Steps:
- ---To Make The Dressing---.
- In a blender or food processor, thoroughly mix the vinegar and mustard.
- Then, with the motor running, slowly add the olive oil.
- When the oil is well incorporated, add the fresh herbs, salt, pepper, water and mix thoroughly.
- ---To Make The Crab Cakes---.
- Whip the egg whites until they are stiff.
- Place all the other crab cake ingredients in a bowl and add the egg whites on top.
- Blend and pat into 4 cakes.
- Next heat a large skillet on high heat and cook all 4 at one time.
- Pour in a little oil and fry on each side for 1½ to 2 minutes.
- Serve immediately on a bed of fresh seasonal greens with the balsamic dressing drizzled around.

- Preheat the oven to 375°F degrees and line a baking dish with aluminum foil or a silicone baking mat.
- In a medium bowl, crush the crackers until a fine dust.
- To the crackers, add onion powder, parsley, mustard powder, salt, black pepper, oats, and Old Bay seasoning.
- In a separate small bowl, whisk together the yogurt, mayonnaise, egg, and Worcestershire sauce.
- To the wet ingredients, fold in the crab being careful not to break it up too much.
- Add in the cracker mixture and stir until just combined.
- With clean hands, form 6 patties and place them in a single layer on the prepared baking sheet.
- Spray the tops of the crab cakes with a spritz of non-stick cooking spray.
- Bake for 10 minutes then turn the oven to broil and cook an additional 3-5 minutes until golden brown.
- Serve alone with dipping sauce or as an entree with your favorite sides.

STUFFED SALMON WITH BALSAMIC BUTTER SAUCE
Steps:
- For the crab cake mix: Gently mix the crab meat with the mayonnaise, lemon juice, mustard, seafood seasoning and Worcestershire sauce in a large bowl. Form four 4-ounce crab cakes.
- Preheat the oven to 475 degrees F.
- For the salmon: Make a small vertical pocket in each piece of salmon. Place a slice of Brie on the bottom of the pocket, top with 1 crab cake and another slice of Brie.
- Place the salmon in a large baking dish and add enough water to reach one-quarter of the way up the side of the salmon. Bake until pale and cooked through, 12 to 15 minutes.
- For the asparagus and sauce: Bring a large pot of salted water to a boil. Cook the asparagus just until crisp tender and bright green. Drain and plunge into an ice bath to stop the cooking.
- Put the vinegar and shallots in a saute pan and cook over medium heat until vigorously bubbling and reduced by three-quarters, about 2 minutes. Add a pinch salt and pepper, reduce the heat to low and slowly stir in the butter. If the sauce is too thin, continue to simmer over very low heat until desired thickness.
- In a second saute pan, heat the oil over medium-high heat until hot. Add the asparagus, season with salt and pepper and cook until warmed through. (The asparagus is already cooked so don't saute it too long.)
- Serve the salmon and asparagus over wild rice. Spoon over the sauce.

- In a large bowl, gently mix the crabmeat, mayonnaise, red bell pepper, onion, Old Bay Seasoning, salt and pepper. Stir in 1 cup of the bread crumbs and shape the mixture into eight 4-inch crab cakes. Spread the remaining 1 cup of bread crumbs on a plate and coat each cake with the crumbs. Set the crab cakes on a baking sheet, cover and refrigerate for at least 20 minutes or up to 4 hours.
- In a large skillet, melt 1 1/2 tablespoons of the butter in a 2 tablespoons of the butter in 2 tablespoons of the oil. Add 4 of the crab cakes to the skillet and cook over moderate heat, turning once, until crusty, golden brown and heated through, about 10 minutes. Transfer to a baking sheet and keep warm in a low oven while you cook the remaining crab cakes in the remaining butter and oil.
- Meanwhile, in a small nonreactive skillet, combine the balsamic vinegar and molasses and simmer over low heat until slightly thickened, about 2 minutes.
- Arrange the tomato slices in the center of 8 plates and set the crab cakes on top. Garnish with a basil sprig. Drizzle 2 teaspoons of the molasses glaze and 1/2 teaspoons of the molasses glaze and 1/2 teaspoon of the Chive Oil around each serving.
