Peanut Butter and Bacon Scones image

Traditional buttermilk scones get a sweet and savory upgrade with the addition of peanut butter, bacon and sweet glaze.

Provided by Food Network Kitchen

Yield 8 scones

Number Of Ingredients 9

4 strips bacon, roughly chopped (about 4 ounces)
4 cups all-purpose flour (see Cook's Note)
6 tablespoons confectioners' sugar
1 teaspoon baking soda
3/4 teaspoons fine salt
1 1/2 cups buttermilk
1/4 cup smooth peanut butter
2 tablespoons milk
1/2 cup dry-roasted peanuts, chopped

Steps:

  • Position a rack in the upper third of the oven and preheat to 425 degrees F. Line a baking sheet with parchment.
  • Cook the bacon in a large skillet over medium heat until crispy, stirring occasionally, about 10 minutes. Remove from the skillet onto a paper towel-lined plate. Strain the bacon drippings and reserve.
  • Whisk the flour, 2 tablespoons of the confectioners' sugar, baking soda and salt together in a large bowl. Whisk the buttermilk, peanut butter and 1 tablespoon bacon fat in a medium bowl until smooth. Add the chopped bacon.
  • Add the buttermilk mixture to the flour mixture and quickly mix with a rubber spatula to form a shaggy dough. Turn the dough out onto a clean work surface and pat into a circle, about 9-inches wide. Cut into 8 wedges. Evenly space the wedges on the prepared baking sheet.
  • Combine 1 teaspoon of the bacon drippings with the milk and remaining 4 tablespoons confectioners' sugar in a small bowl. Brush some the glaze on top of each scone (there will be some left). Sprinkle with the chopped peanuts. Bake until the tops of scones are lightly golden, about 15 minutes. Transfer to a rack and brush or drizzle with the remaining glaze while they cool. Serve warm or at room temperature.

1 extra-large, extra-ripe banana, mashed (1/2 cup)
1/3 cup heavy cream, plus more for brushing
1 large egg, lightly beaten
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1/3 cup packed dark brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 cup (1 stick) cold unsalted butter, cut into pieces
2 1/4 ounces bittersweet or semisweet chocolate, chopped (about 1/2 cup)
1 1/4 ounces (about 1/2 cup) hazelnuts, toasted, skinned, and finely chopped (see Cook's Note)
Sanding sugar for sprinkling

Steps:

  • Preheat the oven to 425 degrees F.
  • In a small bowl, whisk together the banana, cream, egg, and vanilla. In a large bowl, whisk together the flour, brown sugar, baking powder, and salt.
  • Cut in the butter with a pastry blender, or 2 knives used like scissors, until the mixture resembles coarse meal with some larger pieces. (You can use your fingers if you work fast enough that the butter stays cold.) Toss in the chopped chocolate and hazelnuts.
  • Drizzle in the banana mixture and stir with a fork until the mixture is crumbly and moistened, but stop before you've mixed it into a uniform batter. Tip out the mixture onto a parchment-lined baking sheet and pat it into a 6-inch circle. Using a sharp knife or a bench scraper, cut the circle into 8 equal triangles. (At this point, you could freeze the triangles well-wrapped on their sheet for another day. Bake them from frozen.) Spread the triangles apart and brush the tops with the cream. Sprinkle with sanding sugar.
  • Bake until the scones are golden brown and set, 22 to 25 minutes. A toothpick inserted into the center of a scone should come out clean. Transfer the baking sheet to a wire rack to cool slightly. Serve warm or at room temperature. Scones are best the day they're made.

Steps:

  • Preheat oven to 350°F (180°C).
  • In a bowl, use a fork to mash the bananas. Add the sugar, ½ cup (115 g) of butter, and vanilla, and whisk until combined.
  • Add the flour, salt, and cocoa powder, and whisk until fully incorporated.
  • Use the remaining 1 tablespoon of butter to grease a 9x9-inch (23x23 cm) baking tray.
  • Use the remaining 1 tablespoon of cocoa powder to dust every side of the baking tray.
  • Pour batter into prepared baking dish.
  • Use a spoon to add dollops of peanut butter on top of the batter. Use a butter knife to swirl the peanut butter into the brownie batter.
  • Bake for 25-30 minutes, until center no longer jiggles when pan is shaken.
  • Allow brownies to cool completely before cutting.

275 g biscuit mix, gluten-free
1 teaspoon baking powder or 1 teaspoon bicarbonate of soda
1/2 teaspoon xanthan gum
1/4 teaspoon salt
1 teaspoon vanilla extract
150 g bananas, mashed
50 g coconut sugar crystals
100 g peanut butter
1 egg
80 ml milk
115 g raspberry jam (optional)
2 tablespoons milk, for brushing

Steps:

  • In a bowl, whisk together all dry ingredients - flour, baking powder, xanthan gum, and salt.
  • In a separate bowl, beat together the wet ingredients - peanut butter, banana, egg, vanilla, milk, and sugar.
  • Add the dry mixture in to the wet.
  • Turn resulting dough on a lightly floured surface and knead.
  • Roll it to about 1/2" thick.
  • Cut it into individual rounds using a 2.5" cookie cutter.
  • Brush the tops with milk.
  • Bake for 20 minutes at 190C/375°F.
  • Allow to completely cool on a cooling rack.
