from 2 to 3 bananas)
1/4 cup whole milk, plus more for brushing
2 teaspoons pure vanilla extract
2 1/2 cups all-purpose flour, plus more for dusting
1/4 cup plus 2 tablespoons granulated sugar, plus more for sprinkling
1 tablespoon baking powder
1 teaspoon kosher salt
1 1/4 sticks (5 ounces) unsalted butter, frozen for 15 minutes
1 ripe but firm banana, halved lengthwise and quartered crosswise

Steps:

  • Preheat the oven to 375 degrees F. Line a large rimmed baking sheet with parchment paper.
  • In a medium bowl, whisk together the mashed bananas, milk and vanilla. Set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder and salt. Working over the bowl, grate the cold butter on the large holes of a box grater. Gently toss the grated butter in the flour until it resembles coarse meal. Stir in the wet ingredients just until evenly moistened.
  • Transfer the dough to a lightly floured surface, gather any crumbs and knead a few times until the dough just comes together. Working quickly and using lightly floured hands, pat the dough into a 9-by-6-inch rectangle. Using a large knife, cut the dough into 8 rectangle scones. Transfer the scones to the prepared baking sheet and brush lightly with milk; freeze for 5 minutes if the dough is too warm. Arrange the banana slices on top, pressing them into the dough slightly.
  • Bake in the center of the oven until firm and lightly golden, 25 to 30 minutes, rotating the pan halfway through. Let the scones cool for 15 minutes, then remove and discard the parchment paper.
  • Preheat the broiler and position the rack 8 inches from the heat. Working over a compost bowl, generously sprinkle each scone with the sugar. Broil until the sugar is bubbling, about 1 minute, rotating the pan during broiling to ensure even browning. Alternatively, use a kitchen torch to brulee the scones. Let cool slightly before serving.

Steps:

  • Heat oven to 375 degrees.
  • In a large mixing bowl, combine flour, baking powder, salt and sugar. Mix well. Cut in butter and shortening. In a separate bowl, combine cream with beaten egg then add to dry ingredients. Stir in fruit. Turn dough out onto a floured surface. Roll dough out and cut into biscuit size rounds. Bake for 15 minutes or until brown.

1 extra-large, extra-ripe banana, mashed (1/2 cup)
1/3 cup heavy cream, plus more for brushing
1 large egg, lightly beaten
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1/3 cup packed dark brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 cup (1 stick) cold unsalted butter, cut into pieces
2 1/4 ounces bittersweet or semisweet chocolate, chopped (about 1/2 cup)
1 1/4 ounces (about 1/2 cup) hazelnuts, toasted, skinned, and finely chopped (see Cook's Note)
Sanding sugar for sprinkling

Steps:

  • Preheat the oven to 425 degrees F.
  • In a small bowl, whisk together the banana, cream, egg, and vanilla. In a large bowl, whisk together the flour, brown sugar, baking powder, and salt.
  • Cut in the butter with a pastry blender, or 2 knives used like scissors, until the mixture resembles coarse meal with some larger pieces. (You can use your fingers if you work fast enough that the butter stays cold.) Toss in the chopped chocolate and hazelnuts.
  • Drizzle in the banana mixture and stir with a fork until the mixture is crumbly and moistened, but stop before you've mixed it into a uniform batter. Tip out the mixture onto a parchment-lined baking sheet and pat it into a 6-inch circle. Using a sharp knife or a bench scraper, cut the circle into 8 equal triangles. (At this point, you could freeze the triangles well-wrapped on their sheet for another day. Bake them from frozen.) Spread the triangles apart and brush the tops with the cream. Sprinkle with sanding sugar.
  • Bake until the scones are golden brown and set, 22 to 25 minutes. A toothpick inserted into the center of a scone should come out clean. Transfer the baking sheet to a wire rack to cool slightly. Serve warm or at room temperature. Scones are best the day they're made.

¼ cup packed brown sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
½ cup cold butter, cut into pieces
1 cup mashed ripe bananas
¾ cup buttermilk
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with a silicon mat (such as Silpat®).
  • Combine 2 3/4 cups flour, brown sugar, baking powder, cinnamon, and salt in a medium bowl; stir to blend. Toss in cold butter and cut it into the dry mixture with a pastry cutter until mixture resembles coarse crumbs.
  • Blend mashed bananas, buttermilk, and vanilla together in a small bowl. Pour into the dry ingredients and stir gently until the mixture comes together. If it's a little too wet, add just a little bit more flour. Handle as lightly as possible and form into a disc on the prepared baking sheet. Gently cut into 12 wedges or just score the disc.
  • Bake in the preheated oven until golden brown and baked all the way through, 22 to 28 minutes. Cool on the baking sheet for a few minutes before moving to a rack to complete cooling.

Steps:

  • Preheat oven to 400°F Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, sugar, baking powder, salt and ginger. Cut butter into a few chunks and rub it into the flour mixture with your fingertips.

2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
5 tablespoons unsalted butter, cold, cut in chunks
1 cup fresh blueberries
1 cup heavy cream, plus more for brushing the scones
1/2 cup freshly squeezed lemon juice
2 cups confectioners' sugar, sifted
1 tablespoon unsalted butter
1 lemon, zest finely grated

Steps:

  • Preheat the oven to 400 degrees F.
  • Sift together the dry ingredients; the flour, baking powder, salt, and sugar. Using 2 forks or a pastry blender, cut in the butter to coat the pieces with the flour. The mixture should look like coarse crumbs. Fold the blueberries into the batter. Take care not to mash or bruise the blueberries because their strong color will bleed into the dough. Make a well in the center and pour in the heavy cream. Fold everything together just to incorporate; do not overwork the dough.
  • Press the dough out on a lightly floured surface into a rectangle about 12 by 3 by 1 1/4 inches. Cut the rectangle in 1/2 then cut the pieces in 1/2 again, giving you 4 (3-inch) squares. Cut the squares in 1/2 on a diagonal to give you the classic triangle shape. Place the scones on an ungreased cookie sheet and brush the tops with a little heavy cream. Bake for 15 to 20 minutes until beautiful and brown. Let the scones cool a bit before you apply the glaze.
  • You can make the lemon glaze in a double boiler, or for a simpler alternative, you can zap it in the microwave. Mix the lemon juice with the confectioners' until dissolved in a heatproof bowl over a pot of simmering water for the double-boiler method, or in a microwave-safe bowl. Whisk in the butter and lemon zest. Either nuke the glaze for 30 seconds or continue whisking in the double boiler. Whisk the glaze to smooth out any lumps, then drizzle the glaze over the top of the scones. Let it set a minute before serving.

1 free-range egg
150 ml milk
1 tablespoon vegetable oil
1 tablespoon butter

Steps:

  • To make the drop scones, place all the ingredients together in a bowl. Mix until well combined, to create a thick batter.
  • Heat the vegetable oil in a medium non-stick frying pan on a medium heat.
  • Ladle the mixture into the pan in small dollops. Cook for 1-2 minutes and turn over. Cook until golden brown.
  • To make the caramelised bananas, in a medium sized frying pan on a medium heat melt the butter.

1/2 cup sugar
2 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
12 tablespoons cold butter or 12 tablespoons margarine
2/3 cup very ripe banana, mashed
1 cup banana yogurt or 1 cup sour cream
1 egg yolk
3/4 cup miniature chocolate chip
3 semi-sweet chocolate baking squares, chopped into small pieces
1/4 cup whipping cream
1 (8 ounce) package whipped cream cheese

Steps:

  • Preheat oven to 350°F
  • Combine the first 5 ingredients in bowl.
  • Cut in the butter until the size of peas.
  • Add the yogurt or sour cream, egg yolk, bananas and chocolate chips.
  • Combine into ball. Flour a surface and knead gently until it comes together.
  • Grease a cookie sheet. Place ball in centre of sheet and pat down to form a disk, about 2 1/2 inches high (approx).
  • Cut dough in half and then in half the other way (now you have 4 pieces. Now repeat again. So now you have 8 triangles.
  • Pull trianges out from each other so they are not touching too much. This will give you lots of nice crust.
  • Bake for about 20 minutes. Time depends on how thick you made the scones. To test for doneness -- check the centres where they touch. If firm, they should be done.
  • For Chocolate Glaze:.
  • When scones are done, put some mini choco chips on top of the scones. Leave for 5 minutes, then spread over top.
  • OR.
  • For Chocolate Cream Cheese:.
  • Heat chocolate and cream until chocolate is melted.
  • Cool to room temperature.
  • Stir into whipped cream cheese.
  • Serve along side scones. YUMMY!

BANANA NUT SCONES

I made these up this morning when we were looking for a different flavour of scone for breakfast - and well, the very ripe bananas were calling me! I went easy on the sugar in the scones, and I sprinkled the top with Turbinado Sugar and oats to mimic a cruchy topping. These are not your typical buttery scones, but hearty, healthy, and hold you till lunch scones! If you don't have cinnamon chips, add a tbsp brown sugar, or you might wish to add raisins or chocolate chips, if you like your banana bread that way. This is my basic scone formula - I just change up the fruit and nuts to keep it interesting!

1/2 cup all-purpose flour

1 banana, ripe, mashed
1/4 cup cinnamon baking chips

Steps:

  • Heat oven to 400.
  • Mix dry ingredients together (oatmeal, flours, baking powder, cinnamon). Stir oil into dry ingredients well. Add cinnamon chips and walnuts and stir. In a clear measuring cup, add mashed banana, milk to 3/4 cup (banana plus milk should equal 3/4 cup), and vanilla. Combine wet and dry ingredients; stir until the dry ingredients are damp.
  • Drop dough onto parchment paper lined or greased baking sheet, and form into a 5" diameter circle. Cut into four triangles - it's ok to leave them in a circle. Sprinkle with oats and sugar.
  • Bake at 400 for 20 minutes, until lightly browned.

  • Sprinkle generously with the 1 teaspoon of cinnamon and 1 cup sugar combined.
