BANANA AND NUTELLA STUFFED FRENCH TOAST
With melted Nutella, warmed bananas and a cinnamon-flavored custard coating, this French toast is indulgent and impressive--but secretly very easy to make.

Steps:
- Using a sharp paring knife, cut a 3-inch-wide slit into one side of each bread slice, cutting about three-quarters of the way through to make a pocket.
- Spread 1/2 tablespoon of the chocolate-hazelnut spread inside each pocket and then layer in 3 to 4 banana slices.
- Heat a large skillet over medium heat and add enough butter to liberally coat the bottom. Heat until hot, but not smoking.
- Meanwhile, whisk together the cream, eggs, sugar and cinnamon in a medium bowl. Soak each stuffed bread slice into the custard and, working in batches, fry in a single layer until the custard is fully cooked, about 3 minutes per side.
- Top the French toast with additional banana slices and serve warm with a drizzle of maple syrup.

- Spread chocolate-hazelnut spread on 1 side of each slice of bread. Arrange banana slices over chocolate-hazelnut spread on 2 of the slices. Place remaining slices atop bananas to form 2 sandwiches.
- Whisk chocolate milk, eggs, vanilla extract, and cinnamon together in a bowl. Dip sandwiches in milk mixture and turn as necessary to coat completely.
- Melt butter in a large skillet over medium-low heat. Cook sandwiches in hot butter until both sides are golden brown and banana and chocolate spread have softened, 4 to 6 minutes per side.

BANANA BREAD FRENCH TOAST
Steps:
- For the banana bread: Preheat oven to 350 degrees F. Spray a loaf pan with nonstick spray and line with parchment paper; spray the parchment.
- Cream the butter and brown sugar in a stand mixer fitted with the paddle attachment, 5 minutes. Add eggs and mix for another 3 minutes, then add the bananas, yogurt and vanilla. Mix on low for 2 minutes, then add the flour, baking powder, salt and baking soda and mix until everything is incorporated, about 2 minutes. Add batter to prepared pan (it should fill the pan three-quarters of the way) and bake until a tester comes out clean, 60 to 65 minutes.
- Take loaf out of pan and put on a cooling rack. Let cool completely.
- For the apple compote: Add apples, brown sugar, cinnamon and salt to a pot over medium heat. Warm until sugar is dissolved, 5 minutes. Add butter and mix until the butter is melted and the sugar is bubbling, 2 minutes. Take pot off heat and let cool. Serve cold.
- For the egg wash: Mix eggs, cream, cinnamon, nutmeg and salt in a bowl with a whisk until everything is incorporated.
- For the whipped cream: Beat the cream together with the powdered sugar with a stand mixer fitted with the whisk attachment on 4th speed until nice and fluffy, 2 to 3 minutes.
- Cut three 1/2-inch-thick slices of the banana bread and dip in the egg wash. Put in a hot frying pan with butter in it. Turn heat to medium and cook until golden brown, 3 minutes per side. Take off heat and cut the slices corner to corner into triangles. Make a circle with the 6 pieces so there is a little hole in the middle. Fill the hole with 2 tablespoons prepared apple compote and add 3 little pillows of whipped cream around the plate. Add some maple syrup (local syrup is best) and dust some powdered sugar on top. - Preheat oven to 350°F.
- Place 4 pieces of banana on each of 4 bread slices; mash banana on bread.
- Top with remaining 4 bread slices.
- Whisk milk, eggs, vanilla extract and cinnamon in glass pie dish.
- Working in batches, dip bread in egg mixture; let soak 45 seconds on each side.
- Spray large nonstick skillet with vegetable oil spray.
- Heat over medium heat.
- Working in batches, add French toast to skillet and cook until golden, about 2 minutes per side.
- Transfer to baking sheet; bake 8 minutes Put on plates.
- Dust with powdered sugar.
- Garnish with strawberries.
- Serve with maple syrup, if desired.

- Cream cheese filling:.
- Combine the cream cheese, sugar and vanilla extract in the mixer bowl. Beat until smooth; set aside.
- Banana and Walnut Topping:.
- Dry toast the walnuts in a small pot for 2 minutes. Carefully add syrup to nuts bring to a light boil, add half and half stir to combine. Add bananas. Keep warm over low flame.
- French Toast:.
- In a wide dish, combine the milk, eggs, lemon zest, salt, and vanilla extract. Beat with a fork until well blended. Pour enough vegetable oil into a large skillet to cover by 1/8 inch. Dip the bread slices into the egg mixture, and moisten thoroughly on both sides. Add several bread slices to skillet and cook for 2 to 3 minutes on one side or until deep golden brown. Flip; continue cooking on other side until deep golden brown and slightly puffy throughout, 2 to 3 minutes. Transfer bread slices to paper towels to remove excess oil. Place in a warm oven while preparing remaining slices. Repeat with remaining bread slices, adding more oil if necessary. Cover half of the slices of toast with 1/4 of the Cream Cheese Filling. Place the remaining slices on top of the cream cheese-covered ones, forming sandwiches. Cut on an angle. Pour warm Banana Walnut topping over toast.

- Spread the cream cheese on all 4 slices of bread.
- Place the banana slices over 2 slices of the bread and top each with the remaining bread.
- Combine the milk, egg, and vanilla in a small shallow bowl; beat lightly with a fork.
