THE BEST BUTTERSCOTCH BANANA BREAD
I've had this recipe for years...it's absolutely the best!!! No need for cream cheese or frosting...mmmmmm good! I keep butterscotch chips on hand just for this recipe. My boys love it when we have overripe bananas...they know what's coming!

Steps:
- Mash the ripe bananas; set aside.
- Sift together the flour, baking powder, baking soda, cinnamon, nutmeg and salt; set aside.
- Combine mashed bananas, sugar, eggs and melted butter. Blend well.
- Alternately blend flour mixture and milk. Stir in nuts (if using) and butterscotch chips, but leaving a little behind to sprinkle on top.
- Pour into greashed 9-1/2-inch loaf pan.
- Sprinkle top with reserved nuts and chips.
- Bake at 350° for 60 minutes (or shorter time for smaller loaves).
- Cool.
BUTTERSCOTCH AND MACADAMIA ICE CREAM TRIFLE
Steps:
- Let the ice cream soften a bit. Work in half the butterscotch chips. When they are incorporated, swirl in some of the ice cream sauce and return the ice cream to the freezer to harden for at least 1 hour.
- When you are ready to assemble: Take an individual trifle dish and put a cookie into the bottom, breaking it up into pieces to make it fit. Top with some sauce, then a scoop if ice cream, then some chips. Repeat until your dish is full, ending with the ice cream. Pour more sauce over the top, add some more chips, then the crushed candies.

- Preheat the oven to 375°F
- Beat together the butter, salt, baking soda, brown sugar, and vanilla.
- Beat in the eggs, then the flour.
- Add the oats, nuts, and butterscotch chips, and mix well.

COCONUT AND MACADAMIA NUT BANANA BREADS

- Into a bowl sift together the flour, the baking powder, the baking soda, and the salt. In a large bowl with an electric mixer cream the butter with the sugars, beat in the vanilla, the eggs, 1 at a time, the zest, the banana, and the sour cream. Add the flour mixture, beat the batter until it is just combined, and stir in the macadamia nuts and the coconut. Divide the batter among 5 buttered and floured loaf pans, each 5 3/4 by 3 1/4 by 2 inches, and bake the breads in the middle of a preheated 350°F. oven for 35 to 40 minutes, or until a tester comes out clean. Remove the breads from the pans and let them cool, right sides up, on a rack. The breads keep, wrapped well in plastic wrap and foil, chilled for 1 week or frozen for 1 month.
BANANA BUTTERSCOTCH BREAD
Warning! Addictive! This is such a delicious version of traditional banana bread and is extremely popular whenever I make it that I had to share it on Allrecipes! I got it from an old Bed and Breakfast recipe from a place in Maryland and make it every year around the holidays! I don't use the walnuts, but I hear that it is really good for those that like them. This recipe has definitely become a new tradition!

- Preheat an oven to 350 degrees F (175 degrees C). Grease 2 9x5-inch loaf pans. Set aside. Sift the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a bowl. Set aside.
- Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Beat in the egg, then stir in the mashed bananas. Pour in the flour mixture, mixing until just incorporated. Fold in the butterscotch chips and walnuts; mixing just enough to evenly combine. Pour the batter evenly into the prepared pans.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 28 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

- Preheat oven to 350° and grease or place cupcake liner papers in 12 muffin cups.
- Sift first 4 ingredients into a large bowl.
- Combine bananas, both sugars, butter, milk, egg and vanilla in a medium bowl.
- Mix into dry ingredients, then fold in half of nuts.
- Divide batter among prepared muffin cups and and sprinkle tops with remaining macadamia nuts.
- Bake until muffins are golden brown and tester inserted into center comes out clean, about 25 minutes.
- Transfer muffins to wire rack and let cool.

- Mix dry ingredients together set aside.
- Cream sugar and butter, add eggs mixing in well, stir in bananas and flavoring, add dry ingredients and oatmeal fold in nuts and chips (The dough may seem a little sticky and you may be tempted to add more flour, but first try baking off a few. Found that adding more flour made them dry after baking, the oatmeal seems to swell some during the baking process).
