BANANA PUDDING ICE CREAM SUNDAES

3 very ripe bananas, cut into chunks and frozen, plus 1 ripe banana, thinly sliced
2 cups whipped topping
3/4 cup crushed vanilla wafer cookies

Steps:

  • Place frozen banana chunks in a high-powered blender or food processor and begin to process on low. (It will look grainy.) Turn off machine and use a rubber spatula to scrape down the sides. Continue processing until bananas get creamy and increase in volume, scraping down the sides as necessary. Remove to a bowl. Slowly fold in 1 cup whipped topping and 1/2 cup vanilla wafers. Transfer to 4 dishes and top each with additional whipped topping, vanilla wafers and sliced banana.

1 ½ cups half-and-half
½ cup packed light brown sugar
½ cup white sugar
1 pinch salt
2 eggs, beaten
1 cup heavy whipping cream
1 teaspoon vanilla extract
2 very ripe bananas, mashed
1 cup crushed vanilla wafers

Steps:

  • Combine half-and-half, brown sugar, white sugar, and salt in a saucepan over medium-low heat; cook and stir until sugars are dissolved, about 5 minutes. Remove saucepan from heat and pour 1/2 the mixture into a large bowl; whisk eggs into mixture until well combined.
  • Transfer egg mixture back into saucepan with remaining half-and-half mixture; stir in cream. Cook and stir mixture over medium-low heat until cream mixture is thickened and coats the back of a spoon, 5 to 10 minutes. Remove saucepan from heat and stir in vanilla extract.
  • Pour cream mixture over a fine mesh sieve into a bowl; cool to room temperature. Stir mashed bananas into cooled cream mixture.
  • Pour banana cream mixture into an ice maker and freeze according to manufacturer's instructions. Fold vanilla wafers into ice cream during the last 5 to 10 minutes of freezing.

2/3 cup instant malted milk powder
1 pinch kosher salt
2 cups heavy cream
4 ripe bananas, peeled and sliced (about as thick as the wafers)
7 ounces vanilla wafers

Steps:

  • Line a 8 1/2" x 4 1/2" loaf pan with plastic, so there's a fair amount of overhang.
  • Add the malted milk powder and salt to a bowl. Add a splash of cream and whisk. Add another splash of cream and whisk. Continue this until you've added all the cream. (This ensures that the malted milk powder gets evenly distributed and doesn't get all lumpy and weird.) Continue to whip the cream until stiff peaks form. (A balloon or cage whisk helps, if you have one.).
  • Add a single layer of wafers to the bottom of the loaf pan. Top with a layer of whipped cream. Add a single layer of bananas. Top with a layer of whipped cream. Repeat this until you've used all the cream-making sure to end with the cream. If it starts to rise above the loaf pan, that's fine! Even good. Fold the extra plastic over the icebox cake. If it doesn't completely cover the surface, add more plastic wrap.
  • Chill for at least 12 hours or up to 36.
  • To unmold, peel away the plastic from the top. Carefully-but confidently-turn the loaf pan onto a plate or serving platter. Peel away the plastic. Slice into thick slabs and eat cold.

3/4 cup butter, softened
1 1/2 cups sugar
3 large eggs
2 cups mashed ripe bananas
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup whlle buttermilk, plus
2 tablespoons whole buttermilk
1 (3 1/2 ounce) box banana cream instant pudding
2 cups milk
1 (12 ounce) container frozen non-dairy topping, thawed
grated chocolate, for garnish

Steps:

  • Preheat oven to 350°F.
  • Grease and flour a 13x9-inch baking pan.
  • In a large bowl, combine butter and sugar. Beat at medium speed with an electric mixer until fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in bananas and vanilla.
  • In a medium bowl, combine flour, baking powder, baking soda, and salt. Add to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Pour batter into prepared pan. Bake for 35 minutes, or until a wooden pick inserted in center comes out clean.
  • Let cool for 10 minutes. With the handle of a wooden spoon, poke holes halfway through cake in half-inch intervals.
  • In a medium bowl, combine pudding mix and milk. Whisk until smooth and slightly thickened, about 2 minutes. Pour over top of cake. Loosely cover cake and refrigerate for 2 to 4 hours.
  • Spread whipped topping over top of cake; sprinkle with grated chocolate, if desired. Cut into squares to serve.

I defy even Ben & Jerry's to top this recipe combination! Banana pudding and homemade ice cream combined into one perfect bowl! My daughter prepared this on my birthday to go with my mother-in-law's famous Caramel Cake. Heavenly! You are welcome to dice or slice fresh banana to garnish, but we were so very satisfied with the banana flavor of the finished product that we found it unnecessary. (Be sure to leave the vanilla wafers in chunks, as crumbs would detract from the texture.)

1 cup cream
2 cups half-and-half
3 egg yolks
3/4 cup sugar
1 teaspoon vanilla extract
2 bananas, sliced
1 banana, sliced, for garnish (optional)
1 pinch nutmeg
2 cups nilla wafers, roughly crushed

Steps:

  • Combine the cream and half and half in a medium saucepan, and cook over medium heat until warm (do not boil). Meanwhile, beat the egg yolks with the sugar and vanilla.
  • Once the cream mixture is warm, pour 1/2 cup of it into the egg mixture. Stir egg and cream mixture back into the cream and half and half in the pan. Stir in banana slices and heat on medium low for five minutes, or until it becomes slightly thick (once again, do not boil!). Stir in the nutmeg and remove from heat. Allow to rest for 45 minutes. During this time, the bananas will be releasing all their incredible flavor into the cream.
  • Remove the banana slices (a colander works well for this), and chill cream overnight, or for at least four hours.
  • Freeze according to your ice cream maker's instructions. Stir in the Nilla Wafers, and garnish with sliced banana, if desired.

1 (14 ounce) can eagle brand sweetened condensed milk
3/4 gallon whole milk
2 (3 1/2 ounce) packages jello banana cream instant pudding
1/2 teaspoon vanilla extract
4 -5 bananas (chopped)
1 (12 ounce) box vanilla wafers (crushed)

Steps:

  • In a bowl, mix Cool-Whip, condensed milk, pudding, and about 1/4 gallon milk. Add chopped bananas and crushed Nilla Wafers.
  • Pour mixture into ice cream machine. Add milk to the fill line in the ice cream maker.
  • Stir mixture and begin freezing process as directed by manufacturer's procedure.
  • Note: Can substitute different flavors of pudding mix, cookies, and/or fruit for different flavors. Vanilla pudding and crushed Oreos (do not remove cookie filling before crushing) with no fruit makes a great Cookies N Cream-like ice cream.
