BANANA CAKE WITH CHOCOLATE FROSTING
I always requested banana cake with fudge frosting for my birthday. Mom's recipe is attached to my fridge-and my heart. It's funny how many memories live on in a stained handwritten recipe card. On a more practical note: It's important to make sure the whipped cream cheese is truly at room temperature before you use it. - Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla. Combine flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Fold in 3/4 cup pistachios., Transfer to two greased and floured 8-in. round baking pans. Bake 45-55 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a large bowl, beat cream cheese and butter until smooth. Add cocoa; mix until blended. Add confectioners' sugar and vanilla; beat until creamy., Place one cake layer on a serving plate; spread top with 1 cup frosting. Top with remaining cake. Spread top and sides with 2 cups frosting. Press pistachios into sides of cake if desired., Cut a small hole in the corner of a large pastry or plastic bag; insert #127 petal pastry tip. Fill the bag with remaining frosting. Pipe concentric circles of frosting over top of cake. Refrigerate for at least 1 hour or until frosting is set.

- Preheat oven to 350. Grease and flour two 9 inch round cake pans.
- Combine cake mix, water, eggs and oil in large bowl. Beat at low speed with electric mixer until moistened. Beat at medium speed 2 minutes. Stir in bananas.
- Pour into prepared pans. Bake 28 to 31 minutes or until toothpick inserted into centers comes out clean. Cool in pans 15 mins. Remove from pans; cool completely. Frost
- Frosting-Place the butter, cocoa powder, and chocolate syrup in a large mixing bowl. Blend with an electric mixer on low speed until just combined, 30 seconds. Stop the mixer and add confectioners sugar, milk, and vanilla. Blend with the mixer on low speed until the sugar is incorporated, 1 minute. Increase the speed to medium and beat until fluffy, 1 minute more. Frost your layers and sides and serve.

- In a small bowl, beat shortening and sugar until crumbly, about 2 minutes. Beat in egg yolks. Beat in banana on low speed until blended. Combine the flour, baking powder, salt and baking soda; add to banana mixture alternately with buttermilk, beating well after each addition. In a small bowl, beat egg whites until soft peaks form; fold into batter., Coat two 6-in. round baking pans with cooking spray and dust with flour. Add batter. Bake at 375° for 23-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a small bowl, beat shortening and butter until smooth. Add 1/2 cup confectioners' sugar, salt and extract; mix well. Stir in banana. Beat in enough of the remaining confectioners' sugar to achieve desired spreading consistency. - Cream together butter, sugar, eggs and vanilla on high speed of electric mixer for 1 1/2 minutes.
- Add buttermilk.
- Mix together flour, baking powder, baking soda and salt.
- Add flour mixture alternately with mashed banana.
- Beat only enough to blend, about 2 minutes.
- Pour battered into 2 greased and floured 9 inch round cake pans and bake in preheated 350 degree (Fahrenheit) oven for 30 to 35 minutes.
- Cool cake then prepare frosting.
- Mix together powdered sugar, cocoa and salt.
- Add gradually to butter, beating with electric mixer, adding just enough milk so that mixture is not stiff (If you add too much it will get too thin when you continue beating).
- After all ingredients are blended, mix on high speed of your mixer for 3 to 4 minutes, carefully adding small amounts of milk if too thick.
- Fill and frost cooled layers.

- Cake: Preheat oven to 350 degree. Grease and flour a 9x13 pan. Cream margarine and sugar, add eggs and beat until fluffy. Add bananas. Mix dry ingredients in a separate bowl. Add buttermilk, then add dry ingredients. Beat on low speed until combined, then on high speed for 3 minutes. Pour into pan. Bake 45 - 50 minutes. Cool.
- Frosting: While cake is baking, mix sugar and cocoa in 2-qt saucepan. Stir in milk, margarine and corn syrup. Heat to boiling, stirring often. Boil for 3 minutes, stirring often. Cool. Stir in vanilla and sugar. Frost cake.

- Preheat oven to 350°F.
- Coat 2-(8 inch) round cake pans with cooking spray; line bottoms with wax paper.
- Coat wax paper with cooking spray.
- Lightly spoon flour into dry measuring cups; level with a knife.
- Combine flour, baking powder, baking soda, and salt in a small mixing bowl, stirring well with a whisk.
- Place granulated sugar, oil, vanilla extract, egg whites, and egg in a large bowl; beat with a mixer at medium speed until well blended.

- Place 1 cake layer on a plate; spread with 1/2 cup icing, and top with other cake layer.
- Spread remaining icing over top and sides of cake.
- Sprinkle pecans and coconut or/& chocolate curls over top of cake; all of these are optional.
- Cake is lovely as is!
- Store cake loosley covered in refrigerator.

Made this for a family gathering. It is delicious! The combination of chocolate and banana is great! It also makes a nice cake since it is two colors when you slice it! - Preheat oven to 350° F (180° C and spray 2 8-inch round cake pans with vegetable spray.
- Banana Cake: Combine margarine and sugar in large bowl or food processor; mix until smooth. Add egg, banana and vanilla; mix until well-combined. BANANA CAKE WITH BANANA FROSTING

- For cake, preheat oven to 350°F.
- Measure flour, soda, salt, baking powder and sugar into mixing bowl.
- Add softened butter and mix at medium speed of electric mixer until the mixture is a "mealy" consistency.
- Add buttermilk and mashed banana gradually and mix for four minutes; your mixture should be light and fluffy.
- Scrape the mixture from the sides of the bowl and add eggs in two additions, beating after each addition of egg.
- Pour into two greased and floured 9 inch cake pans and bake at 350° for about 25 minutes (cake should be golden brown).
- Remove layers from pan and cool completely, then chill layers before you frost the cake (the icing is thin and it WILL RUN if cake is not cold!).
- For frosting, cream butter and sugar together and slowly add the cream.
- Add the mashed banana gradually, continuing to beat as you add it.
- Add corn syrup and mix enough to blend well (corn syrup will help the thin frosting to "set").
- Frost cake and store in refrigerator.
BANANA SYRUP CAKE
Here is a recipe for a banana cake to die for (dont be concered too much on the long list of steps/ing...it's well worth the effort) It can be served as a dessert drizzled with golden syrup and cream or as a cake to have with coffee. I love it hot with stack of fresh cream!

- Preheat oven to 180 degrees Celsius.
- Melt together butter and brown sugar over low heat, cook for a few minutes, stirring occasionally.
- Pour into greased cake tin and swirl around to cover bottom.
- Slice firm bananas into rings and place into bottom of cake tin in one layer.
- Sift together flour, cinnamon and nutmeg put aside.
- Mash very ripe banana and stir in sour cream, put aside.
- Cream together butter and caster sugar, add vanilla, add eggs, one at a time, mixing well between each.

- Remove from oven and stand for a couple of minutes before inverting onto serving plate.
- Wait about 30 seconds before removing tin.
- Drizzle top of cake with golden syrup, and serve warm with whipped cream.
