3 medium ripe bananas
2 large eggs
1/4 cup pure maple syrup (or honey)
1 teaspoon baking soda
2 cups old-fashioned rolled oats

Steps:

  • Preheat oven to 350°F. Lightly grease 9×5-inch loaf pan with non-stick cooking spray and set aside.
  • Add all ingredients to a blender, in the order listed, and blend until smooth and well combined. Pour batter into prepared loaf pan. (Garnish the top of the batter with thinly sliced banana, if desired) Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Let loaf cool completely in loaf pan. Store bread in an airtight container on the counter for 2-3 days or in the refrigerator for up to a week.

½ cup shortening
¾ cup white sugar
2 eggs
1 cup mashed bananas
1 teaspoon vanilla extract
1 ½ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the banana and vanilla.
  • In a separate bowl, sift together flour, baking soda and salt. Beat into creamed mixture. Stir in oats and nuts. Pour into prepared pan.
  • Bake in preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

  • In a bowl, combine wet ingredients, eggs, honey, Greek yogurt, vanilla and melted butter.
  • In a separate bowl, mash the bananas and incorporate into the egg mixture.
  • In another bowl, combine together the dry ingredients, ground oats, old-fashioned oats, baking powder, baking soda and cinnamon. Pour dry ingredients into the wet ingredients, mixing together to combine. Do not over mix the batter.
  • Pour into prepared baking dish, smooth the top and bake at 350F (180C) degrees for 50 minutes.

Steps:

  • Preheat the oven to 350F and line a loaf pan with parchment paper or grease with oil
  • Mash ripe bananas in a large bowl with a potato mashed or the back of a fork
  • Whisk in the eggs, oil, maple syrup and vanilla extract
  • In a separate bowl combine oat flour, rolled oats, baking soda, baking powder, and salt

1 cup oatmeal
1/2 cup sugar
2 teaspoons baking soda
1/2 teaspoon salt

1/4 cup egg substitute or 1 egg

1 1/2 cups bananas (smashed about 3)
1 teaspoon vanilla

Steps:

  • Sift first 6 ingredients (flour through cinnamon) together in a large bowl.
  • Mix remaining ingredients in a small bowl.
  • Mix wet ingredients into dry ingredients.
  • Spray a loaf pan with cooking spray. Pour mixture into pan.
  • Bake at 350 for 40 to 45 minutes or till tests done with a cake tester or toothpick. This will rise very high. If necessary, cover the top slightly with foil if top starts to brown too fast.
  • Allow to cook in pan 10 minutes. Remove from pan and cool completely before slicing. Slices can be toasted in toaster oven or microwaved for about 20 seconds.

1 tsp baking soda
3 tbsp maple syrup (for sweeter bread)

Steps:

  • Preheat oven to 350°F. Line an 8 x 4 inch loaf pan with parchment paper.
  • Add bananas, eggs, oats and baking soda into a blender (in that order). If using maple syrup, also add it in at this time. Blend on high speed until you have a smooth batter. It is okay if you can still see the oats, but they should be ground up enough to look like coarse flour. If adding mix-ins like chocolate chips or chopped nuts, stir them into the batter.

1 1/2 cups rolled oats (plus 1 tablespoon for sprinkling on top (do not use instant oatmeal; quick oats will work in a pinch))
1 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon baking powder
½ teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 1/2 cups mashed very ripe bananas (about 4 medium bananas)
2/3 cup honey or pure maple syrup
4 tablespoons unsalted butter (melted)
1/4 cup milk
3 tablespoons nonfat plain Greek yogurt
2 large eggs
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Spread 1 1/2 cups oats in a single layer on a rimmed baking sheet. Place in the oven and toast for 8 to 10 minutes, until very light golden and fragrant, stirring once halfway through. Set aside to cool. Line a 9 x 5-inch loaf pan with parchment paper so that two sides overhang like handles. Lightly mist with nonstick spray.

  • Bake for 30 minutes, then loosely cover the pan with foil, making sure that the foil shields both ends of the pan (because the bread is sweetened with honey, it will caramelize and become dark at the corners). Continue baking for 35 to 45 additional minutes (65 to 75 minutes total) or until a small, thin knife inserted in the center of the loaf comes out without any wet batter clinging to it. Repeat the test once or twice. An even easier way to tell is to use an instant-read thermometer. When the bread reaches between 200 to 210 degrees F at the center, it's done.
  • Place the pan on a wire rack, and let the bread cool in the pan for 1 hour. Using the parchment paper handles, lift the bread and set it out on the rack to finish cooling completely. Slice and enjoy!

2 cups oat flour (gluten free, if needed)
2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup oil (any neutral flavored oil)
2 large eggs (or flax eggs * See notes)
1/2 cup sugar (brown, coconut, or white)
3 large bananas (mashed)
1 teaspoon vanilla extract
1/2 cup walnuts (chopped)

Steps:

  • Preheat the oven to 180C/350F. Grease and line a loaf pan and set aside.
  • In a small bowl, add your oat flour, baking powder, and salt, and mix well. In a mixing bowl, add your oil, eggs, sugar, mashed bananas, and vanilla extract, and whisk until combined. Add the dry ingredients and mix until just combined. Fold through the walnuts.
  • Transfer the batter into the lined loaf pan. Bake the banana bread for 35-40 minutes, or until a skewer comes out clean.
  • Remove the bread from the oven and let it cool completely, before removing it from the pan and slicing it up.
