Steps:

  • Brown 1/3 cup diced pancetta in olive oil in a pot over medium-high heat until crisp, 2 to 4 minutes. Add 1 pound sliced red cabbage, 1 sliced red onion, 1/2 teaspoon each fennel seeds and kosher salt and a few grinds of pepper. Cook, stirring, 5 minutes. Add 1 cup water, 2 tablespoons balsamic vinegar and 1 tablespoon sugar. Cover and cook over medium heat, stirring, until tender, 15 minutes. Season with salt and pepper and top with parsley.

20 cheddar Little Smokies sausages, cut into thirds
1 cup green cabbage, shredded
1 cup red cabbage, shredded
3 garlic cloves (or more)
2 tablespoons dried sweet basil leaves
1 teaspoon lemon pepper
3 tablespoons orange juice, fresh
1/4 cup balsamic vinegar
1/2 teaspoon Tabasco sauce (optional)
4 tablespoons parmesan cheese

Steps:

  • Put all ingredients in a large fry pan and sautee at high heat until cabbage is crisp tender.
  • Plate and sprinkle with parmesan cheese.

This cabbage and sausage recipe combines smoked sausage and tender cabbage, which all cooks in just one pan.

2 tbsp. olive oil
1 tbsp. butter
1 lb. smoked sausage, such as kielbasa, sliced into coins, 1/2" thick
1/2 yellow onion, sliced
8 c. chopped green cabbage (about half of 1 medium cabbage)
3 cloves garlic, chopped
1 tsp. salt, plus more to taste
1/2 tsp. ground black pepper, plus more to taste
1/2 c. chicken stock
2 tbsp. chopped fresh parsley, optional
Grainy mustard and/or sour cream, for serving (optional)

Steps:

  • Heat a large skillet (with a tight fitting lid) over medium-high heat. Heat the olive oil and butter until melted. Add the sausage and cook, stirring occasionally, until golden brown on both sides, about 5 minutes. Remove the sausage with a slotted spoon, leaving the oil in the pan and set aside on a plate.
  • Add the onion to the skillet and cook until slightly softened, about 5 minutes. Add the cabbage, garlic, salt and pepper and cook 8 more minutes until the cabbage is wilted. Return the sausage to the skillet and stir all together. Add the chicken stock. Cover and reduce the heat to medium low. Let cook for 20 minutes. (Do not uncover or stir).
  • Stir in the fresh parsley, if using, and season with more salt and pepper to taste. Serve with grainy mustard or a dollop of sour cream.

1 small head red cabbage, shredded
1 apple, cored and diced
3 teaspoons salt, divided
1 tablespoon lemon juice
½ cup water
1 tablespoon butter
1 small onion, chopped
⅛ teaspoon ground black pepper
1 tablespoon wine vinegar
1 pound kielbasa sausage, cut into 1 inch pieces

Steps:

  • Place the cabbage in a large kettle, and add the diced apple, 2 teaspoons of the salt, lemon juice, and 1/2 cup water. Bring to a boil then simmer, covered, about 15 minutes stirring occasionally.
  • In hot butter, saute the onion until golden. Add the onion to the cabbage along with 1 teaspoon salt, pepper, vinegar and sausage. Cook, covered, 20 to 30 minutes until sausage is heated through. To serve, spoon the cabbage onto a heated platter, topping it with the sausage.

3/4 lb bulk pork sausage
1/3 cup chopped onion
5 cups coarsely chopped cabbage
3/4 cup sour cream
3/4 cup shredded cheddar cheese
1/8 teaspoon salt
1/8 teaspoon black pepper
3/4 cup soft breadcrumbs
1 tablespoon butter or 1 tablespoon margarine, melted

Steps:

  • In large ovenproof skillet cook sausage and onion over medium-high heat until sausage is brown.
  • Drain off fat from sausage and onion.
  • Stir in cabbage.
  • Cook, covered, over medium heat about 10 minutes or until cabbage is crisp tender, stirring occasionally.
  • Drain off any extra liquid from the pan.
  • Stir in sour cream, cheese, salt, and pepper.
  • In a seperate bowl, comine bread crumbs and melted butter or margarine.
  • Sprinkle over sausage mixture.
  • Bake uncovered , in a 375 degree oven for 20 minutes or until bread crumbs are golden.

3 tablespoons butter or 3 tablespoons bacon fat
1 small green cabbage, chopped
1/2 cup onion, chopped
1/2-3/4 lb smoked sausage, sliced (I like Conecuh, Original)
1 (15 ounce) can diced tomatoes, undrained (I like Hunt's Petite Diced)
1/4 teaspoon garlic salt, to taste
1/4 teaspoon Tony Chachere's Seasoning, to taste (optional)
salt, to taste
black pepper, to taste

Steps:

  • Chop/slice the sausage, cabbage, and onion.
  • In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
  • In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
  • Add remaining ingredients, and the sausage.
  • Cover the skillet and cook for about 10 minutes.
  • Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

  • If you’re using the sage, heat a few tablespoons oil in a large saucepan on a medium high heat. Add sage leaves and fry for 1-2 minutes or until the leaves are crispy. Drain them on paper towel.
  • Cut sausage skins down one side. Remove and discard the skins. Pile the sausage meat into the pan and cook uncovered, stirring to break up the sausage into bite sized chunks.
  • Slice cabbage into ribbons as finely as you can be bothered (the thicker the longer it will take to cook). When the sausages are well browned and cooked through, add the cabbage and 1/4 cup water. Reduce heat to medium and cook covered for about 10 minutes, stirring every few minutes until the cabbage is soft. If it starts to burn, add a splash more water, reduce the heat and stir vigorously.
  • When the cabbage is soft remove from the heat. The water should have evaporated. If it hasn’t, cook for another minute or two with the lid off.

  • Halve the kielbasa lengthwise and then slice it into 1/2-inch pieces. Heat a large deep skillet or dutch oven over medium heat. Add 1/2 tablespoon oil and the kielbasa. Toss to coat and then cook until browned, about 3 minutes per side. Transfer the kielbasa to a plate.
