DHAL RECIPE
Here is the basic dhal recipe that is easy to make, and kid-friendly and like by everyone.

Steps:
- Sieve through the lentils with a colander.
- Rinse with water a few times.
- Soak the lentils in water for a few hours.
- Bring the water to a boil. Add the lentils to the boiling water, then reduce to a simmer.
- Add one teaspoon of turmeric powder.
- Cook until it turns soft, which will take about forty-five minutes.
- Season the dahl with salt.
- Melt the ghee or butter in a saucepan.
- Add the cumin seeds along with mustard seeds.
- Add the chopped onion and sautéed until lightly golden and translucent.
- Next, add the minced garlic and ginger.
- Add the chopped tomatoes once the garlic starts to turn to light brown,
- Add the ground coriander, garam masala, curry leaves, and dry chiles. Mixed well
- Combine the spices with the soften lentils
- Cook further for a few minutes until it becomes homogeneous.
- Garnish with a dollop of yogurt, some fried shallots, and fresh coriander leaves.

BENGALI DHAL
Here is my recipe for dhal based on my many experiences cooking with my friends over the years. We love this served over freshly made basmati rice. Don't skimp on the caramelized onions and garlic - it totally makes this recipe amazing!

Steps:
- Wash the lentils in a strainer. Combine the lentils and water in a saucepan over medium-high heat. Add half of the sliced onions and garlic, reserving the rest for later. Stir in the turmeric, bay leaf, tomatoes, and salt. Add the chiles, leaving them whole to add flavor or cut in half to add heat. When the mixture begins to boil, reduce the heat to a simmer. Cook until the lentils break apart and thicken slightly, about 20 minutes.
- Meanwhile, in a skillet, heat the vegetable oil over medium heat until the oil shimmers. Add the reserved sliced onions; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more. Stir in the rest of the chopped garlic and cook, stirring constantly, until the garlic is fragrant and tender, about 2 minutes.
- Pour the contents of the skillet into the cooked lentils and stir. Garnish with chopped cilantro.

CHICKPEA DAHL
Dahl is a staple in India, usually eaten with every meal. My family always eats Dahl when we make Indian food. This is a new recipe for Dahl made and demonstrated by Cinda Sanders on a cooking show titled "Indian Cuisine."

Steps:
- Cook potatoes in salted water until tender yet firm. Drain and set aside.
- Saute onion in 1 tablespoons oil until clear. Transfer to a food processor along with the tomatoes and fresh ginger, and blend until smooth. Set aside.
- In a large saucepan, melt margarine and add the curry powder and cumin. Saute for 4-5 minutes over medium heat. Stir often to avoid burning.
- Add the tomato mixture and continue to cook for 5 - 6 minutes, stirring often.
- Add the chickpeas, potatoes and frozen peas. Cook 5 - 10 minutes more. Serve hot over rice.

SPICY INDIAN DAHL
A spicy Indian lentil soup that can be enjoyed with rice or Naan, the Indian bread. A very healthy dish.

Steps:
- Cook the lentils by boiling or pressure cooking until lentils are soft. (Pressure cooking is faster.)
- In a skillet heat the oil and add mustard seeds. When mustard seeds begin to flutter, add onions, ginger, jalapeno peppers, and garlic. Saute until the onions and garlic are golden brown. Add coriander and cumin. Add chopped tomatoes. Saute the mixture well until tomatoes are well cooked.
- Add water. Boil 6 minutes. Add cooked lentils, stirring well. Add salt to taste, stirring well. Add finely chopped cilantro and remove from heat. Serve hot.

BANANA DAHL
This recipe came from Simon Rimmer or Greens vegetarian restaurant in Manchester. This is the original recipe but as I am trying to watch my weight I use 4 sprays of cooking oil rather than 2 tablespoons and leave out the fried plantain which brings it to about 230 calories per serving and 1.2g fat. Its wonderfully warm and comforting and just needs to be served with some chapattis or naan bread.

Steps:
- Fry the onion, garlic and ginger in the oil over a gentle heat for approx ten minutes until golden.
- Add the turmeric and fry for a further 1 minute.
- Add the lentils and fry for 2 minutes.
- Add the warmed stock and bring to the boil then simmer for 15 minutes.
- Add the spices and seasoning and simmer for a further 10 minutes.
- If using banana or plantain add it a coupe of minutes before serving to allow to warm through.
- Serve with warm chapattis or naan bread.
