Steps:
- Puree the bananas in a blender.
- Melt 1 tablespoon of coconut oil in a non-stick saute pan over medium heat and then add the banana puree.
- Stir continuously for about 20 minutes.
- Add 1 tablespoon of coconut oil, stir until well combined, then add the final tablespoon of coconut oil and continue to stir for another 10 minutes, or until the banana mixture turns dark and sticky.
- Spoon the banana mixture onto a greased plate or in a parchment-lined loaf pan and allow it to cool in the fridge.
- Cut the fudge while it's cold, then allow it to come to room temperature before serving.

- In a large mixing bowl, add your mashed bananas and set aside.
- In a microwave safe bowl or stovetop, melt your coconut oil with your nut butter. Pour into the mixing bowl and stir through the mashed banana until fully incorporated.
- Divide mixture amongst muffin tins and refrigerate or freeze until firm.v

BANANA ICE SUNDAES WITH FUDGE SAUCE

- Slice two bananas into a blender or food processor and blitz with the Yofu and sugar for 30 seconds or until smooth.
- Churn in an ice cream maker until it begins to thicken - 10-15 minutes. Or freeze in a shallow container, whisking every 1-2 hours to break up ice crystals.
- To make the sauce, melt the spread, add the sugar and syrup and cook gently until the sugar dissolves. Stir in the Soya Dream and boil for 2-3 minutes to make a sticky sauce. Remove from the heat and allow to cool.
- To serve, layer the banana ice in four glasses with slices of the remaining bananas and sauce, then top with drizzles of sauce and a few pecans.

- Heat the oven to 160C/fan 140C/gas 3. Butter and line the base of a 900g loaf tin. Mix together the bananas, eggs, butter, toffee yogurt and sugar, until well combined. Sift the flour and baking powder together and fold into the mixture, then fold in three-quarters of the pecan nuts and half the toffees.
- Spoon the mixture into the tin and level the top. Sprinkle on the remaining nuts and toffees. Bake for 50-55 mins until the loaf is risen and feels springy. Cool in the tin, then remove and peel off the lining. Will keep, wrapped, in an airtight container, for up to 3-4 days.

- Preheat oven to 350. Grease bottom of an 8" square baking pan.
- Mix all ingredients EXCEPT the butter and the chocolate chips on low just until blended.
- Melt butter & chocolate, stirring often, in a saucepan on stove over low heat until smooth.
- Add melted mixture to other mixture and beat until well blended.
- Pour into prepared pan and bake at 350 for about 3o minutes or until toothpick inserted in the center comes out clean.
- Cool on wire rack.

BANANA CHOCOLATE FUDGE LAYER CAKE (LIGHT)
Made this for a family gathering. It is delicious! The combination of chocolate and banana is great! It also makes a nice cake since it is two colors when you slice it! I also added half a banana for decoration on the cake. Can't wait to bake it again! I adapted a bit this recipe from a R. Reisman recipe.

- Preheat oven to 350° F (180° C and spray 2 8-inch round cake pans with vegetable spray.
- Banana Cake: Combine margarine and sugar in large bowl or food processor; mix until smooth. Add egg, banana and vanilla; mix until well-combined. In small bowl, stir together flour and baking soda; add flour mixture to banana mixture alternately with yogurt and mix just until combined. Pour into prepared pan and bake for 15 to 20 minutes or until cake tester inserted in the center comes out clean.
- Chocolate Fudge Cake: Combine margarine, sugar and egg in large bowl; mix until well combined (mixture may look curdled). In small bowl, stir together cocoa, flour, baking soda and baking powder; add to the batter alternately with the yogurt. Mix just until combined. Pour into prepared pan and bake for 15 to 20 minutes or until cake tester inserted in the center comes out clean.
- Frosting: Put ricotta cheese, icing sugar and cocoa in food processor; process until smooth, or beat with electric mixer.
- Assembly: Put banana cake on serving plate; top with one-quarter of the frosting. Place banana slices over top. Put chocolate cake on top and use remaining frosting to frost sides and top.

- Cake: Preheat oven to 350 degree. Grease and flour a 9x13 pan. Cream margarine and sugar, add eggs and beat until fluffy. Add bananas. Mix dry ingredients in a separate bowl. Add buttermilk, then add dry ingredients. Beat on low speed until combined, then on high speed for 3 minutes. Pour into pan. Bake 45 - 50 minutes. Cool.
- Frosting: While cake is baking, mix sugar and cocoa in 2-qt saucepan. Stir in milk, margarine and corn syrup. Heat to boiling, stirring often. Boil for 3 minutes, stirring often. Cool. Stir in vanilla and sugar. Frost cake.
