This is a great banana muffin recipe! It has little sugar and almost no fat if you use fat free sour cream. A big hit with everyone!

1 cup all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup mashed ripe banana
¼ cup white sugar
¼ cup sour cream
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
  • Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together banana, sugar, egg and vanilla. Stir in the sour cream. Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.
  • Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Let cool before serving. For best flavor, place in an airtight container or bag overnight.

1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg
1/3 cup butter, melted
1 tablespoon vanilla extract
4 ounces cream cheese, softened
1/4 cup sugar
1 egg
1/3 cup light brown sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1 tablespoon butter, melted

Steps:

  • Preheat oven to 375 degrees. Grease muffin cups or line with muffin liners.
  • Combine 1 1/2 cups all-purpose flour, baking soda, baking powder and salt.
  • In a separate bowl, mash the bananas and then beat together the bananas, sugar, egg, melted butter and vanilla extract.
  • Combine banana mixture with the flour mixture until just moistened.
  • Spoon batter into prepared muffin cups (leave a little batter to top the cream cheese filling).
  • Create the cream cheese filling by mixing together all three of the ingredients. Pour a tablespoonful onto the batter in the muffin cups. Top the cream cheese with the remaining muffin batter.
  • Create the topping: use a fork and mix together the brown sugar, 1/4 cup all-purpose flour, cinnamon and butter until crumbly. Sprinkle mixture over the batter.
  • Bake for 18 to 20 minutes or until a toothpick inserted into the center comes out clean.

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 cups sugar
1 cup vegetable oil
3 large eggs
1 tablespoon vanilla extract
4 ripe bananas, peeled and coarsely mashed
3 ounces cream cheese, room temperature
6 tablespoons (3/4 stick) unsalted butter, room temperature
1/3 cup mascarpone cheese, room temperature
3 tablespoons honey
1/2 cup chopped walnuts, toasted

Steps:

  • Line 18 muffin cups with paper liners. Preheat the oven to 325 degrees F.
  • Whisk the flour, baking soda, salt, baking powder, cinnamon, and nutmeg in a medium bowl to blend. Beat the sugar, oil, eggs, and vanilla in a large bowl to blend. Stir in the banana. Add the dry ingredients and stir just until blended.
  • Divide the batter among the prepared muffin cups. Bake the muffins on the middle rack until the tops are golden brown and a tester inserted into the center comes out with no crumbs attached, about 25 minutes. Transfer the muffins to a rack and cool slightly. The muffins may be eaten warm or cooled completely and frosted.
  • To frost the cupcakes: Using an electric mixer, beat the cream cheese and butter in a large bowl until light and fluffy. Beat in the mascarpone cheese and then beat in the honey. Spread the frosting over the muffins. Sprinkle with the walnuts.

1 teaspoon cinnamon
3 ounces cream cheese, softened
1/4 cup butter, softened
2/3 cup sugar
1 egg
1/2 cup mashed banana

3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 salt
2 tablespoons caramel topping
1 medium banana, very thinly sliced
1 tablespoon butter, melted
caramel topping, for later

Steps:

  • Preheat oven to 375. Grease muffin tins (12 holer).
  • Mix small bowl ingredients; set aside.
  • Mix cream cheese, butter & sugar until well-blended; add egg, beat, then banana & vanilla until well combined; set aside.
  • Combine dry ingredients; add to cream-cheese mixture until JUST combined.
  • Stir in 1/4-cup of filling ingredients; spoon HALF of batter into muffin tin cups (1 rounded tablespoon); drizzle 1/2 tsp caramel topping (from Other Stuff list) into each muffin cup; top with more batter.
  • Finish with 2 slices of banana, a drizzle of melted butter and a sprinkle of the remaining pecan mixture.
  • Bake for 18-20 minutes; cool for 5 minutes (well, try to wait that long!); remove from pan.
  • Serve warm, drizzled with more caramel topping.

1/4 cup oil
2 eggs
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 375 degrees. Grease a 12-cup standard muffin pan.
  • In a small bowl, beat together cream cheese, sugar, and egg. Put bowl in refrigerator while you make the muffin batter.
  • In a large bowl, whisk together flour, baking powder and soda, salt, and sugar; set aside.
  • In a medium bowl, whisk together bananas, buttermilk, oil, eggs, and vanilla.
  • Pour wet ingredients into the large bowl filled with flour mixture then stir with wooden spoon just until the mixture is combined.
  • Spoon enough batter into muffins cups so that they are just under halfway full. Add one spoonful of cream cheese mixture into each cup, then top with remaining muffin batter. Muffin cups will end up being almost completely full.
  • Bake for 20-25 minutes at 375 degrees. Check after 20 minutes, muffins are done when a toothpick inserted into center comes out clean.

1-1/3 cups mashed fully ripe bananas (about 3)
1/2 cup KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
1-1/2 cups flour
1-1/2 cups sugar, divided
1 tsp. baking soda
1/2 cup miniature semi-sweet chocolate chips
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup creamy peanut butter

Steps:

  • Heat oven to 350ºF.
  • Whisk 1 egg, bananas and mayo in large bowl until blended. Combine flour, 1 cup sugar and baking soda. Add to banana mixture; stir just until moistened. Stir in chocolate chips.
  • Mix cream cheese, peanut butter, remaining sugar and egg until blended.
  • Spoon 1 Tbsp. banana mixture into each of 24 muffin pan cups sprayed with cooking spray. Top with cream cheese mixture, adding about 1 Tbsp. cream cheese mixture to each cup. Cover with remaining banana mixture.
