BAKED SWORDFISH STEAKS

These baked swordfish steaks are accented with a colorful Creole-style vegetable mixture and complementary seasonings.

4 ounces mushrooms
1 cup onion
1 rib celery
1/2 green bell pepper (or red)
2 tablespoons olive oil
2 tablespoons lemon juice
Dash kosher salt
Dash pepper
1 1/2 pounds swordfish (4 swordfish steaks)
1/2 teaspoon Creole seasoning blend
2 bay leaves (cut in half, or 4 small)
1 dozen grape tomatoes (or 2 large ripe tomatoes)
3 to 4 tablespoons water or broth

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F.
  • Give the mushrooms a quick rinse; dry them thoroughly and then slice thinly.
  • Peel the onion, cut it in half and slice thinly .
  • Dice the celery.
  • Slice the bell pepper in half lengthwise; remove the seeds and white ribs and dice half of it. Wrap and refrigerate the remaining half for another use.
  • Heat the olive oil in a skillet over medium heat. Add the sliced mushrooms and onion along with the diced celery and bell pepper. Cook, stirring, for 8 to 10 minutes, or until the vegetables are tender.
  • To the sautéed vegetables, add the lemon juice and some salt, and pepper, to taste. Stir to combine the ingredients.
  • Spray a large shallow baking pan with nonstick cooking spray or lightly grease the pan with vegetable oil. Spread half of the sautéed mushroom and onion mixture over the bottom then arrange swordfish steaks on top.
  • Sprinkle the swordfish steaks with the Creole seasoning. Place a piece of bay leaf on each steak.
  • Slice the grape tomatoes in half. If using large tomatoes, slice them thickly. Scatter the tomatoes over the swordfish steaks. Sprinkle remaining mushroom and onion mixture over the fish and drizzle with the water or broth.
  • Cover the pan tightly with foil and bake in the preheated oven for about 20 to 25 minutes, or until the fish registers 145 F on an instant-read thermometer inserted into the center of a thick steak.

Easy Baked Swordfish is easily baked in the oven and turns out flaky, juicy, and delicious tasting every time! This quick and easy seafood dinner is perfect for weeknights and one you'll enjoy making all year long!

1 swordfish steak (about 1/2 pound)
2 Tbsp. extra virgin olive oil, plus extra
1 tsp. garlic powder - divided
2 large lemons - divided
sea salt
2 to 4 green onions (scallions) - chopped
2 to 4 Tbsp. white wine
extra lemon slices, as a garnish

Steps:

  • Preheat oven to Bake at 375 degrees F, (190.6 degrees C)
  • Use a deep, baking dish just large enough to hold the swordfish steak. I used a medium-size baking dish for this recipe, a 2.5 quart (or 2.3 L ) baking dish.
  • On the bottom of the baking dish, drizzle 1 + 1/2 tablespoons of olive oil, and squeeze 1 whole lemon, then sprinkle with 1/2 teaspoon of ground garlic powder.
  • Place the swordfish steak on top of the first layer of marinade.
  • Then, drizzle on top of the swordfish steak with a little extra virgin olive oil, the remaining ( 1/2 teaspoon) garlic powder, and juice of the second lemon on top of the fish.
  • Sprinkle with some sea salt on top of the steak. Then scatter with chopped green onions all around and on top of the fish. Then scatter white wine on top.
  • Set it aside and let it sit for 15 minutes to marinate.
  • Then BAKE for 18 to 22 minutes, or until swordfish is white, fully cooked, and tender to the fork when touched.
  • Transfer to a serving plate, then pour all the remaining lemon sauce from the baking dish over the swordfish steak and serve.

1/4 cup chopped white onion
2 -3 minced garlic cloves
1 1/2 teaspoons grated fresh ginger
1/2 cup teriyaki sauce
1/4 honey
4 (6 ounce) center cut swordfish steaks

Steps:

  • In a medium saucepan, heat the oil over medium heat.
  • Add onion, garlic and ginger, saute about 3 minutes.
  • Add teriyaki sauce and honey; bring to a boil, stirring constantly.
  • Simmer about 2 minutes.
  • Allow to cool to room temperature.
  • In a small dish reserve 1/4 cup sauce for basting, cover and place in fridge.
  • Put the fish steaks in a large resealable plastic bag and pour remaining sauce over them.
  • Put the fish in fridge and marinate 2 to 3 hours.
  • Preheat the grill for 5 minutes.
  • Spray both sides of grill with non-stick cooking spray.
  • Grill fish steaks for 4 minutes or until almost half done.
  • Open grill and remove steaks; wipe grill clean and spray both sides again with non-stick cooking spray.
  • Return the steaks to the grill and baste with the reserved 1/4 cup sauce.

Steps:

¼ cup flat leaf parsley, chopped

1 Tablespoon brined capers, rinsed well

1 Tablespoon red wine vinegar
salt & pepper, to taste

Steps:

  • Preheat oven to 425ºF.
  • Place the swordfish steaks in a greased baking dish. Brush the tops of the steaks with 1 Tablespoon of olive oil and sprinkle with salt and pepper to taste.
  • Bake, uncovered, for 12-15 minutes or until the fish flakes easily with a fork.

1/4 cup chopped fresh parsley
1 tablespoon anchovy paste
2 teaspoons Dijon mustard
1 cup good mayonnaise
1 tablespoon grated lemon zest (2 lemons)
3 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
3 pounds center-cut swordfish steaks, 3/4 to 1 inch thick, cut into 6 portions
1/2 cup chopped scallions, white and green parts (4 scallions)
2 tablespoons good olive oil
3 tablespoons drained capers
Lemon wedges, for serving

Steps:

  • Preheat the oven to 500 degrees F. (Be sure your oven is very clean.) Line a sheet pan with aluminum foil.
  • For the Caesar sauce, place the garlic, parsley, anchovy paste, and mustard in the bowl of a food processor fitted with the steel blade and pulse until the garlic is minced. Add the mayonnaise, lemon zest, lemon juice, 1 teaspoon salt, and 1/2 teaspoon pepper and pulse to make a smooth sauce.
  • Place the swordfish steaks on the pan and sprinkle both sides generously with salt and pepper. Set aside one third of the sauce to serve with the cooked fish. Spread the fish on one side with half the remaining sauce, turn the fish, and spread the remaining sauce on the second side. Sprinkle with the scallions and allow to stand for 10 minutes.
  • Roast the fish for 10 to 12 minutes, until the center is just barely cooked. Cover the fish with aluminum foil and allow to rest on the pan for 10 minutes.
  • Meanwhile, heat the oil in a small saute pan until very hot, add the capers, and cook for 30 to 60 seconds, until they start to pop and are a little crisp. Serve the swordfish hot with the lemon wedges, frizzled capers, and the reserved Caesar sauce.

1 habanero chile, seeded and thinly sliced
¼ teaspoon kosher salt
½ cup mayonnaise
1 tablespoon extra-hot prepared horseradish
2 teaspoons lemon juice
1 tablespoon apple cider vinegar, or to taste
¼ teaspoon ground white pepper
⅛ teaspoon garlic powder
2 (6 ounce) swordfish steaks
2 teaspoons olive oil
salt to taste
1 tablespoon sliced green onions

Steps:

  • Crush the habanero and kosher salt into a fine paste with a mortar and pestle before whisking in mayonnaise, horseradish, lemon juice, vinegar, white pepper, and garlic powder.
  • Strain sauce through a fine mesh strainer before using to remove the pepper skins and particles of horseradish. Set aside until needed.
  • Preheat a charcoal grill until coals are very hot.
  • Coat filets on both sides with olive oil and season with salt.
  • Place filets on the preheated grill, flipping as needed, until they spring back lightly to the touch. Remove from heat.
  • Plate fish as desired and top with white hot sauce and green onions.
