1 1/2 cups sugar
3/4 cup Land O Lakes® Butter softened
1/4 cup buttermilk *
3 large Land O Lakes® Eggs
2 teaspoons rum extract
2 1/4 cups all-purpose flour
1 1/4 teaspoons baking soda
1/2 teaspoon salt
3 large (1 1/2 cups) ripe bananas, mashed
3/4 cup sweetened flaked coconut
Glaze
1 cup powdered sugar
1/2 teaspoon vanilla
1 to 2 tablespoons milk

Steps:

  • Heat oven to 325°F. Grease and flour 12-cup Bundt pan; set aside.
  • Combine sugar and butter in bowl. Beat on medium speed until creamy. Add buttermilk, eggs and rum flavoring; beat until well mixed. Add flour, soda and salt. Beat at low speed, scraping bowl often, until well mixed. Add mashed bananas and coconut; continue beating until well mixed.
  • Pour batter into prepared pan. Bake 60-75 minutes or until long toothpick inserted into center comes out clean. (If top of cake is browning too much, cover with piece of aluminum foil and continue baking.) Cool in pan 5 minutes. Invert onto cooling rack; remove from pan. Cool 1 hour.
  • Combine powdered sugar, vanilla and enough milk for desired glazing consistency in bowl. Drizzle over cooled cake.

¾ cup salted butter (at room temperature)
1 ½ cups granulated sugar
2 large eggs (at room temperature)
1 cup mashed ripe bananas
1 teaspoon vanilla extract
2 cups cake flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup buttermilk
½ cup chopped pecans
1 cup shredded coconut
1 cup salted butter (at room temperature)
2 cups powdered sugar
½ teaspoon vanilla extract

¼ cup cold heavy cream

Steps:

  • Grease and flour 2 9" round cake pans.
  • Preheat the oven to 375º Farenheit.
  • In a mixing bowl, cream the butter and sugar together.
  • Add the eggs and mix well, scraping the sides of the bowl as needed.
  • Add the ripe bananas and vanilla extract and mix again for 2 minutes.
  • In a small bowl, whisk together the cake flour, baking powder, baking soda and salt.
  • Add the dry ingredients and the buttermilk to the creamed banana mixture alternately, mixing between each addition.
  • Fold in the chopped pecans.
  • Spoon the cake batter into the two prepared pans evenly.
  • Sprinkle the tops with the shredded coconut.
  • Bake 15 minutes. Then cover the cake pans loosely with foil and bake an additional 10-15 minutes or until the cake tests done.
  • Cool the cakes in the pans, then turn them out to a wire rack to cool completely.
  • In a large mixing bowl (or the bowl of a stand mixer), cream the butter until it is almost white in appearance. Add the powdered sugar, extracts and heavy cream. Beat well until light and fluffy.
  • Place one cake on a cake plate with the coconut side down.
  • Spread some frosting on top of this cake.
  • Place the second cake layer coconut side up on the first cake.
  • Frost the sides of the cake with the frosting. Frost the outer top edge of the cake (about 1-2" around the outer edge depending on how much frosting you have left). Leave the center of the cake unfrosted to show the coconut top.
  • Store in an airtight container.

1 1/3 cups sifted cake flour

1 can (13.5 ounces) unsweetened coconut milk*
1 cup milk
2/3 cup white sugar
5 egg yolks
1/3 cup cornstarch
3 bananas, sliced
1/4 cup lemon juice
2 tablespoons white sugar
1 cup unsweetened coconut flakes, toasted golden brown

Steps:

  • Cake:
  • Preheat the oven to 350 degrees. Butter and flour two 9-inch cake pans. In the bowl of an electric mixer, beat the butter and sugar together until it is light and fluffy. Add the eggs one at a time, beating well in between each addition, and continue to beat until very light and fluffy. Add buttermilk and mashed banana and mix well. In a separate bowl, sift and dry ingredients together (flour, baking soda, salt, baking powder), then add to batter and mix at low speed on the electric mixer until moistened. Beat one minute at medium speed, then fold in pecans and pour batter evenly into the two prepared cake pans. Bake for 25 to 35 minutes, until a toothpick inserted in the center comes out clean. After removing the cakes from the oven, allow them to cool for five minutes, then invert onto a cooling rack. Assemble when thoroughly cooled.
  • Coconut Custard:
  • Line a baking sheet with parchment paper and cut another piece of parchment to the same size. Set both aside. Combine the coconut milk and milk and stir together. In a bowl, mix 2/3 cup of sugar with 1/3 cup cornstarch and stir with a fork until free from lumps. Mix the sugar and cornstarch together with the egg yolks and 1 cup of coconut milk mixture. Whisk until smooth and set aside. In a heavy saucepan, bring the remaining coconut milk mixture to a boil. Pour it into the bowl with the egg yolk-sugar mixture, whisking constantly. Return the mixture to the saucepan over medium flame and continue stirring. Cook until small bubbles start to form on the surface of the custard. Remove from the heat and spread onto the parchment-lined baking sheet. Cover the top of the custard with the other sheet of parchment to prevent a skin from forming. Cool in the refrigerator.
  • To Assemble Cake:
  • In a large bowl, gently toss banana slices with the lemon juice, and sugar. Trim the top of the first layer of cake so that the surface is level, then spread with a thin layer of custard. Place bananas completely over bottom layer, so that no cake is showing. Spread with another layer of coconut custard. Place next cake layer on top of this and spread the top generously with coconut custard. Garnish liberally with toasted coconut flakes.

Even though this cake is packed full of dates, bananas and tahini (also known as tahini paste in Britain), it's surprisingly soft and light. You can serve it warm, if you like, with the tahini cream cheese and bananas alongside, although it's worth the wait, if you can, for it to cool so that it can be assembled as a cake. A note on tahini: We always use tahini from one of the Arabic brands, which tend to be creamy and nutty (as opposed to a Greek or Cypriot tahini, which can be bitter and sticky). But it's also worth seeking out local or artisanal brands closer to home. Always be sure your tahini is well stirred before measuring.

Steps:

  • Heat oven to 375 degrees Fahrenheit/200 degrees Celsius. Grease an 8-inch/20-centimeter aluminum springform cake pan with butter, and line the base and sides with parchment paper.
  • Make the cake: In a medium bowl, whisk together tahini and orange juice, and then stir in dates, bananas and sesame seeds, separating the date and banana pieces as you add them to the bowl so they don't clump together. Set aside.
  • Put butter and sugar in the bowl of a stand mixer fitted with the paddle attachment, and mix on medium-high speed for 2 to 3 minutes, until light and fluffy. Add the eggs, in two additions, until combined, scraping the bowl down as needed.
  • In a small bowl, whisk together flour, baking powder and salt, then add to the stand mixer bowl and mix on low speed for about 30 seconds, just to combine. Add tahini-date mixture with the speed still on low and mix until blended, then spoon the batter into the cake pan and smooth the top.
  • Transfer cake to oven and bake for 30 minutes, until golden brown. Without removing it from the oven, carefully cover the cake loosely with aluminum foil. Continue to bake for an additional 25 to 30 minutes, or until cake is cooked through and a skewer inserted in the middle comes out clean. Remove from oven and set aside to cool in the pan on a wire rack.
  • While the cake is baking, make the icing: Place all the ingredients in the bowl of a stand mixer fitted with the whisk attachment. Whisk for 1 to 2 minutes, on medium speed, until combined and airy, scraping down the sides of the bowl as needed to mix thoroughly. Set aside until cake has cooled.
  • Make the caramelized bananas: Heat broiler on its highest setting, with a rack placed about 4 inches/10 centimeters beneath the heat source. Arrange banana slices closely together on a small baking pan and sprinkle generously with sugar. Broil bananas for 2 to 3 minutes, until sugar has melted and caramelized. Remove from oven and set aside to cool.

Butter mochi is a Hawaiian cake that is sweet and gooey, not unlike like Japanese mochi. Rice flour is a core pantry ingredient in most Japanese households, including mine, so I almost always have the ingredients on hand to whip up this cake when the mood (or need) strikes. Just like this recipe, I'm a little bit Japanese and a little bit American. The combination of American ingredients like butter and evaporated milk with Japanese ingredients like rice flour and sesame seeds feels familiar and comforting to me. Butter mochi can be baked plain or topped with coconut and black and white sesame seeds or slices of fruit like strawberries, mango or peaches. You can serve butter mochi with ice cream if you like as well.

4 tablespoons unsalted butter, plus more softened butter for the pan and for slicing
6.5 ounces canned full-fat unsweetened coconut milk
8 ounces mochiko (glutinous/sweet rice flour) (65 grams)

Add the coconut milk to the melted butter and reduce the heat to low. Gently warm the mixture, stirring often, until just above room temperature and no lumps remain.
  • Whisk together the mochiko, sugar, baking powder and sea salt in a large bowl.
  • Whisk together the eggs, evaporated milk and vanilla in a medium bowl. Pour this mixture into the dry ingredients and stir until just combined. Add the melted butter-coconut milk mixture, whisking continuously, until fully incorporated and smooth with no lumps.
  • Pour the batter into the prepared pan and tap the pan on the counter a few times to remove any air bubbles. Evenly sprinkle the top with the coconut chips or flakes. Sprinkle with the black and white sesame seeds and finish with the fleur de sel.
  • Bake the mochi until it is set and golden brown on top, 1 hour 5 minutes to 1 hour 15 minutes. You can bake the mochi longer for a firmer texture, or for less time for a gooier texture. If using a glass or dark metal pan, subtract a few minutes from your baking time.
  • Transfer the pan to a wire rack to cool completely. Coat a knife with butter and cut around the edges to help the cake separate from the pan and prevent the cake from sticking to the knife. Serve the cake directly from the pan.
