KONA MANGO CREAM PIE

2 cups sifted flour
1/2 cup macadamia nuts, crushed
1 cup cold butter or margarine (2 sticks)
8 ounces heavy cream
1 teaspoon sugar
1/2 teaspoon vanilla extract
One 8-ounce package cream cheese
2 envelopes gelatin
1 cup boiling water
1 cup sugar
1/4 teaspoon salt
4 tablespoons lemon juice
5 cups peeled and chopped firm, ripe mangoes

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Put the flour into a bowl. Add the nuts and mix together. Cut the butter into cubes and add it to the bowl. Using your hands, incorporate the butter into the flour and nuts. Then, press it into a 9- by 13-inch pan. Bake for 20 to 25 minutes. Allow the crust to cool to room temperature before adding the cream cheese filling.
  • For the filling: Add the heavy cream, sugar and vanilla to the bowl of a stand mixer fitted with the whisk attachment. Start mixing on low, and then turn to high speed and mix until it forms stiff peaks. Set aside in a bowl.
  • Switch to the paddle attachment on your stand mixer. Add the cream cheese and beat until smooth, starting on low speed and increasing to high. Then, add the whipped cream to the bowl with the cream cheese and stir to incorporate. Spread it over the cooled crust and refrigerate for 1 hour.
  • For the topping: Sprinkle the gelatin into a bowl with 1 cup cold water. Whisk to dissolve the gelatin. Then add the boiling water, sugar and salt. Stir until the sugar is dissolved. Add the lemon juice and stir to combine. Then add the mangoes and chill for a few minutes until the gelatin begins to set. Pour the mango topping over the cream cheese and refrigerate until firm, about 2 hours.

This recipe came about after I was gifted with a large bag of mangoes by an anonymous Maui neighbor. I was determined to use every single one of them and by adapting an apple pie recipe, I came up with this delicious pie. Another bonus.....the sweetness of the mangoes reduces the need for added sugar.

4 cups peeled and sliced mango
½ cup white sugar
3 tablespoons cornstarch

2 large mangoes, peeled, pitted and sliced
1 tablespoon fresh lemon juice
3/4 cup unbleached cane sugar, separated
3 tablespoons cornstarch
2 tablespoons unsalted butter
1/8 teaspoon salt
1 tablespoon rum
1 prepared 9 inch pie shell

Steps:

  • Bake pie shell according to package directions.
  • Drizzle lemon juice over mango slices and mix lightly.
  • Add 1/4 cup of sugar and toss gently.
  • Set aside for 1 hour.
  • Drain mango, reserving syrup.
  • Add enough water to syrup to measure 1 cup of liquid.
  • Combine 1/2 cup of sugar and cornstarch in a saucepan.
  • Stir in the mango liquid until thoroughly blended.
  • Stirring constantly, bring mixture to a boil; boil until thick and clear.
  • Stir in rum.
  • Remove from heat and blend in butter and salt.
  • Gently mix in mango slices.

2 teaspoons cinnamon

1 teaspoon salt
1 teaspoon lemon zest

1/2 cup solid vegetable shortening, chilled

1/4 cup almonds, finely chopped
1 tablespoons unbleached flour, toasted
5 cups (4 or 5 large) mangoes peeled and cut into 1/2-inch to 3/4-inch slices
1/2 cup granulated sugar
1 tablespoon almond extract
2 teaspoons cinnamon powder
2 tablespoons flour (or more depending on how wet mixture is)
1 teaspoon lemon zest
2 teaspoons lemon or lime juice
1 egg beaten with 2 tablespoons water
Whipped cream or ice cream, for garnish

Steps:

  • Preheat oven to 350 degrees.
  • Prepare piecrust by mixing together flour, sugar, salt and lemon zest. Cut butter and shortening into small chunks and add to the dry ingredients. Mix with a pastry blender or 2 forks until the mixture holds together in small crumbs. Sprinkle ice water over mixture and cut until the mixture holds together in balls. Gather it up, pressing it together and then divide into 2 even parts. Wrap in plastic wrap. Refrigerate for at least 30 minutes. Roll out half dough and fit into 9-inch deep-dish pie pan. Roll out the other half of dough and fit over the pie. Crimp edges. Brush with egg and water wash. Cut vents in top and bake pie 45 to 50 minutes until crust is golden and filling is tender when fork is inserted.

Crust keeps up to 1 day at room temperature, loosely covered with foil. Pie keeps up to 2 days, covered and chilled.

6 ½ ounces graham crackers
½ cup sweetened shredded coconut
3 tablespoons powdered sugar
6 tablespoons butter, melted
4 large eggs, separated, divided
1 (14 ounce) can sweetened condensed milk
¾ cup mango puree
2 tablespoons fresh lime juice
1 cup white sugar
1 pinch salt
2 tablespoons sweetened shredded coconut

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Pulse graham crackers, 1/2 cup coconut, and powdered sugar for crust together in a food processor until finely ground. Add butter; blend until well combined. Press mixture firmly into the bottom and up the sides of a 9-inch metal pie pan. Crust will be generous.
  • Bake in the preheated oven until lightly browned, 12 to 15 minutes.
  • Beat egg yolks in a bowl with an electric mixer on medium speed until thick and light in color, about 4 minutes. Beat in sweetened condensed milk, 2 minutes more. Stir in mango puree and lime juice. Pour mixture into crust.

2 tablespoons dark rum or orange juice
1/3 cup sugar
2 tablespoons quick-cooking tapioca
3/4 teaspoon ground ginger
1/4 teaspoon ground cardamom
Dash white pepper
1/8 teaspoon salt
1/3 cup sweetened shredded coconut, toasted

Steps:

  • In a large bowl, mix flour and salt; cut in butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or overnight., Preheat oven to 400°. In a large bowl, toss mangoes with rum. In a small bowl, mix sugar, tapioca, spices and salt. Gently stir into fruit mixture; let stand 15 minutes., Sprinkle the coconut on a lightly floured surface. Place one half of dough on coconut; roll dough to a 1/8-in.-thick circle. Transfer to a 9-in. pie plate, coconut side down. Trim pastry even with rim. Add filling., Roll remaining dough to a 1/8-in.-thick circle; cut into 1/2-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom pastry; flute edge., Bake 45-50 minutes or until crust is golden brown and filling is bubbly. Cover edge loosely with foil during the last 15 minutes if needed to prevent overbrowning. Remove foil. Cool on a wire rack.

3/4 cup almonds, soaked 15 minutes
3/4 cup pecans
4 dates, pitted
1/2 cup raisins, soaked 1 minute (water ok, rum better)
2 cups mangoes
1 1/2 bananas
2 bananas, sliced
1/2 cup raisins

Steps:

  • In a food processor, blend the crust ingredients.
  • Remove and press evenly into a pie plate and chill.
  • In food processor, blend one cup of mango and 1 1/2 bananas.
  • Slice two bananas into 1/4" rounds and layer on the bottom of the pie crust.
  • Slice remaining mango and place over bananas with sliced fruit of choice then sprinkle in the raisins. Spread in some of the mango-banana sauce and mix it with the fruit. Pour remaining sauce on top.
  • Chill for several hours. (Place in the freezer 1/2 hour before serving.).

3 very ripe black plantains, peeled
½ cup white sugar
¼ teaspoon vanilla extract
¼ teaspoon ground cinnamon
1 drop red food coloring, or as needed
1 teaspoon all-purpose flour, or as needed
1 (9 inch) refrigerated pie crust
1 mango, sliced
1 pinch white sugar, or to taste

Steps:

  • Place plantains in a pot with water to cover. Bring to a boil; cook until tender, about 15 minutes. Drain, transfer to a bowl, and mash until smooth. Add 1/2 cup white sugar, vanilla extract, cinnamon, and red food coloring.
  • Preheat the oven to 400 degrees F (200 degrees C). Flour a pie plate; line the plate with the pie crust.
  • Pour the plantain mixture into the pie crust. Arrange sliced mangos on top and sprinkle with a pinch of sugar.
  • Bake in the preheated oven until mostly firm, about 30 minutes.
