Steps:
- Preheat oven to 425 degrees F.
- Sift all this together add 2 medium large ripe, well-mashed bananas (3/4 cup - 1 cup) mix well.
- Add chick pea flour until the dough is just barely not sticky, and drop onto oiled baking sheet.
- Bake for 12 minutes or until lightly brown.

CHEWY GLUTEN FREE BANANA BISCUITS
This is from the Gluten Free Club. The directions are for drop biscuits, but I'll bet they would work for cut out ones too. The original call for 1 C gluten free flour mix with a bit of chick pea flour thrown in. If you use my Recipe #391326, you won't need the chickpea flour, as there is an almond or bean flour (your choice) already in it. I used 3 T brown sugar. It holds together nicely and has a little bit of a chewy texture. Nice tooth feel. :) I might try adding some melted butter instead of the milk next time. I forgot the xanthan gum and it still turned out great!

Steps:
- Combine together all the ingredients, except for the bananas, and mix well.
- Then add in the ripe, well-mashed bananas and mix well.
- Add a splash or two of water or milk if it doesn't combine well (too dry).
- Drop onto a greased baking sheet and bake for 12 minutes or until golden brown.

- Combine egg, ripe banana, sugar, softened butter or margarine, banana extract in a mixing bowl; mix well. Stir in enough flour to make a soft dough. Turn out onto a floured surface; knead lightly a few times. Gently pat dough out and cut out with a biscuit cutter. Place on an ungreased baking sheet and bake at 350 degrees about 15 min-18 minutes.

- In a large bowl, add peeled bananas. Using a fork or pastry cutter, mash until smooth. Add the remaining wet ingredients: peanut butter, coconut sugar, coconut oil, flax eggs and vanilla. Whisk until well incorporated.
- Add the dry ingredients: gluten free oats, baking soda and baking powder. Using a rubber spatula, fold until well mixed. Fold in your favorite add-ins (I like these allergy-friendly chocolate chips).
- Using a medium cookie scoop, scoop and drop cookie dough onto the prepared baking sheet, spaced evenly apart. Optionally, press chocolate chips and walnuts into the tops of each cookie. Using a fork, flatten each cookie to desired thickness. They won’t spread much during baking.

- In a large bowl, add the melted and cooled coconut oil, mashed banana, sugar, egg and vanilla extract. Mix until well combined and smooth. Next add in almond flour, coconut flour, baking soda, cinnamon and salt. Mix until a soft dough forms. Allow dough to chill in the fridge for 5 minutes while you preheat the oven.
- Use your hands to roll dough into golf sized balls (it will be a softer dough but that’s okay.) Place on prepared cookie sheet then flatten each dough ball with the palm of your hand, but still keep the cookies nice and round. They should be about 1/4 inch thick before baking because we still want them to be nice, thick and fluffy. Bake for 9-12 minutes.
- Remove from oven, allow cookies to firm up on baking sheet for 5-10 minutes, then transfer to a wire rack and allow cookies to cool completely before frosting. Makes about 12-14 cookies.
