10 1/2 honey grahams, broken into quarters (42 rectangles)
1/2 c sliced fresh or frozen strawberries
1/2 c chopped bananas
1/4 c blueberries
1 c vanilla nonfat greek-style yogurt
1 c thawed frozen reduced-fat whipped topping

Steps:

  • 1. Line a 9-inch square pan with foil, with ends of foil extending over sides. Arrange half the graham pieces, in 3 rows of 7 pieces each, on bottom of pan.
  • 2. Pulse fruits in blender or food processor just until blended--some chunks should remain.
  • 3. Spoon fruit into medium bowl; stir in yogurt and whipped topping. Spread over graham pieces in pan; top with remaining graham pieces, aligning over graham pieces on bottom layer, so they form squares.
  • 4. Freeze for 4 hours. Use foil "handles" to lift dessert from pan; cut between grahams into 21 bars. Let stand 5 minutes before serving.

1 cup blueberries
1 tablespoon lime juice or 1 tablespoon lemon juice
1/3 cup brown sugar
1 1/2 cups plain fat-free yogurt

Steps:

  • Put all ingredients in a large metal bowl of a food processor and blend processing until smooth and well blended.
  • Pour into a metal bowl. Cover with plastic wrap and freeze 45 minutes.
  • Remove from freezer and beat with an electric hand mixer until smooth. Return to freezer.

2 ripe bananas, peeled and cut into 1-inch rounds
2 cups frozen blueberries
1/4 cup coconut milk or natural plain yogurt, plus extra as needed
Maple syrup (optional)
Lemon juice (optional)

Steps:

  • Place banana pieces on a tray in a single layer and freeze overnight.
  • Just before serving, place the frozen banana slices, frozen berries, and coconut milk or yogurt into a food processor and pulse until starting to break up. Scrape down the sides of the bowl and then blend on high until a smooth, creamy ice cream forms. You can add a touch more milk/yogurt to help it process better, but remember that the more liquid you add, the softer the end result will be.
  • If desired, add a tablespoon of maple syrup and a squeeze of lemon for flavor brightener. Scoop into bowls and serve immediately. The ice cream doesn't refreeze well, but it's fast and easy to put together if you have the fruit pre-frozen, so making it fresh shouldn't be a problem.
