Steps:
- For the caramelized onions: Heat the oil in a skillet over medium heat. Add the onions and toss to coat with the oil. Cover and slowly cook, stirring occasionally, until the onions are golden, about 10 minutes. Season with salt and pepper.
- For the matzo brei: Heat the oil in a saute pan over medium heat. Add the salami and fry for 3 minutes. Soak the matzo sheets in water for 15 seconds, crumble them with your fingers and add them to the salami. Add the caramelized onions and toss with the salami and matzo. Cook for an additional 3 minutes. Add the beaten eggs and cook until the eggs are cooked through, about 5 minutes.
- Plate with a side of maple syrup if desired.
CREAMY BANANA & PEACH MATZO BRIE BAKE

Steps:
- Spray a 9x13-inch baking dish with cooking spray. Place two of the matzo sheets in a single layer in the prepared dish. (Break up some of the sheets if needed to cover the entire surface.) Scatter half each of the peach chunks and banana slices evenly on top of the matzo. Scatter 1/4 cup brown sugar and 1/4 teaspoon cinnamon on top. Repeat this layer, using the remaining matzo, peaches and bananas, brown sugar and cinnamon. Set aside
- In a large bowl, whisk the cream cheese with one egg until the mixture is smooth. Add remaining eggs one at a time, whisking to incorporate each one completely before the next one is added. Pour in milk, lemon peel and vanilla extract and whisk the ingredients to incorporate them completely. Pour the egg mixture over the matzo and seasoned peaches and bananas. Refrigerate for at least 3 hours.
- Preheat the oven to 350ºF. Bake the matzo brie for about 45 minutes or until puffed and golden brown.
- To serve, scoop portions onto dessert plates and top with a drizzle of honey or maple syrup.

- In a mixing bowl, break the matzo into 1-inch pieces. Bring the water to a boil and pour over the matzos. Quickly toss the matzo, then drain off any excess. In a bowl, beat the eggs with a fork. Mix the eggs, salt and pepper into the matzo. Over high heat, heat the butter and oil in a large saute pan. Add the matzo and fry until crisp. Flip over to fry the other side, breaking into pieces as it cooks. Serve with Maple syrup, or preserves.

- Under cool running water, rinse matzo sheets until they are quite wet. Set it aside and let sit to soften while you prepare the pan.
- Place a large, preferably nonstick skillet over medium-high heat and add butter. Once it melts and the foam subsides, break matzo sheets into bite-size pieces and add to pan. Sauté matzo in butter until it browns all over, about 2 minutes.
- Add eggs, salt and pepper (if you're making the dish savory) to pan and scramble the mixture until it is just set but still light and fluffy, about 1 minute. Sprinkle with sugar (if you're making it sweet) and toss well.
- Serve matzo brei sprinkled with salt and topped with chives (savory), or with salt, additional sugar and maple syrup (sweet).

- Soak matzos in cold water for 5 minutes. Drain in a colander. Mash banana with maple syrup using a fork. Whisk in oil, egg, and salt. Gently stir in matzos. Heat 1 tablespoon oil in a medium skillet over medium heat. Spread matzo mixture evenly in skillet, pressing gently. Cook until underside is golden, about 4 minutes. Flip using a spatula (mixture will break up). Cook until underside is golden, about 5 minutes. Transfer to plates. Top with banana slices, and drizzle with maple syrup.

- Break each matzo square into about 8 pieces; place in a medium bowl. Add enough boiling water to cover, and soak until moistened, 2 or 3 minutes; drain. Squeeze well with hands to remove excess water.
- In a medium bowl, beat eggs with nutmeg and 1/2 teaspoon salt; add softened matzo, and mix.
- Heat 1 tablespoon butter in an 8-inch nonstick skillet over medium heat, swirling to coat; add matzo mixture, and press in gently. Cook until browned on underside, 4 to 6 minutes; carefully invert cake onto a plate. Heat remaining tablespoon butter in skillet, and slide cake back into skillet. Cook until other side is browned, 4 to 6 minutes more.
- Turn cake out of skillet, and cut into wedges. Serve hot.

- Coarsely crumble matzo crackers into a fine mesh sieve set over a large bowl; reserve crumbs in bowl. Place sieve under cold running water until matzo is softened, about 15 seconds; drain.
