Banana-Nut Corn Bread image

A boxed corn bread mix gets a tasty treatment from Janice France of Depauw, Indiana when dressed up with bananas and chopped walnuts. The moist golden loaves are a great addition to a brunch buffet or bake sale.

Yield 2 loaves (16 slices each).

Number Of Ingredients 4

2 packages (8-1/2 ounces each) corn bread/muffin mix
1 cup mashed ripe bananas (about 2 medium)
1 cup chopped walnuts
1 cup 2% milk

Steps:

  • In a large bowl, combine all ingredients just until blended. Spoon into two greased 8x4-in. loaf pans. , Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Having vegan friends in college forced me to find some recipes that are friendly to their choice if I wanted to entertain. This recipe is delicious whether or not you are vegan. I've made it with almond, rice, soy, and regular milk and they are all very similar to identical in flavor and consistency.

2 cups all-purpose flour
2 cups cornmeal
2 cups milk
2 bananas
1 ⅓ cups white sugar
⅔ cup vegetable oil
2 teaspoons baking powder
2 teaspoons salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine flour, cornmeal, milk, bananas, sugar, vegetable oil, baking powder, and salt together in a bowl until batter is smooth; pour into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes.

Yield 1 (9×5-Inch) Loaf

Number Of Ingredients 17

1 cup medium-grind cornmeal*
¾ cup firmly packed dark brown sugar
⅔ cup all-purpose flour
1 teaspoon ground cinnamon
¾ teaspoon baking soda
½ teaspoon kosher salt
1½ cups mashed very ripe banana (about 4 medium bananas)
⅓ cup unsalted butter, melted
¼ cup sour cream, room temperature
2 large eggs, room temperature
1 teaspoon vanilla extract
½ cup chopped pecans
Pecan Cornmeal Streusel (recipe follows)
½ cup medium-grind cornmeal*
¼ cup firmly packed dark brown sugar
¼ cup chopped pecans
2 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 325°. Line a 9×5-inch loaf pan with parchment paper, letting excess extend over sides of pan.
  • In a medium bowl, whisk together cornmeal, brown sugar, flour, cinnamon, baking soda, and salt. In a large bowl, whisk together mashed banana, melted butter, sour cream, eggs, and vanilla. Fold cornmeal mixture into banana mixture just until combined. Fold in pecans. Spoon batter into prepared pan. Top with Pecan Cornmeal Streusel.
  • Bake for 30 minutes. Cover with foil, and bake until a wooden pick inserted in center comes out clean, 35 to 40 minutes more. Let cool in pan for 10 minutes. Using excess parchment as handles, remove from pan, and let cool completely on a wire rack.
  • In a medium bowl, stir together cornmeal, brown sugar, and pecans. Add melted butter, and stir with a fork until combined. Freeze until ready to use.

MAPLE CORNMEAL BANANA BREAD

1 cup oat flour
1 cup cornmeal
1/3 cup maple syrup
3 very ripe bananas (mashed)
1 tsp baking soda
1 tsp baking powder
2 tbsps tapioca starch (can sub cornstarch)
2 tbsps non-dairy milk
Optional: chopped pecans for sprinkling on top.

Steps:

  • Preheat the oven to 325F.
  • Combine all the ingredients in a large mixing bowl. Mix.
  • Pour into a loaf pan that is lightly oiled or lined with parchment paper.
  • Bake for 45-50 mins at 325F.
  • Let it cool before removing from the pan, slicing, and eating.

1 c mashed bananas, ripe (make sure they are ripe)
1 c chopped walnuts
1 c milk

Steps:

  • 1. In bowl, combine all ingredients just until blended. Spoon into two greased 8 x 4 x 2" loaf pans. Bake at 350 degrees for 35 to 40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Cool completely. Yield: two loaves. Enjoy! Doesn't get much easier than this!!
  • 2. I buy very ripe bananas on sale at the store and freeze them. I always have nuts in the freezer and buy the cornbread mixes when they are on sale and freeze them. You then have all the ingredients on hand and this is so easy to put together!
