7 eggs separated
1 c banana, mashed
1 c sugar (will use 1/2 at a time)
1/2 c cake meal
1 tsp salt
1/2 c potato starch
1 tsp vanilla extract
1 c walnuts, chopped fine
1 tsp lemon juice

Steps:

  • 1. Beat whites until stiff but not dry. Gradually beat in 1/2 C. sugar. Set aside.
  • 2. Beat yolks with 1/2 C. sugar until very thick. Add salt, vanilla and lemon juice. Beat well. Add bananas and beat well.
  • 3. Sift meal with starch and fold into yolk mixture. Fold in whites and nuts. Bake in a tube pan at 325 degrees for 45 minutes to an hour. Cake is done when a toothpick inserted comes out clean.

1 ¼ cups matzo cake meal
1 teaspoon cream of tartar
½ teaspoon baking soda
¼ teaspoon salt
¼ cup butter, softened
1 cup white sugar
1 banana, mashed
1 egg
½ cup milk
⅓ cup brown sugar
2 tablespoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.
  • Sift matzo cake meal, cream of tartar, baking soda, and salt together in a large bowl.
  • Beat butter in a large bowl with an electric mixer until creamy. Add white sugar gradually, beating until butter is fluffy. Beat in mashed banana and egg. Add matzo meal mixture in 3 batches, alternating with milk, beating batter briefly after each addition.
  • Spread batter in the prepared cake pan. Sprinkle brown sugar and cinnamon on top.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.

Breads & desserts are hard to come by during Passover, and this one is a winner for breakfast, dinner or dessert. Feel free to add some nuts if you like them. NOTE: Baking soda is allowed during Passover from the sources that I have checked. In fact, baking soda & cream of tarter is listed as a substitution for baking powder, which is not allowed unless you buy a kosher for passover brand.

1/2 cup oil (I use canola oil but I don't keep Passover strictly)
3/4 cup sugar
2 eggs
1 1/2 cups mashed bananas
3/4 cup matzo meal
1/2 cup potato starch
1 teaspoon cream of tartar
1 teaspoon baking soda
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees.
  • Coat muffin pan with cooking spray or line with paper liners.
  • Beat oil with sugar.
  • Add eggs, one at a time.
  • Add bananas and combine.
  • In a separate bowl, combine matzo meal, potato starch, cream of tarter, baking soda and cinnamon. Blend well.
  • Combine dry mix with banana mixture. Do not over-mix.
  • Fill prepared muffin tins with batter.
  • Bake for 20-25 minutes until tops are brown and toothpick inserted in center comes out with moist crumbs.

1 stick (1/2 cup) unsalted butter, softened, plus additional for greasing pan
1 1/2 cups all-purpose flour plus additional for dusting pan
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup packed light brown sugar
1 large egg
3/4 cup well-mashed very ripe bananas
1/4 cup sour cream
1/2 teaspoon vanilla
For coconut frosting
3 oz cream cheese, softened
3 tablespoons unsalted butter, softened
1/3 cup confectioners sugar
3 tablespoons well-stirred canned cream of coconut such as Coco López (not coconut milk)
1 teaspoon dark rum (optional)
1/3 cup sweetened flaked coconut

Steps:

  • Make cake:
  • Put oven rack in middle position and preheat oven to 350°F.
  • Lightly butter and flour a 9-inch round cake pan, knocking out excess flour.
  • Whisk together flour (1 1/2 cups), baking powder, baking soda, and salt in a small bowl.
  • Beat together butter (1 stick) and brown sugar in a large bowl with an electric mixer at high speed until pale and fluffy. Beat in egg until combined, then add bananas, sour cream, and vanilla and beat until combined well. Reduce speed to low and add flour mixture, mixing until just incorporated.
  • Spread batter in cake pan and bake until pale golden and a wooden pick or skewer inserted in center comes out clean, 20 to 25 minutes.
  • Cool in pan on a rack 10 minutes. Run a thin knife around edge of pan, then invert rack over cake and invert cake onto rack to cool completely.
  • Make frosting while cake cools:
  • Beat together cream cheese and butter in a bowl using cleaned beaters at medium speed until smooth. Reduce speed to low, then add confectioners sugar, cream of coconut, and rum (if using) and mix until combined. Increase speed to high and beat until light and fluffy, about 2 minutes.
  • Frost top of cooled cake and sprinkle with coconut.

1/2 teaspoon salt
1 1/4 cups bananas, mashed, ripe
3/4 cup matzo cake meal

1/2 cup walnuts or 1/2 cup pecans, finely chopped

Steps:

  • Preheat oven to 325. Lightly grease sides and center of a 10 inch tube pan.
  • Separate eggs into large mixing bowls. slowly beat 1 cup sugar and salt into yolks until thick and light in color. Add mashed bananas. Beat for 3 minutes on high speed.
  • Stir together cake meal, potato starch and cinnamon. Fold gradually into banana mixture. Add nuts.
  • Beat whites till peaked (not dry). Continue beating and make meringue by beating 1/4 cup sugar into whites 1 teaspoon at a time. Fold meringue into banana mixture.
  • Bake in pan for 70 to 75 minutes until its springy to touch. invert pan and let hang for 45 minutes. remove while warm with a thin blade.

This year I finally figured out the secret to converting a regular cake recipe to a Passover cake recipe! The secret is that when you replace the flour in the recipe with matzo meal, you sub 40% of it with something else, like shredded coconut or ground nuts. This way you avoid baking a brick (like the ones our ancestors made during the slavery in Egypt!). The bananas in this recipe also help to moisten the cake.

3 cups shmura matzo meal
1 cup shredded coconut
1 cup ground walnuts
4 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons ground cinnamon
3/4 cup oil
2 cups sugar
6 eggs, separated
8 overripe bananas, peeled & mashed
2 teaspoons vanilla extract
1 cup coarsely chopped walnuts
1 pinch salt

Steps:

  • preheat oven to 350.
  • grease a 9x13 rectangular cake pan.
  • combine matzo meal, coconut, ground nuts, baking powder, baking soda, cinnamon & salt.
  • In a separate bowl, combine oil, yolks, bananas and vanilla.

2/3 cup sugar, divided
1/4 cup sugar, divided
1/2 cup potato starch
1/4 cup hershey's cocoa
1 cup mashed ripe banana
1/2 cup sliced almonds

Steps:

  • Heat oven to 350ºF.
  • Lightly grease 13x9x2-inch baking pan.
  • Beat egg yolks with 2/3 cup sugar in medium bowl until thick and light in color.
  • Combine potato starch and cocoa; gradually add to egg mixture, beating until well blended.
  • Stir in bananas.
  • Beat egg whites in a large bowl until foamy.
  • Gradually add remaining 1/4 cup sugar, beating until stiff peaks form.
  • Stir about 1/2 cup beaten whites into cocoa mixture.
  • Gently fold cocoa mixture into remaining egg white mixture, blending well.
  • Spoon batter into prepared pan; sprinkle almonds on top.
  • Bake 25 to 30 minutes until top springs back when touched lightly in center.
  • Cool completely in pan on wire rack. (Cake will settle and pull away from edges of pan slightly during cooling).
  • Cut into squares.
