HONEY BALSAMIC GREEN BEANS
This healthy honey balsamic green bean side dish recipe from Paula Deen is a perfect for weeknight suppers. Ingredients include green beans, garlic, balsamic vinegar and honey. Prep time is about 10 minutes and cooking time is 10 minutes on the stovetop.

- Bring a large pot of water to a boil over medium heat. Add the beans and blanch them for 2 minutes. Immediately remove the beans from the water and add them to an ice bath to stop the cooking process. Drain.
- In a large saucepan, heat the olive oil over medium heat. Add the garlic and green beans. Cover, and cook for 10 minutes, stirring occasionally. Uncover, then stir in the vinegar, honey, onion powder, and salt and pepper, to taste. Cook to desired degree of doneness, about 4 to 6 minutes.
- Transfer the beans to a serving bowl and serve.

COUNTRY-STYLE GREEN BEANS W/BACON, ONIONS AND BALSAMIC VINEGAR
Isn't funny how we can take something perfectly healthy....and make it totally fattening?!! I've made green beans this way since....well, more than 20 years now, and wouldn't have them any other way! VERY flavorful, comfort food at its very best! Cooking time includes crock pot time.

Steps:
- Fry bacon in pan til done sprinkling both sides as it cooks with coarse ground pepper.
- Drain on paper towels, set aside.
- Add half a stick of butter to bacon grease, (4 Tbl.).
- Add chopped onion and 1 Tbl. balsamic vinegar and cook slowly over low heat for about 20 minutes til soft and sweet.
- Remove from heat.
- In crockpot, put 2 cans (drained) green beans.
- Sprinkle with a little salt and pepper.
- Sprinkle with half the bacon, broken into small pieces.
- Sprinkle with half the cooked onions.
- Sprinkle with half, (1/2 tsp.), dark brown sugar.
- Drizzle with 1-2 Tbl. bacon/butter grease from pan. (Yes, do this.)LOL.
- Drizzle with 1/2 Tbl. balsamic vinegar.
- Repeat everything (*just draining one can, and add the fourth (last) can of green beans with the water from can pouring over evenly.).
- Give all this a VERY gentle fold, folding only 2-3 times. Any more, and your green beans will begin to break up.
- Cut up your 2 Tbl. butter into 8 pieces and dot top.
- Cover and heat over high til hot throughout.
- About 45 minutes.
- You can also do this on the stove, or even in the oven in a casserole dish (covered.).

- Cook beans in boiling water for 2 minutes.
- Drain; rinse under cold water.
- Drain well; set aside.
- Cook bacon over medium-high heat until crisp.
- Remove bacon, crumble.
- Set aside.
- Add green onions to bacon fat in skillet; saute 1 minute.
- Remove skillet from heat; let cool slightly.
- Add sugar and vinegar to skillet; stir until sugar dissolves.
- Stir in crumbled bacon.
- Pour vinaigrette over beans, tossing gently to coat.
- Sprinkle with almonds.

This is a quick and easy way to spruce up green beans. And they disappear fast. My family devours these. I created this when I was looking for something different to do with green beans in a hurry. A nice side for company too!

- Place green beans in microwave safe dish with the butter. Cover and cook on high for five minutes.
- Add vinegar and parmesan cheese. Cook on high five more minutes (covered).
- Stir to make sure the beans are well coated with the vinegar mixture.
- Serve and enjoy!
- These would work well with fresh green beans too. You would just need to adjust the cooking time.
- Ingredient amounts can be adjusted to suit your taste. I will sometimes increase the parmesan cheese and use 2 tablespoons of butter.

- Cut Green Beans in half
- In a large deep skillet, saute' your garlic, onions, salt, pepper in the olive oil. I use popcorn salt for a buttery rich taste.
- Cook on medium high stirring constantly so the garlic does not burn. When the garlic is toasty, add in the green beans and balsamic vinegar. Cook until almost to your liking (crisp-tender). Stir frequently.
- Add 1/4 to 1/3 cup of water. Put a lid on and turn off the heat but don't remove the pan from the burner. just let it sit there for 4-5 minutes.
- Taste to see if it needs more seasoning and add a little more of the balsamic vinegar.

- Heat oven to 475°F. In large bowl, toss green beans with oil. Spread beans in ungreased 15x10x1-inch pan; sprinkle with salt and pepper.
- Roast uncovered 15 to 18 minutes or until charred in appearance (do not stir).
- Meanwhile, in 1-quart saucepan, cook vinegar over medium heat about 9 minutes or until syrupy and reduced to 3 tablespoons.
