- Preheat oven to 350°. Combine bananas, apples, sugars and water. Stir in melted butter. In another bowl, whisk flour, baking soda, baking powder and salt. Stir into banana mixture. Transfer to a greased and floured 9x5-in. loaf pan., Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely., Meanwhile, toast coconut, stirring occasionally, in a shallow pan at 350° until golden brown, 4-6 minutes. Cool slightly. Mix coconut with caramel syrup and sea salt; spread over loaf.

- Sift together dry ingredients. Set aside.
- Combine eggs, sugar, oil, milk, and vanilla in a large bowl.
- Add flour mixture; mix gently.
- Fold in apples, nuts and coconut.
- Spoon into lightly greased 9X5 inch pan. Sprinkle top with cinnamon and sugar which have been mixed together.
- Bake 60 minutes at 350 degrees.
- Cool in pan on wire rack 10 minutes. Remove from pan and cool completely on rack.
- Mix by hand to avoid overmixing and to insure a tender moist loaf.

BANANA APPLE NUT BREAD
Nice change from the usual. Note on frozen bananas: we toss overripe bananas directly into the freezer, skin on. They will keep for a few months, however the skins will turn black and they will be mushy when thawed. This is also good when subbing dried apricots for the apple.

- Preheat oven to 350°F (185°C).
- Butter and flour a loaf pan.
- Scrape bananas from their skins, mash and pour lemon juice over.
- Cream butter and sugars til light, add eggs and vanilla, beat until fluffy.
- Fold in sifted dry ingredients alternately with milk.
- Fold in bananas, apples and nuts.
- Mixture should be pretty thick (should "plop" by spoonfuls, not pour) if it seems too thin, sift flour by teaspoonfuls over mixture and stir.
- Spoon into pan, thump bottom of pan on bench a few times to settle, smooth top and bake for 50 minutes. Top should be golden brown and sound hollow when lightly thumped.

- Preheat oven to 325 degrees F (165 degrees C). Grease two 7x3-inch loaf pans.
- In a bowl, whisk together 2 3/4 cups of flour, 2 teaspoons of cinnamon, the baking soda, and salt until thoroughly combined. In a separate mixing bowl, beat the melted butter with 2 cups of sugar until smooth, and mix in the eggs, one at a time, followed by the Greek yogurt and vanilla extract. Stir in the flour mixture just until incorporated.
- Fold in the bananas, apples, and chopped walnuts until combined; do not overmix. There should be small chunks of banana visible in the batter. Pour half the batter into each prepared loaf pan.
- Mix the brown sugar, 1/2 cup of white sugar, 1 tablespoon of cinnamon, 1/4 cup of flour, and 3 tablespoons of softened butter together in a bowl until the mixture resembles coarse crumbs. Sprinkle half the crumb topping over each loaf. Garnish each loaf with banana and apple slices.
- Bake in the preheated oven for 30 minutes, then remove and cover each pan with aluminum foil. Return to oven, and bake an additional 15 or 20 minutes, or until a toothpick inserted into the center of the loaves comes out clean. Allow to cool before serving.

- Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
- Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. - Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan. Place cereal in resealable food-storage plastic bag; seal bag, and crush with rolling pin or meat mallet (or crush in food processor).
- In large bowl, beat sugar and oil with electric mixer on medium speed until well mixed. On low speed, beat in yogurt, vanilla and egg until smooth. Beat in bananas. Beat in flour, baking soda and salt until will blended.

This one came from an old school cook book. Really good bread. Great for bake sales and gifts. You can add Cool Whip for a dessert, or slice it for a really interesting sandwich.

- In a bowl, sift the first 4 ingredients; set aside.
- Mix the next 4 ingredients together in another bowl.

MOIST & DELICIOUS BANANA NUT BREAD
I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

- Cream butter & sugar. Add vanilla & eggs. Combine dry ingredients, add alternately with bananas & milk. Add nuts if desired. Grease & flour 1 bread pan (2-3 smaller pans) or pour into muffin cups. For loaf bake at 350 for 45-60 minute Muffins 350 for 20-25min. Enjoy!
- *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!
