These fritters are usually deep-fried, which means they soak up a lot of fat. Our versions are lightly fried - but just as tasty!

Steps:
- Sift the flour and baking powder into a bowl and stir in the caster sugar. Make a well in the middle and add the egg.
- Gradually beat in the milk until you have a thick, smooth batter. Dip the bananas in the batter to coat.
- Heat half the oil in a frying pan and fry the fritters in batches, for 2-3 mins on each side, adding more oil if needed. Lay on kitchen paper.
- Transfer to a serving plate and dust with the icing sugar and cinnamon.

Steps:
- Put the flour, bicarbonate of soda, and cinnamon into a bowl. Make a well in the center and add the egg and half the milk and mix well to a smooth batter. Gradually beat in the remaining milk.
- Heat some vegetable oil in a deep saucepan or wok.
- Peel the bananas and cut in half lengthwise and then cut each piece into three horizontally.
- Dip the banana pieces in the batter and then gently lower into the hot oil and fry until golden brown. Cook a few pieces at a time then remove and drain on kitchen paper. Serve with honey for dipping. Please note nutritional info is based on the use of 100ml of vegetable oil for cooking.

- In a bowl, beat eggs, milk and oil. Combine flour, baking powder and salt; stir into egg mixture until smooth. Cut bananas into quarters (about 2 in. long). Dip each banana piece into batter to coat. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry banana pieces, two to three at a time, until golden brown. , Drain on paper towels. Dust with confectioners' sugar if desired.
