2 cups mashed ripe bananas (about 5 medium)
1-1/2 cups sugar
3 large eggs, room temperature
1/2 cup unsweetened applesauce
1/4 cup canola oil
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup semisweet chocolate chunks
FROSTING:
4 ounces reduced-fat cream cheese
1/4 cup creamy peanut butter
3 tablespoons butter, softened
1 to 1-1/4 cups confectioners' sugar
Chopped salted peanuts, optional

Steps:

  • Preheat oven to 350°. Line 24 muffin cups with paper liners., Beat first five ingredients until well blended. In another bowl, whisk together flour, baking soda, baking powder and salt; gradually beat into banana mixture. Fold in chocolate chunks., Fill prepared cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool in pans 10 minutes before removing to wire racks to cool completely., For frosting, beat cream cheese, peanut butter and butter until smooth. Gradually beat in enough confectioners' sugar to reach desired consistency. Spread over cupcakes. If desired, sprinkle with peanuts. Refrigerate leftovers.

1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup sugar
3 ripe bananas, mashed
2 eggs
1 teaspoon vanilla
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1 cup chocolate chips
1/2 cup chopped walnuts
1/2 teaspoon cinnamon
2 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees.
  • Beat together butter and both sugars until light and fluffy.
  • Beat in bananas, then eggs, one at a time and beat well after each addition.
  • Add vanilla.
  • Sift together flour, baking powder, soda and salt and add alternately with buttermilk to mixture.
  • Beat just until blended.
  • Stir in chocolate chips.
  • Divide batter evenly among 24 paper lined muffin cups.
  • In a small bowl, combine walnuts, cinnamon and 2 T brown sugar and sprinkle over tops of cupcakes.
  • Bake for 20 to 22 minutes or until tester comes out clean.
  • Let cool in pan for 5 minutes, then remove to a wire rack to cool completely.

1 2/3 cups white whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup mashed banana, about 2 large
1/3 cup buttermilk
1 teaspoon vanilla extract
1/2 cup canola oil
1 cup sugar
2 large eggs
2/3 cup chocolate chips (mini chips ideal)
1/2 cup heavy cream
2 tablespoons light corn syrup
1 1/2 cups chocolate chips
18 gingersnap cookies
18 miniature Oreo cookies
1 (4 1/4 ounce) package white decorating icing
36 miniature M&M's chocolate candies, brown color

Steps:

  • Preheat oven to 350 degrees F. Line 18 muffin cups. Combine flour, baking powder, baking soda, and salt in a bowl. In another bowl, blend bananas, buttermilk, and vanilla. Beat in oil and sugar. Add eggs one at a time, beating well after each egg. Alternately add flour and banana mixtures, ending with the flour. Stir in chocolate chips.
  • Fill cups two-thirds full. Bake 15 to 20 minutes. Let cool.
  • To Decorate: Heat cream and corn syrup in a pan until mixture begins to boil. Remove from heat; add chocolate chips. Cover and let stand 5 minutes. Stir until smooth. Glaze cupcakes with chocolate. Spoon extra into a plastic bag and refrigerate.
  • Cut gingersnaps to make a mouth. For ears, separate Oreos and remove filling. Pipe on white frosting for eyes and top with M&M's. Snip a small corner from bag of chocolate; pipe on hair and nostrils.

Banana, walnut, and chocolate are always an amazing combination of ingredients, no matter what the delivery system, but it really doesn't get any better than in this ganache-frosted cupcake. A close second would be a chocolate-dipped frozen banana, rolled in walnuts, which is also a great treat, although much more awkward to eat in public. Feel free to omit the frosting and just enjoy these as muffins.

1 teaspoon baking soda
1 teaspoon kosher salt

1 cup very hot, but not boiling cream

  • Preheat oven to 350 degrees F (175 degrees C) and line a 12-cup muffin tin with liners.
  • Whisk flour, baking powder, baking soda, and salt together in a bowl.
  • Mash bananas with milk and vanilla extract until smooth.
  • Mix butter and sugar together with a spatula until creamy. Whisk in eggs, 1 at a time, then whisk in the banana mixture. Add walnuts, chocolate, and the flour mixture. Mix batter with a spatula until no dry spots remain.
  • Fill muffin cups to the top with batter, then distribute excess batter as needed. Tap pan against the counter to expel any air bubbles.
  • Bake in the preheated oven until tops are lightly browned, about 25 minutes. Let cupcakes cool to room temperature, at least 20 minutes.
  • Pour hot cream over chocolate chips in a bowl. Let sit for a few minutes, then whisk, increasing speed gradually, until color is uniform. Spread ganache over the cooled cupcakes and garnish with banana chips. Refrigerate to firm up the frosting, if desired.

250g caster sugar
2 eggs, lightly beaten
1 teaspoon vanilla extract
250g plain flour
2 teaspoons baking powder
4 ripe bananas, mashed
175g good dark chocolate (70% cocoa solids) btoken in small pieces

600g chocolate buttercream icing

Steps:

  • Preheat the oven to 160°C(fan)/180°C/350°F/gas mark 4 and line a 12 hole muffin tin with the appropriate size cupcake cases.
  • In a large mixing bowl cream the butter and sugar until the mixture is pale and smooth. Add the eggs and vanilla and beat together. Add in the flour and baking powder and beat again until all well combined. Stir in the mashed bananas and chocolate pieces using a wooden spoon.
  • Carefully spoon the mixture into the cupcake cases, filling them to about 2/3 full. Bake in the oven for about 25 minutes. To check if they are cooked insert a skewer into the centre of one of the cakes and it should come out clean.
  • Remove from the oven and leave them in their tins for 10 minutes then take them out and place to cool on a wire rack.
  • Once completely cool, ice with the chocolate buttercream icing and sprinkle on some chopped walnuts. Alternatively, serve with no icing for a breakfast treat.

Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Add the eggs, yogurt, and vanilla, then beat on medium-high speed until combined. Scrape down the sides and up the bottom of the bowl as needed. Beat in the mashed banana. With the mixer on low speed, add the dry ingredients until just incorporated. With the mixer still running on low, slowly pour in the buttermilk until combined. Do not overmix. You may need to whisk it all by hand to make sure there are no flour pockets at the bottom of the bowl.
  • Pour/spoon the batter into the liners – fill only 2/3 full to avoid spilling over the sides. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. For around 30 mini cupcakes, bake for about 11-13 minutes, same oven temperature. Allow the cupcakes to cool completely before frosting.
