CAROB ICE CREAM - THE WINNING TRY
Carob-coconut ice cream is about the closest to a Wendy's® Frosty that I've been able to get. Serve immediately as soft serve or put in freezer to thicken. Shouldn't freeze solid, but remain scoopable.

Steps:
- Blend coconut milk, sugar, and carob powder together in a blender until smooth.
- Pour coconut milk mixture into your ice cream maker and process according to manufacturer's instructions until smooth and frozen, about 45 minutes.

BANANA AND CAROB ICE-CREAM
I got this recipe from "The Australian Women's Weekly 501 Low-Fat Recipes" book. This ice-cream is really great because not only does it have a great taste, but it is also low in fat. Carob is kind of an acquired taste, but those who do enjoy it, usually can't get enough. Carob is also used as an alternative to chocolate for diabetics. NOTE: For the cup of banana, use 3 medium sized overripe bananas. The prep time does not include freezing time.

- Pour the evaporated milk into a loaf pan and cover with aluminium foil.
- Freeze the milk until just firm.
- In a food processor, process the frozen evaporated milk, yoghurt, banana, syrup, milk and vanilla until creamy and thick.
- Pour the mixture into a 15cm x 25cm loaf pan and cover with aluminium foil.
- Freeze the mixture until just firm.
- Repeat the processing, in a food processor, stirring in the carob.
- Pour into a loaf pan, cover with aluminium foil and freeze until just firm.

BANANA AND CAROB RUFFLES DOG TREAT

- Make the cake base: Preheat the oven to 350˚. Coat a nonstick 8-inch round cake pan with cooking spray. Combine the water, diced and mashed bananas, 1/8 teaspoon vanilla, the egg and honey in a large bowl and whisk well. Whisk the whole-wheat flour with the baking powder in a separate bowl. Add to the banana mixture and mix well. Spread in the prepared pan.
- Bake until a toothpick inserted in the center of the cake comes out dry, 1 hour to 1 hour 15 minutes. Invert the cake onto a rack; let cool completely.
- Roughly break up the cooled cake and transfer to a food processor. Process into coarse crumbs.
- Make the frosting: Combine the cream cheese, carob powder and remaining 1 tablespoon vanilla in a large bowl. Beat with a mixer on medium-high speed until smooth, 1 to 2 minutes.
- Add the carob frosting to the crumb mixture and mix with a rubber spatula. Scoop into balls with a small dough scoop. Roll in carob powder, chopped peanuts or coconut. Refrigerate until ready to serve, or up to 5 days.

BANANA BREAD ICE CREAM LOAF
Double the banana flavor in one over-the-top dessert. Layer homemade brown butter banana bread with store-bought butter pecan ice cream, sticky banana caramel and a generous sprinkle of toasted pecans, then cut into thick slices and drizzle with more banana caramel. It's a decadent treat you'll want to make year-round.

- For the brown butter banana bread: Preheat the oven to 350 degrees F. Lightly spray the bottom and sides of a 9-by-5-inch loaf pan with nonstick cooking spray.
- Melt the butter in a small saucepan over medium heat; cook, swirling the pan occasionally, until the butter browns, 6 to 9 minutes. Immediately transfer to a medium bowl and let cool slightly.
- Whisk together the flour, granulated sugar, baking soda, cinnamon, salt and nutmeg in a large bowl. Whisk the brown sugar, sour cream, vanilla and eggs into the bowl with the browned butter until combined, then stir in the mashed bananas. Fold the flour mixture into the banana mixture with a rubber spatula until just combined (some small lumps are ok).
- Pour the batter into the prepared loaf pan and lightly tap the pan on the counter to evenly distribute the batter. Top with the pecans. Bake until the loaf is browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely. Wash and dry the loaf pan, then reserve for assembly.
- For the banana caramel sauce: Meanwhile, combine the granulated sugar and 1/4 cup water in a medium saucepan over medium heat. Bring to a simmer and cook, swirling the pan occasionally, until the sugar turns a dark amber, 10 to 12 minutes. Working carefully (as the mixture will bubble up at this point), slowly whisk in the heavy cream until smooth. Stir in the butter and sliced bananas until thoroughly combined. Transfer to a large bowl, then let cool to room temperature, about 1 hour.
- For the assembly: To assemble, line the reserved loaf pan with plastic wrap, leaving about a 4-inch overhang on the 2 longer sides. Carefully slice the cooled banana bread with a serrated knife horizontally into 3 even slices. Place the bottom slice into the bottom of the lined loaf pan, then cover with an even layer of 1 1/2 cups of the butter pecan ice cream. Spoon about 1/3 cup of the banana caramel sauce over the ice cream, then sprinkle with half of the pecans. Layer the middle slice of banana bread over the pecans, then cover with the remaining butter pecan ice cream, followed by another 1/3 cup banana caramel sauce and remaining pecans. Finish by placing the top layer of banana bread on top, then press down gently so all the layers adhere. Fold over the plastic wrap, then use another sheet of plastic wrap to cover the loaf pan completely. Freeze until completely firm, at least 6 hours and up to overnight. Refrigerate the remaining banana caramel sauce and reserve for serving.
- To serve, use the plastic overhang to lift the cake out of the pan. (Run the underside of the loaf pan under warm water if the cake sticks to the pan and is hard to remove.) Microwave the reserved banana caramel sauce in 20-second intervals, stirring after each, until just warm, about 1 minute. Cut the ice cream loaf into 1-inch-thick slices, then drizzle with the warm banana caramel sauce.
VEGAN BANANA-COCONUT ICE CREAM (SOY-FREE)
This is modified from an Alton Brown recipe on the Banana episode of Good Eats. I replaced the cream with coconut milk and the corn syrup with agave nectar to make it vegan and healthier. I also added the optional carob chips and coconut flakes, which my friends agreed really worked well with the banana flavor. Despite its healthiness, this recipe is still luxuriously thick, "creamy," and rich. Instead of chilling the mixture before putting it in the ice cream maker, you can use frozen bananas. Be sure to use regular (not light) coconut milk. Cooking time is freezing time in ice cream maker.

- Place all ingredients except shredded coconut and carob chips in blender or food processor. Puree, scraping sides occasionally, until uniform.
- If you used frozen bananas, pour the mixture directly into the frozen cannister of a 1-quart ice cream maker and freeze according to the manufacturer's directions.
- If you used room-temperature bananas, chill the mixture in your refrigerator for at least a few hours before pouring into the frozen cannister.
- If you don't have an ice cream maker, you can freeze the mixture and then puree it again in your food processor, but it won't be as creamy.
- If using shredded coconut and/or carob/chocolate chips, add them to the ice cream maker in the last 5-10 minutes.
- Enjoy, and store leftovers in the freezer.

- Peel and slice the bananas into coins. Transfer them to a freezer bag and put them in the freezer for at least 4 hours (or until they are frozen).
- Once your bananas are frozen, transfer them to a blender, add the carob and blend until you get a homogenous mix. If your blender is having a hard time processing the frozen bananas add one or two tsp water.
- Optional (only for non AIPers): if you want to add a little crunch to your nice cream, crush roughly your pecan nuts and add them to your nice cream. You can either simply sprinkle the pecan nuts on top of your nice cream or incorporate them in the nice cream by mixing with a spoon (don't use the blender or you will loose the crunchiness).
- You can serve your nice cream right away when it has a soft serve consistency. Or if you want a scoop-able consistency, transfer your nice cream to a freezer safe dish and place in the freezer for about 2 hours. And voilà!Bon appétit!
