2 slice Bread
1 teaspoon Olive Oil
1 tablespoon Goat Cheese
1/4 cup Arugula
1/4 cup Fresh Blueberry
2 slice Prosciutto
1 slice Mozzarella Cheese
1 tablespoon Light Mayonnaise
1 teaspoon Balsamic Vinegar
1 teaspoon Honey

Steps:

  • Mix together Light Mayonnaise (1 tablespoon), Balsamic Vinegar (1 teaspoon), and Honey (1 teaspoon).
  • Lightly spread Olive Oil (1 teaspoon) onto outward-facing side of each piece of Bread (2 slice).
  • Layer on the filling ingredients in this order to keep it all from falling out: 1/2 balsamic mayo mix, spread on Goat Cheese (1 tablespoon), Arugula (1/4 cup), Prosciutto (2 slice), Fresh Blueberry (1/4 cup), Mozzarella Cheese (1 slice), 1/2 balsamic mayo mix.
  • Grill on medium heat for about 5 minutes, flipping halfway through, or until everything is melted and hot.
  • Turn up the heat to medium-high and cook about 30 seconds on both sides, or until light brown and crisp.
  • Serve immediately after cooking to avoid the bread becoming soggy. Enjoy!

1 cup blueberries
2 tablespoons balsamic vinegar
3 tablespoons brown sugar
4 slices wheat bread
1 cup spinach
4 slices havarti
Ground pepper

Steps:

  • Heat blueberries, vinegar, and brown sugar in a saucepan over medium heat for 5 minutes. Strain and set aside. Layer half of havarti and spinach leaves onto one slice of wheat bread. Spread blueberry mixture over spinach. Top with remaining havarti and ground pepper. Place another bread slice over cheese. Heat a skillet over medium heat and cook sandwich on each side for 2-3 minutes, or until cheese is melty.

8 slices sourdough bread
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
3 tablespoons finely shredded Manchego or Parmesan cheese
3 tablespoons mayonnaise
1/8 teaspoon onion powder
4 ounces Brie cheese, sliced, rind removed
1 cup fresh blackberries

Steps:

  • Spread half the butter over one side of bread slices. In a large skillet, toast bread, buttered side down, over medium-low heat until golden brown, 2-3 minutes., In a small bowl, combine cheddar, Monterey Jack and Gruyere cheeses. In another bowl, combine Manchego cheese, mayonnaise, remaining 3 tablespoons butter and onion powder., On four slices of toast, layer Brie cheese, cheddar cheese mixture and blackberries. Top with remaining slices, toasted side down. Spread outsides of sandwiches with mayonnaise mixture. Toast sandwiches over medium heat until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

2 slices of bread (I used sourdough)
Plenty of white cheese (I used Havarti, but lots of others kinds would be good! Mozzarella, Monterey, or even Swiss would be yummy)
Fresh spinach or arugala
1/2 cups fresh or frozen blueberries
1 tablespoon balsamic vinegar
1 1/2 tablespoons brown sugar

Steps:

  • In a small saucepan, combine blueberries, sugar and vinegar. Turn on medium heat and let come to a slow boil. Use a utensil to crush berries as you stir. After boiling for about 5 minutes, pour mixture into a mesh strainer and let the juice syrup separate from the solid berries. Save the syrup for cocktails, pancakes or both! Spread blueberries onto a piece of bread, top with cheese, some spinach, then more cheese! Sprinkle with fresh ground pepper. Top with your other slice of bread and toast. The balsamic vinegar adds a nice tartness to the berries while making the flavor a little more complex. It's a subtle flavor, so don't worry. It's super tasty! If you wanted to get super crazy with it, a slice or two of bacon would be pretty yummy too...just sayin'. If it weirds you out too much, of course you don't have to add it. you'll just end up with a much sweeter grilled cheese. Oh, and make sure you use enough cheese! This is not a time to start thinking about calories. You need enough cheese to balance the sweetness of the berries. You don't want them overpowering the sandwich.
