BANANA POPPY SEED PANCAKES WITH CARAMEL-BANANA SYRUP
Time 20m
Yield 6-8 pancakes
Number Of Ingredients 11
Steps:
- In a large bowl, combine the all-purpose baking mix and poppy seeds. Add buttermilk, egg, melted butter, vanilla, and mashed bananas. Using a fork, gently mix the ingredients until all ingredients are well combined and no pockets of flour remain. Do not overmix.
- In a nonstick skillet heated over medium heat, brush pan with butter or spray with nonstick spray. Add batter to the pan, about ⅓ cup per pancake. Cook each pancake over medium heat until the surface and edges have a somewhat "dry" appearance and the bottom surface is golden brown. (Check periodically for done-ness by lifting an edge with a spatula, but try not to fuss with them too much.) Flip pancake gently, cooking remaining side until golden brown. Repeat until all batter is used.
- While pancakes are cooking, make the Caramel-Banana Syrup. In a medium saucepan over medium heat, melt 4 tablespoons unsalted butter. Add brown sugar and water, and stir to combine. Bring to a boil over medium-high heat, stirring frequently. (Keep an eye on your pancakes too!) Once boiling, cook for a minute or two until mixture has thickened somewhat and caramelized. Once you've reached your desired consistency (for thicker syrup, just cook an extra 30 seconds or so), remove from heat and stir in vanilla and sliced bananas. Serve immediately.

CARAMEL BANANA PANCAKES
Pancakes are typically associated with unhealthy eating, but the reality is that this doesn't have to be the case. This recipe is still delightfully sweet and delicious without all the negative impact of refined sugars and heavily processed foods. Your body will absorb the nutrition and digest the deliciousness much more efficiently than recipes that contain any 'nasties'.

- Preheat the oven to 350°. Toast the hazelnuts on a pie plate for 12 minutes, until the skins blister. Transfer the nuts to a kitchen towel and rub to remove the skins. Let cool.
- Meanwhile, sprinkle 2/3 cup of the sugar in a large, deep skillet in an even layer. Cook over moderate heat without stirring until a honey-colored caramel forms, about 5 minutes; halfway through cooking, gently swirl the pan to combine the caramel and sugar. Add the banana halves cut side down and cook just until tender, about 2 minutes. Carefully turn the bananas and cook for 30 seconds. Off the heat, add the rum and swirl gently to combine. Cook over moderate heat just until the bananas are tender but not falling apart, about 1 minute longer. Using a slotted spoon, transfer the bananas to a plate.
- Add the orange juice and maple syrup to the skillet and boil until slightly thickened, 1 minute. Pour the syrup into a pitcher.
- In a food processor, combine the nuts with 1/2 cup of the flour and process until ground. Transfer the mixture to a bowl and add the remaining 1 cup of flour, the baking soda, baking powder and salt. In a small bowl, whisk the buttermilk with the egg yolks and melted butter, then whisk the mixture into the dry ingredients. In a clean bowl, beat the egg whites until soft peaks form. Gradually beat in the remaining 2 tablespoons of sugar until glossy. Fold the egg whites into the batter.
