I should rename these to the Houdini cookies, with how fast they vanish from my kitchen. Very fluffy and delicious. My daughter just turned one and loves to help make these. She pulls the paper from the butter, peels the bananas, mashes and mixes. It's so fast and easy. Any time we have a couple bananas going brown we mix up these. The recipe originated as my grandmother's banana bread, but one day I was in a rush and didn't want to wait an hour for the bread to bake so I tossed them in as cookies and we all agreed it came out better this way.

2 ripe bananas, mashed, or more to taste
1 ½ cups all-purpose flour
½ cup white sugar, or more to taste
¼ cup butter, melted
¼ cup chopped walnuts
1 egg
1 teaspoon baking soda
¼ teaspoon salt
1 tablespoon white sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.
  • Place bananas, flour, 1/2 cup sugar, butter, walnuts, egg, baking soda, and salt in a bowl. Mix until well combined. Drop 3 tablespoonfuls of dough 2 to 3 inches apart onto baking sheet. Sprinkle 1 tablespoon sugar on top.
  • Bake in the preheated oven until golden brown and edges are set, 15 to 20 minutes.

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Beat in the egg, banana and vanilla. Combine the flour, baking powder, salt and baking soda; gradually add to creamed mixture and mix well. Stir in chocolate chips., Drop by tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray. Bake at 350° for 13-16 minutes or until edges are lightly browned. These quick biscuits are a perfect way to use up overripe bananas. Easy to put together, they make a great snack during treatment when you may want something that's a little sweet but not too much so. Depending on the ripeness of the banana, you may not even need to add the sugar, so I've left it to taste. They freeze well too, so one batch can be a treat that goes a long way.

1 very ripe banana, peeled and cut into chunks ½ cup buttermilk (see Chef Tips) 3 tablespoons melted unsalted butter Zest of ½ lemon 2½ cups whole-wheat pastry flour, plus extra for dusting (on a Bland Diet? See Chef Tips) 1 to 2 tablespoons soft brown sugar (optional) 1 teaspoon baking soda 1 teaspoon cream of tartar ½ teaspoon freshly grated nutmeg ½ teaspoon salt, or to taste Cream cheese or butter for serving

Steps:

  • Preheat oven to 425°F. Line a baking sheet with parchment paper.
  • Put the banana into a 2-cup measuring cup with the buttermilk. Blend together with an immersion blender until smooth. (You can also use a regular blender to do this). Beat in the butter and the lemon zest. Set aside.
  • In a large bowl, sift together the pastry flour, brown sugar, baking soda, cream of tartar, nutmeg, and salt. Make a well in the center and pour in the banana mix. Using a spatula, gradually stir the flour from the side of the bowl into the liquid until you have a soft, sticky dough.
  • Dust a board with flour. Using the spatula, transfer the dough onto it. Flour your hands and gently form the dough into a ball. Gently roll it out with a rolling pin into a rough rectangle ½-inch thick. Using a 2-inch round cookie cutter cut the dough into discs and transfer them to the prepared baking sheet, leaving room in between for the biscuits to spread as they cook. Work the trimmings together into a ball and roll them out again. Cut what you can out of the remaining dough and place on the baking sheet. Discard any leftover dough. Bake on a middle rack for 12 to 15 minutes, or until well risen and golden. Serve immediately with cream cheese or butter.

  • In a medium mixing bowl, sift together the flour, salt, cinnamon and nutmeg. Set aside.

100g light brown muscovado sugar
1 medium egg
1 medium ripe banana, mashed
250g plain flour
½ tsp bicarbonate of soda
1½ tsp cinnamon
50g raisins, chocolate chips or pecan nuts (optional)

Steps:

  • Heat the oven to 190C/170C fan/gas 5 and line two baking sheets with baking parchment.
  • Heat the butter in a small pan on the hob, or in a heatproof bowl in a microwave on high in 30-second bursts, until melted. Tip the butter into a mixing bowl if melted on the hob.
  • Stir the sugar into the melted butter with a wooden spoon, then beat in the egg until smooth. Stir in the mashed banana. Sift the flour, bicarbonate of soda, cinnamon and a pinch of salt into the bowl and mix until it forms a soft dough. Add the raisins, chocolate chips or nuts, if using, and stir well until evenly distributed.

150g/5½oz unsalted butter, at room temperature
175g/6oz golden caster sugar
1 medium egg, lightly beaten
175g/6oz plain flour
½ teaspoon bicarbonate of soda
½ teaspoon ground cinnamon
pinch salt
75g/2½oz pecans (or walnuts), roughly chopped
75g/2½oz dark chocolate chips
2 ripe bananas (200g/7oz peeled weight), mashed

Steps:

  • Cream the butter with the sugar in a free-standing mixer until pale and light - this will take about 3 minutes. Scrape down the insides of the bowl from time to time to ensure that all of the ingredients are thoroughly incorporated. (Alternatively use a hand mixer and a large bowl.)
  • Add the egg and beat until thoroughly incorporated. Sift the flour, bicarbonate of soda, cinnamon and salt into the bowl and mix until barely combined. Add the pecans (or walnuts), chocolate chips and mashed banana and mix again until all of the ingredients are thoroughly incorporated. Cover the bowl and chill for 1 hour.
  • Preheat the oven to 180C/160C Fan/Gas 4 and line 2 baking sheets with baking paper.
  • Shape level tablespoons of dough into balls and place on the prepared baking sheets leaving plenty of space between each one to allow for spreading during cooking. Slightly flatten each cookie with your hands and bake in batches on the middle shelf of the preheated oven for 11-12 minutes until crisp on top and golden brown. The cookies will still be slightly soft but will crisp further on cooling.
  • Remove from the oven and leave on the baking sheets. These cookies will be slightly soft due to the banana and should be stored in an airtight container.

1 cup shortening or (1/2 cup softened butter, ½ cup canola or vegetable oil)
1 cup granulated sugar
2 eggs
1 cup ripe mashed bananas (approx 2-3 bananas)
½ cup buttermilk or (sour milk, using regular milk plus one tsp lemon juice or white vinegar and letting it sit for 5 minutes)
1 tsp vanilla
3 cups all-purpose flour
1½ tsp baking soda
½ tsp salt
FOR FROSTING:
3 cups powdered sugar
2-3 tbsp evaporated milk, or heavy cream (you can use milk in a pinch)
½ cup butter
1 tsp vanilla
dash salt

Steps:

  • Preheat oven to 350 degrees, prepare two cookie sheets with cooking spray, parchment paper or a silicone mat.
  • In your mixer, or with a hand mixer, cream together the shortening (or butter and oil), the sugar and eggs.
  • Add in the mashed bananas, buttermilk and vanilla. Mix well.
  • Add the flour, baking soda and salt. Mix until well combined.
  • Using a cookie scoop or a spoon, put about 2 tbsp of batter down, making sure to place the batter scoops 2 inches apart on a large cookie sheet. You should be able to fit 12 cookies on one cookie sheet.
  • Bake at 350 degrees for 10-11 minutes
  • Frost while warm if you want them to be glazed or wait until they have cooled if you want them to look like the cookies in my pictures.
  • TO MAKE THE FROSTING:
  • Using your hand mixer, cream together the butter, powdered sugar, vanilla, salt and 2 tbsp of evaporated milk or heavy cream. Mix until fluffy adding up to two more tablespoons of the evaporated milk or cream if needed.
  • Spread a thin layer of frosting on each cookie and ENJOY!

200g rolled oats
50g caster sugar
50g coconut oil or butter, melted

  • Heat the oven to 180C/160C fan/gas 4 and line a large baking tray with non-stick parchment paper or a silicone baking mat. In a large bowl mash the bananas until smooth. Mix in the rest of the ingredients and stir until they are all combined. Leave to sit for 10 mins - this is to let it soak into the oats.
  • Roll 1 tbsp of the mix into a ball in floured hands and place on the baking tray, pressing down slightly so they are around 1cm thick. Repeat with the rest of the mix, spacing them 1-2cm apart. You will make about 20 cookies.
  • Bake for 12-15 mins until golden brown. Transfer to a rack until cooled.
