MAGNOLIA BAKERY BANANA PUDDING WITH A TWIST RECIPE BY TASTY
A summer spin on everyone's favorite banana pudding recipe. The added layers of puréed strawberries take this sweet treat to the next level when swirled into this creamy, classic dessert.

- In a medium bowl, using an immersion blender or a whisk, mix together the milk and instant vanilla pudding mix until well combined. Add the sweetened condensed milk and vanilla, if using, and beat well for about 2 minutes more, until well incorporated. Cover the bowl with plastic wrap. Refrigerate for at least 3-4 hours, or up to overnight, until set.
- In a large bowl, whip the cream with an immersion blender or electric hand mixer on medium-high speed until stiff peaks form, about 5 minutes.
- Using a rubber spatula, gently fold the whipped cream into the chilled pudding until no white streaks remain. Return to the refrigerator until ready to assemble.
- Add the strawberries and sugar to a blender or food processor. Blend for about 30 seconds, until smooth.
- Slice the bananas into ¼-inch thick rounds. You should have about 4 cups.
- To assemble, arrange ⅓ of the vanilla wafers in the bottom of a 4- to 5-quart, wide, preferably glass, bowl, overlapping as needed. Top with ⅓ of the bananas, ⅓ of the strawberry purée, and ½ of the pudding. Repeat the layering twice more, finishing with the remaining wafers and bananas, strawberry purée, and strawberry slices. Cover the bowl tightly with plastic wrap and chill in the refrigerator for at least 4 hours, or up to 8 hours, before serving.

- Preheat the oven to 350°F.
- Crust: In a food processor, pulse Nilla Wafers until crumbly. Add softened butter and Nilla Wafer crumbs to a large bowl, and thoroughly mix by hand until well incorporated. Using a 9.5 - 10 inch tart pan, press mixture into the bottom of the pan, and along the sides to form a crust. Place in the refrigerator to chill while preparing the bananas.
- Filling: Cover a sheet pan with parchment or foil and roast bananas, 25 - 30 minutes, uncovered. Let bananas rest and cool, about 15 minutes. Once cooled, in a mixing bowl, peel and add bananas to the bowl, along with the sweetened condensed milk, brown sugar, cinnamon, nutmeg, eggs, and egg yolks. Using a mixer, mix until thoroughly combined, about 1 minute. Remove pie crust from the refrigerator. Pour filling into chilled pie crust. Using a covered sheet pan, place the tart pan on a baking sheet and bake for 30 minutes, or until filling is set.
- Cool at room temperature, at least one hour. For a decorative touch, immediately before serving, add whipped cream or meringue on top. Or, serve a side of whipped cream with each slice.

- In a large saucepan, mix sugar, flour and salt. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat., In a small bowl, whisk eggs. Whisk a small amount of hot mixture into eggs; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. - Place the bananas, egg yolks, sugar, cornstarch, vanilla and milk into a blender and blitz until smooth.
- Transfer mixture to a saucepan and cook over medium heat until thick stir constantly for about 8-10 minutes.

- In a stand mixer with the whisk, beat the condensed milk and water on medium speed until well combined, about 1 minute. Add the pudding mix and beat until there are no lumps and the mixture is smooth, about 2 minutes. Transfer the mixture to a medium bowl, cover and refrigerate until firm, at least 1 hour or overnight.
- In a stand mixer with the whisk, whip the heavy cream on medium speed for about 1 minute, until the cream starts to thicken, then increase the speed to medium-high and whip until stiff peaks form. Be careful not to overwhip.
- With the mixer running on low speed, add the pudding mixture a spoonful at a time. Mix until well blended and no streaks of pudding remain.
- To assemble, select a trifle bowl or a wide glass bowl with a 4- to 5-quart capacity, or individual serving bowls.
- Saving 4 to 5 cookies for the garnish on top, begin assembly. Spread one-quarter of the pudding over the bottom and layer with one-third of the cookies and one-third of the sliced bananas (enough to cover the layer). Repeat the layering twice more. End with a final layer of pudding. Garnish the top with additional cookies or cookie crumbs.
- Cover tightly with plastic wrap and refrigerate for 4 to 6 hours. Cookies should be tender when poked with a knife. This dessert is best served within 12 hours of assembling.

- Mix pudding according to package directions.
- let stand while you slice the bananas. I use an egg slicer to get nice even slices, not to mention it goes so much faster.
- add sweet condensed milk to pudding mixture and mix very well.
- add cool whip and mix well.
- Layer wafers, sliced bananas then pudding in a punch bowl. I usually get 3-4 layers but it depends on how thick you make them, its totally up to you.
- Let stand overnight or at least 4-6 hours so it really gets that banana flavor.
- You can use more or less wafers depending on your taste and i always add the top layer just before serving so that they are still crisp. You can get creative with the wafers and really make a nice presentation.
EASY YUMMY BANANA CREAM PUDDING
Made with cooked pudding this is a little more labor intensive but still very easy and very yummy. Make the pudding one evening and put the pudding together the next day so it has some time in the refrigerator to soften the cookies and mellow the flavors. I brought a recipe of this to a BBQ a couple of weeks ago. There were only ten people there but I honestly think I could have made three recipes of this and not had anything leftover. UPDATE: I made this for my MIL's Memorial and it was a hit. It gave a sweet touch to a sad day.

- Cook the condensed milk, water and pudding mix whisking all the time until it boils hard, remove from heat, lay plastic wrap on top to prevent skin and chill.
- Fold the cool whip into the pudding.
- In glass bowl layer the bottom with cookies top side facing out.
- Layer bananas on top of the cookies.
- Layer pudding mix on top of bananas.
- Stick a layer of cookies up on edge, tops facing out, in a ring around your bowl so it looks pretty through the glass.
- Repeat the layers ending with a layer of pudding and then topped with a layer of cookies. Be gentle and take your time with the layers to keep everything neat.
- (You should use up all the cookies and banana slices except for the few you just had to eat.).

- Beat egg yolks; combine egg yolks and milk, mixing well.
