BALI YUMMY
Avocado and chocolate? The combination sounds surprising but tastes great! This dessert recipe was developed by Kirsti Soukka who wanted to recreate a dessert she enjoyed on her holiday in Bali.

Steps:
- To make chocolate pudding: Combine milk, corn starch and sugar in a saucepan.
- Bring the mixture slowly to a boil, stirring constantly.
- Boil for one minute, stirring all the time.
- Remove the saucepan from heat and add grated chocolate, stir to combine.
- Add vanilla, stir.
- Pour the mixture into a tall, narrow dish: the mixture will form a crust when it cools, and the narrower the dish, the less crust will form.
- Allow the mixture to cool and remove said crust.
- To make avocado mixture: Peel avocados and discard pits.
- Combine fruit pulp, milk, sugar and lemon juice, puree the mixture until smooth.
- To serve: Take four drinking glasses and a piece of thin cardboard.
- Cut four pieces of cardboard to fit in the glasses and'halve' them vertically.
- Pour chocolate mixture on one side of the cardboard, avocado mixture on the other.
- Carefully remove the cardboard.
- Sprinkle grated chocolate on top, pop in a spoon, and serve!

- Babi Guling. Probably Bali’s most iconic local dish, babi guling (also known as suckling pig) is one nose-to-tail delicacy that you have to try. It’s usually served with rice, pork sausage, sayur urap (a vegetable salad in coconut chilli dressing), huge cuts of spice-rubbed, spit-roasted meat and the crispiest, crunchiest and most scrumptiously flavoured skin – all of which has been cooked to tender-perfection from hours upon hours of slow-roasting.
- Nasi Campur. Balinese nasi campur (literally meaning mixed rice) is a fave food with locals (and us!) who typically dine on this bit-of-everything dish for breakfast, brunch, lunch and dinner.
- Sate Lilit Ikan. We’ve all tried satay (grilled skewered meat) before – it’s almost everywhere in Southeast Asia. But not everyone has had the pleasure of tasting traditional Balinese sate lilit ikan (fish satay).
- Bebek Betutu. Bebek betutu (smoked duck) is probably the most unique local dish on Bali’s must-eat list. Local ducks are rubbed and stuffed with a mix of spices, wrapped in banana leaves and coconut husks, then traditionally cooked in a pit of embers underground for up to 24 hours.
- Nasi or Mie Goreng. Practically the national dish of Indonesia, nasi goreng (fried rice) and mie goreng (fried noodles) are staples in the local diet.

- Babi Guling: Bali’s Classic Roast Pork. Bali’s Hindu cultural base allows pork, unlike most of the rest of Indonesia. This accounts for the popularity of babi guling (literally “rolling pig”), or whole pig stuffed with Balinese spices and slowly spit-roasted over a fire.
- Lawar: Venerable Vegetable. Highly and variable, this combination of chopped vegetables, mincemeat, coconut milk, and Balinese spices is a staple of both ceremonial and daily meals.
- Bebek Betutu: Duck Amuck. Balinese spices do wonders for duck—as a mouthful of bebek betutu demonstrates! A whole duck carcass is stuffed with a mix of lemongrass, ginger, onion, and other indigenous spices; wrapped in banana leaf; then slowly roasted in a pit.
- Jaja Laklak: Go Green for Breakfast. You can find jaja laklak in most hotel breakfast buffets around Bali, but the best (and most authentic) can only be had in Bali’s morning markets.
- Jukut Ares: Banana by Any Other Part. This banana dish is surprisingly savory, and no surprise there—jukut ares is derived from banana stems, the deepest part of the banana plant that remains after the greener, older outside parts have been peeled off.
