An easy, oatmeal-based, drop cookie with the addictive taste of banana nut bread.

1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon banana extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
3 cups rolled oats
2 cups chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cream butter or margarine with mixer. Blend in whole eggs, sugar, and extract. Add flour, baking soda, and salt. When the ingredients are thoroughly mixed, add oats and pecans. Mix on lower speed until consistent.
  • Drop pieces of the dough using an ice cream scoop onto an ungreased cookie tray roughly 3 to 4 inches apart.
  • Bake 8 to 10 minutes. Eight minutes would yield crispy cookies with a chewy, slightly doughy center. For harder, crispier cookies, bake longer. Cool on wire rack.

1/2 cup unsalted butter, room temperature
1 cup sugar
1 egg, room temperature
1 cup mashed banana (about 2 1/2 large bananas)
1 teaspoon baking soda
2 cups flour
1 pinch salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup chopped nuts (pick your favorite or even add chocolate chips)

Steps:

  • Preheat the oven to 350°F Cream the butter and sugar together until light and fluffy. Add the egg and continue to beat until the mixture is light and fluffy.
  • In a bowl, mix the mashed bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.
  • Mix the banana mixture into the butter mixture. Mix together the flour, salt, and spices and sift into the butter and banana mixture and mix until just combined.
  • Fold into the batter the pecans or chocolate chips if using. Drop in dollops onto parchment paper-lined baking sheet. Bake for 11-13 minutes or until nicely golden brown. Let cool on wire racks.
  • Makes about 30 cookies.

Here's a treat for the vegans in your life. Adapted from the cookbook "Vegan Cookies Invade Your Cookie Jar," by Isa Chandra Moskowitz and Terry Hope Romero, these cookies, which are chunky with chocolate chips, walnuts and rolled oats, are best when they are completely cooled, so their exteriors can crisp up. They do not taste strongly of banana - it's just a hint.

Nonstick cooking oil spray
1 very ripe medium banana
1/3 cup canola oil
2/3 cup sugar
1 teaspoon vanilla extract
3/4 cup plus 2 tablespoons all-purpose flour, or as needed
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
2 cups quick-cooking (not instant) oatmeal or rolled oats
1/2 cup chopped walnuts
1/2 cup chocolate chips (vegan, if desired)

Steps:

  • Preheat oven to 350 degrees. Lightly spray two baking sheets with oil. In a mixing bowl, mash banana well. Add oil, sugar and vanilla, and mix with a strong fork. Add flour, baking soda, salt and cinnamon, and mix until just moistened.
  • Add oatmeal, walnuts and chocolate chips. Using your hands or a sturdy spoon, mix well, making sure oats are well moistened. (If dough is very slippery, add one or two extra tablespoons flour.)
  • Using clean, wet hands, re-wetting as needed, roll dough into balls slightly smaller than a golf ball, about 1 1/3 inches in diameter. Flatten slightly and place 2 inches apart on a baking sheet. Bake until lightly browned, 10 to 12 minutes. Remove from heat and allow to cool for 2 minutes, then transfer to a rack to cool completely. Store in an airtight container.

This is really easy. I came up with it last minute for a party. It was a huge hit! If you let the finished product sit overnight the wafers will become soft and taste homemade themselfs!!

88 vanilla wafer cookies
8 ounces cream cheese (softened)
1/3 cup powdered sugar
1/2 teaspoon banana extract
1/2 teaspoon vanilla extract

Steps:

  • Combine cream cheese, powerderd sugar, and flavorings.
  • Spread on each Vanilla Wafer and top with another Wafer to make a sandwich type cookie.
  • You may serve right away as crunchy or let sit a few hours or even overnight to soften. I prefer the soft way.

I got this recipe from the October 2004 edition of Midwest Living. The picture of these cookies look absolutely delicious! They had used a football shaped cookie cutter for football season (apparently, it can be found at www.tailgatestotouchdowns.com) but you can use whatever pattern you'd like!

1 (8 ounce) package banana muffin, mix (use between a 7 and 8.1 ounce banana-nut muffin mix package)
3/4 cup all-purpose flour
1/4 cup packed brown sugar
1/2 cup butter, melted and cooled slightly
1 -2 tablespoon milk (optional)
nonstick cooking spray
1 1/2 cups sifted powdered sugar
1/2 cup butter, softened
1 teaspoon vanilla
1/2 cup white chocolate chips or 1/2 cup semisweet chocolate piece
2 teaspoons shortening

Steps:

  • For cookies: In a large bowl, stir together muffin mix, flour and brown sugar.
  • Add the melted and slightly cooled butter all at once.
  • Using a fork, stir just till a soft dough forms (if necessary, add enough milk to form dough).
  • Turn dough out onto a lightly floured surface.
  • Pat or lightly roll till 1/8 to 1/4 inch thick.
  • Cut out cookies using a cookie cutter.
  • Place two inches apart of cookie sheets, lightly coated with nonstick cooking spray.
  • Bake in a 350 degree oven for 9 to 10 minutes or till cookies begin to brown.
  • Remove cookies to a wire rack to cool.
  • For butter cream filling: In a medium bowl, beat powdered sugar, the 1/2 cup softened butter and vanilla with an electric mixer till creamy.
  • Spread a scant tablespoon of filling on the bottom of 1 cookie, put together with another cookie, bottom sides together, to make a cookie sandwich.
  • Repeat with the remaining cookies and filling.
  • Place white or chocolate pieces and shortening in a small microwave-safe bowl and microwave on 50% power (medium) for 1 to 2 minutes or till pieces are melted and smooth.
  • Cool slightly (about 5 minutes).
  • Transfer to a heavy resealable plastic bag.
  • Cut off tip of one corner of bag.
  • Pipe melted chocolate onto cookies to resemble laces on footballs, or whatever design you'd like based on what shape you made the cookies.
  • Makes 12 (2 1/2 inch) sandwich cookies.
