BANANA BABY FOOD - 8 WAYS!
Bananas are a great first food for baby and can be made into a baby food puree, smashed, used for finger foods or for baby-led weaning.

Steps:
- Place the banana into a blender or food processor and puree until smooth and creamy, roughly 60-90 seconds, scraping down sides if needed. If the puree is too thick, add in some liquid (breastmilk, formula or water) in tablespoon increments until you have your desired consistency. If you want to freeze the puree, add a small squeeze of lemon juice into the puree to help keep it from browning.
- On a cutting board, mash a banana. In a small bowl, add the mashed banana to the made baby cereal. Add a pinch of cinnamon to the top and serve.
- Place the banana on a cutting board and mash with the back of a fork until mixed but yet still chunky. Spoon into a baby bowl and serve.
- Peel half of a banana and using your fingernails, break the banana into chunks along the seem of the banana. It should easily break into chunks
- Cut a 4-5 inch section of banana off from the top. Cut off the peel, leaving roughly 1-2 inches of exposed banana. Do not cut all the way through the banana, just the peel. Then you can remove the peel away and hand the stem of the banana to baby.
- Cut a banana into strips and roll them in a little bit of topping of your liking.
- Place banana, ice cubes and liquid into a blender. Add in cinnamon and nut butter, if using. Blend for 60 seconds and serve. If the smoothie is too thick, add in additional liquid as you don't want it too thick or baby might have a hard time drinking it.
- In a medium bowl mix together mashed banana, an egg, whole wheat flour and cinnamon. In a large non-stick skillet preheated on medium heat, pour 1/8 cup of batter into the skillet. Let cook roughly 3 minutes on the first side, flip and cook for 2 more minutes or until golden brown.
BANANA BREAD STICKS
This recipe originated from someone at CD Kitchens, but as usual I changed it to suit my tastes. I doubled the recipe. Basically what you're doing here is making Banana Bread, cutting it in pieces and baking it again, much like you would biscotti. It took longer then I anticipated to bake these the second time. I ended up leaving them in the oven for 3 hours, then I turned the oven off and left them in there over night. They were very crispy by the next morning. I coated them with a chocolate glaze. These are different from biscotti in that they are not as dense.

- Preheat oven to 350°F If you've decided to use them, roast your nuts for 7-10 minutes. Remove and cool.
- Grease two medium loaf pans.
- Mash the bananas and set aside.
- Chop the nuts (I used macadamia nuts), set aside.
- Put the flour, baking powder and baking soda in your food processor and mix to incorporate. Put in a large bowl.
- Put the brown sugar and oil in the bowl of the food processor and combine. Add the eggs or egg replacer. Process until combined. Add the vanilla and give it a couple more pulses. Add the mashed banana.
- Pulse once to combine.
- Add the chopped nuts to the flour mixture and mix them to coat.
- Add the wet ingredients to the dry until just combined. Don't over mix.
- Divide between the two loaf pans.
- Bake for 1 hour or until the loaves are done.
- I found 40 minutes was sufficient, but it may vary for different ovens. I used a wooden kabob stick to test my loaves. Once the stick came out clean I removed the loaves from the oven.
- Turn the stove temperature down to 200°F.
- Cool the banana bread in the loaf pans for about 15 minutes then turn them out onto metal racks and cool.
- Make sure they are cold before you cut them as they will fall apart.
- Using a serrated knife, cut each loaf in about 1 inch slices, then cut the slices in half so they resemble a biscotti cookie.
- I placed them cut side down on a metal cookie sheet covered with parchment paper. Bake for at least another hour. I found that more time is needed. Be patient it might take a while.
- The slices should be hard and crunchy when finished. Store in a tightly covered container. I'm going to glaze these with chocolate. :0).
BANANA FRITTERS ON A STICK
Steps:
- Skewer the bananas with popsicle sticks. Whisk the egg and then whisk in the milk. Dip each banana in the egg then toss in the bread crumbs to coat. Repeat the process to create a second coating. Heat oil to 365 degrees and drop in the bananas, moving them around to brown evenly on all sides. Place on paper towels to drain.
- Dipping Sauce: Scald milk in a medium saucepan and transfer to a bowl containing chopped chocolate, gently stirring until chocolate is completely melted. Add vanilla and whisk in peanut butter until smooth.
- Dust the banana fritters with confectioners' sugar. Drizzle chocolate peanut butter sauce over bananas or use as a dipping sauce.

- Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.
- Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.

- Spread slices with honey or serve with ice cream.
