Candied Pecan Banana Cupcake Recipe. Easy stove top candied pecans crumbled on top of cream cheese frosting, drizzled with butterscotch on top of a sweet banana cupcake!

CUPCAKES:
1 1/2 cup all purpose flour
1 cups granulated sugar
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 large eggs (room temp)
1/3 cup vegetable or canola oil
1 tsp vanilla extract
1 cups mashed ripe banana (about 3 large)
1/4 cup milk
CREAM CHEESE FROSTING:
1/2 cup unsalted butter room temp
8 oz cream cheese room temp
2 tsp vanilla extract
3 cups powdered sugar
CANDIED PECANS:
1 cup pecans
1/2 cup brown sugar
2 Tbsp water
1/4 tsp salt
1/4 tsp cinnamon
GARNISH:
Butterscotch (jarred or check post for link to great homemade recipe.)

Steps:

  • Preheat oven to 350 degrees F
  • Line cupcake tray with liners (this recipe makes 12-14 cupcakes)
  • CUPCAKES:
  • In bowl of mixer add in all the dry ingredients.
  • Add in the eggs, oil and vanilla, mix until just combined.
  • Add in the bananas and stream in the milk.
  • Mix until just combined and batter is formed.
  • Pour into prepared muffin tin.
  • Bake for 16-18 minutes or until toothpick inserted comes out clean.
  • Let cool completely.
  • CREAM CHEESE FROSTING:
  • Cream butter and cream cheese
  • Add in the vanilla
  • Slowly, mixer on low, add in the powdered sugar 2 Tbsp at a time
  • Mix until completely combined
  • CANDIED PECANS:
  • Put brown sugar, water, salt and cinnamon in medium pan.
  • Cook over medium heat until sugar dissolves and the mixture bubbles.
  • Add pecans, cook 4 additional minutes, stir to coat pecans in sugar mixture.
  • Remove from heat and pour onto parchment line cook sheet.
  • Let cool completely.
  • Break or chop into pieces.
  • GARNISH:
  • Butterscotch, jarred or check post for link to great homemade recipe.
  • ASSEMBLY:
  • Line up cupcakes.
  • Using Ateco 808 tip (or similar) pipe the frosting onto the cupcake.
  • Sprinkle with candied pecans.
  • Drizzle with butterscotch

Baking a batch of these ultra-moist cupcakes is a great way to use overripe bananas; keep a bunch in your freezer (unpeeled) and thaw when you're ready to use. You can substitute walnuts for pecans, or leave the nuts out entirely. Caramel buttercream makes a satisfyingly sweet topping; cream-cheese frosting (page 303) and chocolate-sour cream frosting (page 311) are also good choices. Left unfrosted, the cupcakes can be enjoyed any time of day.

3 cups sifted cake flour (not self-rising)
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
3/4 teaspoon salt
1 teaspoon ground cinnamon
4 very ripe large bananas, mashed (about 2 cups)
3/4 cup buttermilk
1/2 teaspoon pure vanilla extract
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 1/2 cups packed light-brown sugar
3 large eggs, room temperature
1 cup pecans (about 4 ounces), toasted (see page 323) and coarsely chopped
Caramel Buttercream (page 307)

Steps:

  • Preheat oven to 350°F. Line standard muffin tins with paper liners. Whisk together cake flour, baking soda, baking powder, salt, and cinnamon. In another bowl, whisk together bananas, buttermilk, and vanilla.
  • With an electric mixer on medium-high speed, cream butter and brown sugar until pale and fluffy. Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Reduce speed to low. Add flour mixture in two batches, alternating with banana mixture, and beating until just combined after each. Stir in pecans by hand.
  • Divide batter evenly among lined cups, filling each three-quarters full. Bake, rotating tins halfway through, until a cake tester inserted in centers comes out clean, about 20 minutes. Transfer tins to wire racks to cool completely before removing cupcakes. Cupcakes can be stored overnight at room temperature, or frozen up to 2 months, in airtight containers.
  • To finish, use a small offset spatula to spread cupcakes with buttercream. Refrigerate up to 3 days in airtight containers; bring to room temperature before serving.

¼ cup sour cream

3 tablespoons brown sugar, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square baking dish.
  • Beat superfine sugar and butter in a bowl with an electric mixer until smooth. Add eggs one at a time, beating until each egg is fully incorporated before adding the next. Mix baking soda into sour cream in another bowl and stir into butter mixture until combined.
  • Stir bananas into butter mixture; add cake flour and baking powder and mix well. Stir in vanilla extract. Pour banana cake batter into prepared baking dish.
  • Mix pecans, brown sugar, and cinnamon in a bowl; sprinkle over cake batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes.

4 very ripe large bananas, mashed (about 2 cups), plus sliced bananas for garnish

1/2 teaspoon pure vanilla extract
1 cup chopped pecans
Caramel Buttercream for Banana Cupcakes

Steps:

  • Preheat oven to 350 degrees. Line standard muffin tins with paper liners. Whisk dry ingredients in a large bowl. Cream butter and sugar with a mixer until light and fluffy. Add eggs, 1 at a time, beating after each addition.
  • Reduce speed to low. Mix mashed bananas, buttermilk, and vanilla in a bowl. Add dry ingredients to butter mixture in 3 additions, alternating with wet ingredients and ending with dry. Scrape sides of bowl. Stir pecans into batter. Divide batter among muffin cups, filling each 2/3 full.
  • Bake cupcakes until testers inserted into centers come out clean, about 20 minutes. Let cool in tins on wire racks. (Unfrosted cupcakes will keep, covered, for up to 3 days.) Once cupcakes are cool, frost tops with caramel buttercream. Frosted cupcakes will keep, covered and refrigerated, for up to 2 days. Top with banana slices before serving.

175g softened butter , plus extra for greasing
175g golden caster sugar
3 eggs
140g self-raising flour
85g ground almonds
½ tsp baking powder
100ml milk
2 small, very ripe bananas
50g pecan , chopped, plus extra
85g softened butter
100g icing sugar , sifted
1 tsp vanilla extract

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb/900g loaf tin with a long strip of baking parchment. To make the loaf cake batter, beat the butter and sugar with an electric whisk until light and fluffy. Add the bananas in a few chunks and beat in with the eggs, flour, almonds, baking powder and milk until smooth - the whisk will mash the bananas. Stir in the pecans, then scrape into the tin. Bake for 45-50 mins until golden, risen and a skewer poked in comes out clean. Cool in the tin, then lift out.
  • Beat the butter, icing sugar and vanilla. Spread on top of the cooled cake and scatter with more chopped pecans
