2 cups all-purpose flour
1/4 cup brown sugar
1 1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
2 eggs
2 cups buttermilk
1/4 cup melted butter
1 banana, (mashed)
1/4 cup melted butter
1/2 cup packed light brown sugar
1/4 cup water
1/2 teaspoon vanilla
1/4 teaspoon rum extract
2 bananas, (thinly sliced)

Steps:

  • In a medium bowl, combine flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
  • In another bowl whisk together eggs, buttermilk, and 1/4 cup melted butter.
  • Add wet ingredients to dry along with banana and stir to combine.
  • Heat a griddle over medium heat. Coat with melted butter and drop batter onto griddle using about 1/3 cup per pancake. Cook for about 2 minutes per side, until golden brown. Can be kept warm in a 200 degree oven.
  • To make syrup, combine 1/4 cup melted butter, brown sugar, and water in a large skillet. Bring to a boil and continue to boil until mixture thickens slightly, about 2 minutes. Remove from heat and add sliced banana, vanilla extract, and rum extract.

Steps:

  • Microwave 2 Tbsp. butter, caramels and 1/4 cup milk in small microwaveable bowl on HIGH 2 min. or until caramels are completely melted and mixture is well blended, stirring after each minute.
  • Mix flour, sugar, baking powder and salt in large bowl; set aside. Microwave remaining butter in medium microwaveable bowl on HIGH 30 sec. or until melted. Add remaining milk and eggs; whisk until blended. Mash 1 banana. Add to egg mixture; mix well. Add to dry ingredients; stir until blended.
  • Ladle batter onto hot griddle or into hot skillet sprayed with cooking spray, using 1/4 cup batter for each pancake; cook until bubbles form on tops, then turn to brown other sides.

  • Preheat oven to 450 degrees F.
  • Place 3 tablespoons butter into a 9 inch square baking dish or a 9 inch cast iron pan and melt in oven, about 3 to 5 minutes.
  • Whisk together the eggs, milk and vanilla in a medium bowl.
  • In a large bowl, combine the flour, salt, cinnamon and sugar.

4 tablespoon(s) chopped nuts. walnuts or pecans
3 cup(s) krusteaz pancake mix. prepared as directed substituting milk for water, minus about 2 tbsp
1 - egg
2 tablespoon(s) white corn syrup or agave syrup
1/2 cup(s) water
1 pinch(es) nutmeg
1/2 teaspoon(s) cinnamon
1 cup(s) whipped cream (sugar free or fat free if desired)
2 to 4 tablespoon(s) caramel sauce

Steps:

  • Mash up 1 banana, add to pancake batter along with the egg. Hold back about 2 Tbsp of the milk so that the batter is extra thick.
  • Mash up 2 bananas and place in a non stick skillet. Cook until thick stirring constantly, add water and corn syrup. Mix well and bring to bubbling, simmering until thickened, almost like pudding. Add nutmeg and cinnamon, stir well and set aside.
  • Cook your pancakes desired size and doneness. Top with banana compote. Slice the last banana distributing evenly over each serving. Top with whipped cream, drizzle with caramel sauce and sprinkle nuts over.

1 tablespoon poppy seeds
¾ cup buttermilk
1 large egg, lightly beaten
2 tablespoons unsalted butter, melted
1 teaspoon pure vanilla extract
2 very ripe bananas, mashed with a fork
¼ cup (4 tablespoons) unsalted butter
½ cup light brown sugar
¼ cup water
2 bananas (fresh, not over-ripe), sliced ¼-inch thick

Steps:

  • In a large bowl, combine the all-purpose baking mix and poppy seeds. Add buttermilk, egg, melted butter, vanilla, and mashed bananas. Using a fork, gently mix the ingredients until all ingredients are well combined and no pockets of flour remain. Do not overmix.
  • In a nonstick skillet heated over medium heat, brush pan with butter or spray with nonstick spray. Add batter to the pan, about ⅓ cup per pancake. Cook each pancake over medium heat until the surface and edges have a somewhat "dry" appearance and the bottom surface is golden brown. (Check periodically for done-ness by lifting an edge with a spatula, but try not to fuss with them too much.) Flip pancake gently, cooking remaining side until golden brown. Repeat until all batter is used.
  • While pancakes are cooking, make the Caramel-Banana Syrup. In a medium saucepan over medium heat, melt 4 tablespoons unsalted butter. Add brown sugar and water, and stir to combine. Bring to a boil over medium-high heat, stirring frequently. (Keep an eye on your pancakes too!) Once boiling, cook for a minute or two until mixture has thickened somewhat and caramelized. Once you've reached your desired consistency (for thicker syrup, just cook an extra 30 seconds or so), remove from heat and stir in vanilla and sliced bananas. Serve immediately.

250 ml honey or 250 ml maple syrup
25 ml coconut cream
30 ml coconut oil
2 teaspoons vanilla extract
1 pinch salt

Steps:

  • Whisk eggs in a bowl.
  • Mash bananas in separate bowl.
  • Combine all ingredients, to form the pancake batter.
  • Brush a tablespoon of coconut oil onto a non-stick pan.
  • Ladle about a third of a cup of batter into the pan.
  • Cook until bubbles start to form on the surface of the batter.
  • Flip to cook the other side.
  • Top with slices of fresh banana and caramel sauce.
  • Melt coconut oil in a saucepan.
  • Whisk in honey/maple syrup, vanilla, and coconut cream.
  • Cook for about 3 minutes over medium heat stirring constantly. Consistency should easily coat the back of a spoon.
