The classic early summer flavor combo is pulled together beautifully in this recipe for Strawberry-Rhubarb Jam from the Ball Blue Book Guide to Preserving. It's a great recipe to start canning with!

Number Of Ingredients 5

2 cups crushed strawberries (about 1 1/2 to 2 pounds)
2 cups chopped rhubarb (about 3 to 6 stalks)
6 tablespoons Ball Classic Pectin
1/4 cup lemon juice, fresh or bottled
5 1/2 cups sugar

Steps:

  • Prepare boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set bands aside.
  • Combine strawberries, rhubarb, pectin, and lemon juice in a large saucepan, stirring to blend in pectin. Bring mixture to a boil over medium-high heat. Add sugar, stirring until sugar dissolves.
  • Return mixture to a rolling boil that cannot be stirred down. Boil hard for 1 minute, stirring constantly. Remove from heat. Skim off foam, if necessary.
  • Ladle hot jam into a hot jar, leaving 1/4-inch headpsace. Remove air bubbles. Clean jar rim. Center lid on jar and adjust band to fingertip-tight.
  • Place jar on a rack in a boiling-water canner. Repeat until all jars are filled. Water must cover jars by at least 1-inch before processing.
  • Bring water to a full rolling boil over medium-high heat. Cover canner, and process jars for 10 minutes (time starts when full boil begins).
  • Turn off heat, remove cover, and let jars cool in the water for five minutes. Then, remove the jars from the canner, and place on a towel on the counter to cool completely-do not retighten any bans that have loosened.
  • Cool 12 hours. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed. Label and store jars. Any jars that have not sealed should be stored in the fridge and eaten within a week.

This is from the Ball Blue Book. It's easy and a great way to use up that rhubarb. Make plenty because it will disappear fast. With jams and jellies it is always a good idea to do each batch separatly. Cooking times are just a guess.

Steps:

  • Adjust two-piece caps.
  • Process 10 minutes in water bath.

This comes from the Ball Blue Book - it is absolutely one of my favorites! The crystallized ginger makes it so special! The butter reduces the foam making skimming unnecessary but don't add more than 1/2 teaspoon as this may raise the ph level too much and make the recipe unsafe for canning. In canning recipes it is best to use bottled lemon juice which has a stable, known ph because fresh lemon juice can vary in acidity.

Number Of Ingredients 7

3 cups crushed strawberries
3 kiwi fruits, peeled and diced
1 tablespoon minced crystallized ginger
1 (1 3/4 ounce) package powdered pectin
1 tablespoon lemon juice
5 cups sugar
1/2 teaspoon butter

Steps:

  • Hull the strawberries and crush them one layer at a time (I usually do this with a potato masher in an 8x8 baking dish in about 3 batches.) Peel and dice the kiwi fruits.
  • Combine the crushed strawberries, diced kiwi, crystallized ginger, powdered pectin and lemon juice in a large stockpot.
  • Bring to a boil, stirring frequently. Add sugar and butter, stirring until dissolved. Return to a rolling boil and boil hard for 1 minute, stirring constantly.
  • Remove from heat and ladle the hot jam into hot jars, leaving 1/4 inch headspace. Adjust two-piece caps.
  • Process for 10 minutes in a boiling-water canner (adjust for altitude).

I got the recipe from the Ball Blue Book many, many years ago. It's a truly incredible jam. The strawberries can't be left whole because that's where the pectin is. The skins have to be broken.

Number Of Ingredients 5

4 cups strawberries
4 cups rhubarb
2 cups raspberries
8 cups sugar
1/2 cup water (optional)

Steps:

  • Slice the strawberries and rhubarb if using fresh fruit. Set aside.
  • Mash and cook raspberries till they're soft and juicy. Strain through several layers of cheesecloth. Twist into a ball and SQUEEZE to get all the juice. Scrape the outside to get all the pulp. You don't need clear juice since this is jam. Skip this step if you don't mind the seeds.
  • Put the strawberries, rhubarb, raspberries or strained juice and sugar in at least a 5 qt pan. Add water if needed to prevent scorching.
  • Bring to a gentle simmer and cook to 220F on a candy/jelly thermometer or test for jelly by putting a couple of tablespoons on a saucer and letting it cool. Stir frequently.
  • Ladle into hot canning jars. Cover with hot lids and bands.
  • Process in a water bath for 20 minutes.
  • Remove and allow to cool. Listen for the "pops".
